ONE POT RICE AND VEGETABLE CASSEROLE
This rice and vegetable casserole is the perfect one pot dinner, packed with veggies, rice and beans - such a hearty vegetable bake that's comforting and full of goodness.

Steps:
- Preheat the oven to 190°C (Gas Mark 5 / 375°F).
- Add the oil to a large saucepan or oven-proof casserole dish, and add the red onion, aubergine, courgette, mushrooms, garlic and mixed herbs. Cook over a medium heat for 5 minutes, until the vegetables are fragrant and beginning to brown.
- If you used a saucepan that's not oven-proof, transfer to an oven-safe casserole dish. Add the rice, stock, tomatoes, beans, pesto, and plenty of black pepper. Mix well to combine.
- Add a lid to the pan (or cover tightly with foil, if you don't have a lid), and bake in the oven for around 30 minutes. The rice should be fairly soft. Stir the casserole well, then add the breadcrumbs and grated cheese to the top. Bake again, uncovered, for a further 20 minutes, or until the topping is crisped up to your liking.

YELLOW RICE CASSEROLE (VEGETARIAN)
A family friend first turned me on to this dish. I warn you, it's addicting. Feel free to adapt to your personal taste (ie change the type of soup, heat of Rotel, etc.). One of the many wonderful things about a casserole. If vegetarian, please read the food labels before you buy. Most yellow rice mixes and cream soups contain chicken product. The ingredients I use below are completely vegetarian.

Steps:
- Preheat oven to 375 degrees.
- Cook yellow rice according to package directions. For a firmer rice, use less water and reduce the cooking time.
- Combine rice, cream of mushroom soup, Rotel tomatoes and Mexicorn.
- Spread evenly in an 8x8 casserole dish.
- Top with cheese.
- Bake for 20 - 30 mins or until the cheese begins to brown.

Steps:
- Heat oil in a saucepan over medium heat. Cook and stir onion, carrot, broccoli, red bell pepper, and garlic in hot oil until garlic just begins to brown, about 5 minutes.
- Pour vegetable broth into the saucepan; add rice, sazon seasoning, and adobo seasoning and stir. Bring the liquid to a boil, reduce heat to low, and cook until the liquid is absorbed and the rice is tender, about 25 minutes. Fluff rice with a fork to serve.

YELLOW RICE CASSEROLE
Here's another one I don't know where I got and haven't tried. Yellow rice is oldest DS's favorite food, so I have been meaning to make this for awhile. I don't know about the water chestnuts, DH is not a fan. If you get to this before me, let me know how it is! I don't know about the size of the mexicorn (this is a guess), but I think that it only comes in one size.

- Cook rice to package directions.
- Blend soup, sour cream, and butter.
- Combine all ingredients, except cheese, in 7 x 11 dish. Bake at 350 for 25 minutes until hot throughout.
- Top with cheese and bake 5 additional minutes, until melted.

- Spread the rice into a 13-in. x 9-in. baking dish coated with cooking spray. Layer with zucchini, yellow squash, onion and half of the basil; top with green pepper, celery and tomatoes. Combine the brown sugar, salt and pepper; sprinkle over vegetables. Drizzle with oil. Cover and bake at 350° for 1 hour or until tender. Sprinkle with remaining basil.

- Add the stock, coconut milk, and nutritional yeast to a medium pot and bring to a boil over high heat. While the liquid heats, add the rice, chickpeas, onion, garlic, celery, and mushrooms to the casserole dish. Mix them around and spread evenly across the bottom of the casserole with a spatula.
