2 tablespoons kosher salt
2 tablespoons rotisserie chicken seasoning
1 tablespoon ground gochugaru (Korean red pepper)
2 whole chickens
1 cup cornstarch
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon kosher salt
Oil, for deep-frying
Yangnyeom Sauce, recipe follows
4 cups gochujang
4 cups ketchup
2 cups sugar
1 cup cola
1 cup corn syrup
1 cup soy sauce
1 cup sriracha
1/2 cup white vinegar
2 tablespoons red chile pepper flakes
2 tablespoons ground gochugaru
1 tablespoon granulated garlic
1 tablespoon minced garlic

Steps:

  • For the rotisserie chicken: Combine salt, rotisserie chicken seasoning and gochugaru in a bowl. Sprinkle all over the chickens, then refrigerate for 24 hours.
  • Preheat oven to 520 degrees F.
  • Roast chickens for 2 hours. Let cool for 1 hour.
  • For the fry batter: Meanwhile, whisk together the cornstarch, flour, baking powder, garlic powder, pepper, salt and 2 1/2 cups water in a bowl until smooth. Cover and refrigerate for 30 minutes.
  • Cut each whole chicken into 10 to 12 pieces. Lightly coat with fry batter.
  • Preheat oil to 325 degrees F in a deep-fryer. Deep fry chicken until crispy, about 3 minutes.
  • Preheat a pan or wok with 24 ounces Yangnyeom Sauce until sauce is heated, then gently toss the chicken in the wok until all pieces are covered with sauce. Serve immediately.
  • Whisk together gochujang, ketchup, sugar, cola, corn syrup, soy sauce, sriracha, vinegar, chile flakes, gochugaru, granulated garlic and minced garlic in a large bowl.

2 pounds chicken wings (about 16 drumettes and wingettes)
1.5 teaspoons salt (use 1 ts if using table salt)
pinch black pepper (or to taste)
1 teaspoon grated ginger
4-5 cups oil for frying (about 2-inch deep (use deep, bottom heavy, medium size pot or pan))
1/2 cup potato starch (or cornstarch)
1/2 cup frying mix (aka tempura mix)
1/4 cup potato starch (or cornstarch)
3/4 cup water
1 tablespoon soy sauce
2 tablespoons rice wine (or mirin) or other cooking wine
1 tablespoon or 1.5 tablespoons gochujang
1 tablespoon or 2 tablespoons hot sauce (sriracha, tabasco, Franks Original, etc.)
2 tablespoons sugar
2 tablespoons honey (or 2.5 tablespoons corn syrup, rice syrup, or oligo syrup)
1 tablespoon minced garlic
1/2 teaspoon honey dijon mustard - optional
4 tablespoons water
2 tablespoons soy sauce
2 tablespoons rice wine (or mirin or other cooking wine)
2 tablespoons sugar
2 tablespoons honey (or 2.5 tablespoons corn syrup, rice syrup, or oligo syrup)
1 tablespoon minced garlic
1 teaspoon vinegar (white, rice, apple cider, etc.)
1 teaspoon or 2 teaspoons oyster sauce - optional
4 tablespoons water
1/2 teaspoon sesame seeds
1 tablespoon chopped scallion

Steps:

  • Wash chicken wings, and drain thoroughly. Mix with the salt, pepper, and ginger. Let it sit in the fridge for 2 hours or longer (overnight to 24 hours).
  • Combine all the sauce ingredients of your choice and stir well. Boil over medium heat until it thickens slightly, about 4 to 5 minutes. Turn the heat off.
  • OPTION 1 Dry batter: If using the starch only, add the potato (or cornstarch) to the chicken, and rub it onto each wing well to coat evenly. Set aside.
  • OPTION 2 Wet batter: Mix the wet batter ingredients in a bowl, and stir well until smooth with no visible lumps.
  • Add the oil to a deep fryer, wok, or large pot. Heat the oil to 320°F (up to 330°F). Drop the chicken in the oil, one piece at a time. If using wet batter, dip each piece in the wet batter with tongs and shake off excess batter before dropping the chicken in the oil. Fry them in two batches. Cook until lightly golden, about 6 minutes, depending on the size of the chicken wings. Remove them with a wire skimmer or a slotted spoon. Drain on a wire rack or in a large mesh strainer set on a bowl.
  • Reheat the oil to 350°F (up to 360°F). Add the chicken (you can do this in one batch for the second frying), and deep fry again, for about 5 minutes, until golden brown. Drain on a wire rack or in a large mesh strainer set on a bowl.
  • You can either toss the fried chicken pieces in the sauce or hand-brush them. Sprinkle with the optional sesame seeds or chopped scallion to serve.

