WEIGHT WATCHERS 1POINT MUFFINS
I got this from my Mom. She got it at her WW meeting. You can use any cake mix. Suggestions are chocolate, spice, or carrot mixes. I haven't tried it yet but I'm putting here on Zaar for safe keeping.

WW INSTANT OATMEAL MUFFINS (1 WW POINT EACH)
I just started weight watchers and wanted a muffin for breakfast. Other recipes called for things I didn't have so I designed my own recipe with what I had in the kitchen. These are moist and sweet enough to please and my 1 year old and 3 year old loved them. They definitely stick to paper muffin cups a little so I think I'll try skipping the paper cups next time and opt for just the muffin pan and some cooking spray.

- To make 6 Miraculous Muffins. Pre-heat oven to 350 degrees. Spray muffin tin with cooking spray.
- Mash up 2 large, ripe banana with a fork. Mix in two beaten eggs. Stir in a ½ cup of any of the Kodiak Power Cake mixes listed above.
- Spoon mixture into six of the prepared muffin cups. Bake for 22-25 minutes, until the muffins look dry on top and are turning slightly golden brown. APPLE OATMEAL 3 POINT WEIGHT WATCHERS MUFFINS
These are easy and turned out beautifully on my first attempt! If I made them in jumbo muffin tins (which yes, I own!) they would be Starbucks worthy at a fraction of the cost and sooooo low fat! Jumbo would only be 6 points (compared to McDonalds low fat 9 point muffins or fruit and fibre for 12). I used granny smith apples but you can use any.

BLUEBERRY MUFFINS (1 WW POINT EACH)
This is from the Weight Watchers magazine Easy Weeknight Favorites. My magazine says I first tried them in January 2006. They are very good for a lowfat muffin and easy to make. I am posting here because my magazine is falling apart and I am afraid I am going to lose it! (I have omitted the teaspoon of grated lemon rind and teaspoon of grated orange rind the original recipe calls for. I don't always have them around to grate so just make it without!)
