FRESH FRUIT YOGURT BARK
This simple summer treat is a true setn it and forget it dessert - and uses only three ingredients!

Steps:
- Line a 10"x 15" jelly roll pan with parchment paper, leaving a 1-inch edge on all sides.
- Combine the Greek yogurt and Eagle Brand sweetened condensed milk in a bowl. Spread into the parchment-lined pan.
- Scatter with fresh berries.
- Freeze for 2 hours.
- Remove from pan by lifting the parchment, cut into 20 pieces. Serve immediately.

WW JELLY, FRUIT & YOGURT PARFAIT
This dessert (or snack) is quick to make and only uses 3 ingredients. It's a great light way to end a meal. If using Weight Watchers ingredients it is only worth 1/2 a point! Try experimenting with different fruits and jelly and yogurt flavours. You will need 4 glass tumblers to serve. Cooking time is actually chilling time. Steps:
- Place the jelly (gelatin) crystals in a heatproof jug which is marked with measure increments. Pour in hot water and stir to to dissolve the crystals.
- Using a strainer placed over the jug, drain the fruit salad. Top up the mixture with cold water to reach the 500mL mark.
- Evenly divide the fruit between the 4 glasses. Add 60mL (1/4 cup) of the jelly to each glass. Stir to distribute evenly if needed. Place in fridge to set. (About 1 to 1.5 hours).
- Meanwhile, add the yogurt to the remaining jelly mix and blend well. Set aside.
- When the jelly & fruit cups have set pour the yogurt mix on top, pouring slowly so not to damage bottom layer. Return to fridge to set.

FRUIT AND YOGURT PARFAIT
I based this on a parfait sold in our cafe at work. The yogurt is made rich and creamy by the addition of pudding mix! You can use whatever fruit you like, I like to use blueberries but whatever is in season will work.

Steps:
- In a bowl, mix yogurt and pudding mix with a wisk untill combined and there are no lumps.
- Chill for a couple hours or overnight.
- In each of 4 parfait glasses, layer a half cup of yogurt followed by a quarter cup of blueberries. Repeat layers. Top each glass with a quarter cup of granola.
- Enjoy!
- Note - you may use any fruit or a mixture of fruits. You could use any flavor pudding mix you like to flavor your yogurt. I have also used lemon.

One of my favorite lunches. I think Dannon's Le Creme yogurt is the closest to the yogurt in McDonald's fruit and yogurt parfait.

- Layer 2 oz. yogurt, 2-3 sliced strawberries, 1/8 cup blueberries and 1/8 cup chopped pecans in parfait glass.
- Repeat layers. Top with remaining yogurt.
- Garnish with a few chopped pecans and/or a strawberry if desired.

- Pour the jelly/jello crystals or powder into a jug and add the boiling water. Stir to dissolve. Once dissolved add the cold water and set aside to cool for 5 minutes.
- Pour the yogurt into the bowl of your stand mixer (or if you are using a handheld mixer, into a large bowl). Whisk for 2 - 3 minutes until lots of bubbles are starting to form on the top. Slowly pour the jelly/jello mixture in a steady stream into the yogurt whilst continuing to whisk. Whisk for a further 5 - 10 minutes until the mixture has increased in volume and is light and bubbly.
- Spoon the mixture into individual ramekins. If you are wanting to turn out the fluff (as in the photograph) coat the inside of individual pudding bowls with a very thin layer of spray oil before spooning the mixture in.
- Place in the fridge to chill for at least 2 hours until the fluff has set. If you are turning out the fluff, run the tip of a knife around the edge of the pudding bowls before turning out on to a plate. Serve with sliced strawberries.