SWEET, SOUR, & SPICY KOREAN FRIED CHICKEN (YANGNYEOM-TONGDAK)



Sweet, sour, & spicy Korean fried chicken (Yangnyeom-tongdak) image

I have developed this recipe over 3 years. Whenever I made this fried chicken, I tried different mixes of dried ingredients and different ways to make the sauce

⅓ cup ketchup
⅓ cup rice syrup
¼ cup gochujang (Korean hot pepper paste)
2 teaspoons white vinegar
2 teaspoons vegetable oil
corn (or vegetable) oil for frying
pickled radish (chicken-mu) for a side dish, optional
1 tablespoon toasted sesame seeds
2 teaspoons vegetable oil
3 garlic cloves, minced

Steps:

  • Heat 2 inches of oil in a large heavy frying pan or pot over medium hight heat for about 10 to 12 minutes until it reaches 330-350ºF. I used my 12 inch pan but if your pan is smaller, work by batches. If you don't have a thermometer, test it by dipping one piece of chicken in the oil. If it bubbles, it is ready.
  • While the oil is heating, combine chicken, salt, ground black pepper, starch, flour, baking soda, and eggs in a bowl. Mix altogether well by hand.
  • Add the coated chicken to hot oil one by one. Fry them for 12 minutes until the all sides of the chicken are crunchy, turning over with tongs. Take out the chicken with tongs or a large slotted spoon to wire strainer over a bowl to remove the excess oil.
  • Heat the 2 teaspoons vegetable oil in a large skillet over medium high heat. Stir in garlic until light brown for about 30 seconds. Add the ketchup, rice syrup, gochujang, vinegar and stir well with a wooden spoon. Reduce the heat to low and stir until bubbling. Remove from the heat.
  • Let the oil heat up for 2 minutes over medium high heat until it reaches 330-350ºF. Fry the chicken one more time, turning over with tongs for about another 12 minutes until very crunchy.
  • Reheat the sauce over medium high heat until it's bubbling again. Add all the hot crunchy chicken and mix well with a wooden spoon and tongs.
  • Sprinkle with the sesame seeds and transfer to a serving plate. Serve with chicken-mu (pickled radish) if you have it.

KOREAN BBQ SHORT RIBS (YANGNYEOM GALBI)

Galbi, a popular Korean BBQ dish, has a savory-sweet marinade that caramelizes in a hot skillet or on the grill. NYC chef Hooni Kim uses garlic, ginger, soy sauce, and Asian pear for an authentic rendition of a Korean classic. (Note: This recipe requires overnight marination.)

1 Asian pear
2-inch knob ginger
7 cloves garlic
6 tablespoons sugar
1/4 cup mirin
6 tablespoons soy sauce
1/2 cup sake
1 pound bone-in short ribs, cut lengthwise across the rib bone, called LA galbi or flanken-cut, found at Asian markets
2 tablespoons grapeseed or vegetable oil, divided
Thinly sliced scallions, for garnish
Lettuce leaves, for serving
White rice, for serving

Steps:

  • Marinade: Peel pear, cut into pieces, and place into food processor (discard the core). Smash garlic cloves; trim root end, remove peel, and add to the food processor. Trim any dry patches off ginger knob; then use a spoon to scrape off the skin. Roughly slice (to about the same size as the garlic) and place in the food processor. Pulse to finely chop, about 20 seconds. Add sugar, mirin, soy sauce, and sake, and pulse several times to finish the marinade. Set aside.
  • Short ribs: Cut short rib slices into 2-inch pieces, making sure a bone is in each piece. Pour enough marinade into a baking dish to cover the bottom. Spread the sliced short ribs on the marinade; then pour remaining marinade on top to cover. Cover the surface of the ribs with plastic wrap and refrigerate, 12-24 hours.
  • Remove marinade from short ribs by draining them in a colander; discard marinade. Heat skillet over medium-high heat. Add 1 tablespoon oil in a thin, even layer. When the skillet is smoking, add short ribs, one piece at a time, in an even layer. (Cook in batches to avoid overcrowding.) Cook undisturbed until brown and caramelized on one side, 2 minutes. Flip over and cook another 1-2 minutes to brown and caramelize. (Note: To cook galbi on a grill, oil the grill grate, preheat to medium-high, and cook for 2 minutes per side.)
  • Remove beef to a serving platter. Wipe the pan clean with a paper towel and repeat with remaining oil and beef. Garnish beef with scallions. Serve with white rice or with lettuce leaves to wrap.

  • Stir the sauce occasionally and wait for it to come to a rolling boil with lots of bubbling. The sugar content in this sauce allows it to easily burn so keep an eye on it. This should take about 2 minutes.
  • Once the sauce comes to a boil, test that it is properly reduced and thickened up. Drizzle a small amount onto a plate and let it cool. If it's too thin, let it boil more. If it's too thick, add a teaspoon more water at a time and turn off the heat. Once cooled taste the sauce and adjust for seasoning if needed. Makes slightly over 1 cup of sauce.
