WW NO-COOK ASIAN PEANUT SAUCE (2 PTS)
A delicious and easy recipe from Weight Watchers. They suggest serving this yummy sauce over whole-wheat noodles, Julienned cucumbers, or other fresh veggies. I like using this sauce with a chicken satay. I have made a few minor adjustments but none that will effect the point values. By using natural peanut butter you avoid hydrogenated shortening andsweeteners because it is just made from ground peanuts and a little salt.

WW CUPID'S COCKTAIL - 2 PTS
This is out of an old WW magazine. It says: It's the ice cubes (a frozen concoction of orange juice, cranberry juice, white wine, and orange liqueur) that work Cupids magic in this sparkling cocktail. As the cubes melt, the drinks turn a gorgeous blush and the flavor becomes wonderfully intense. Enjoy this cocktail on any romantic occasion. Cooking time does not include freezing time.

Steps:
- Combine the orange juice, cranberry juice, wine, orange liqueur, and sugar in a bowl; stir until the sugar dissolves.
- Pour the mixture into ice cube trays and freeze.
- To serve, fill 2 tall glasses with the frozen juice cubes.
- Slowly fill each glass with seltzer.
- Garnish each serving with strawberries.
- Note: To make a frozen version of this cocktail, fill a blender with the ice cubes and a splash if seltzer. Blend at medium-low speed just until the mixture is smooth. Pour into 2 martini or margarita glasses, then garnish with the strawberries.
ZUCCHINI FRIES - 2 PTS. WW
If you like crispy, battered zucchini, this is the lowfat alternative for you!! I could not believe it, but they came out crispy!! The egg whites are the secret. The recipe below is straight off the WW website. The flour definitely needs MORE seasoning though - garlic? Cayenne? Salt after they're out of the oven? I will be perfecting this for our family's tastes, but these zukes are going into our regular rotation!! Like I said, if you are looking for a lowfat batter alternative that's is NOT like the "corn flake baked" variety....this is for you!

- Preheat oven to 500ºF. Coat a baking sheet with cooking spray. In a small bowl, mix together Italian seasoning, flour and salt. Place bread crumbs in another small bowl.
- Dredge a zucchini fry in flour mixture and then dip into egg whites; dredge in bread crumbs. Place coated zucchini on prepared baking sheet and repeat with remaining ingredients; liberally coat with cooking spray.
- Roast, turning once, until desired crispness, about 10 minutes.
- Serving size: about 8 fries.
- Variations.
- Use this technique with any summer squash or even eggplant. Works great with thick-cut onion rings or even green tomatoes.

In Spain, tortilla most commonly refers to an omelet, not the flat bread we know. This variation on the classic adds spinach to the basic egg-and-potato combination. Add a tomato salad as a side dish and this would make a perfect brunch dish. It is best served at room temperature. This is a recipe I have yet to try. It is from the Weight Watchers-1996- Cut The Fat Cookbook. Therefore prep/cooking times are approximate. This recipe is 2pts if you are doing Flex, and it is a CORE recipe.

- Place large nonstick skillet over medium heat 30 seconds.
- Add oil; heat 30 seconds more.
- Add onions; cook, stirring often until the pale gold, about 7 minutes.
- add garlic; cook 1 minute more.
- Add potatoes, spinach, egg substitute, parsley, salt, pepper, thyme and nutmeg.
- Reduce heat to low.
- cover and cook until set and browned on bottom, about 10-15 minute.
- Loosen edges with knife and turn out onto warm platter, or serve directly from skillet.

MOCK BLUEBERRY CREAM CHEESE DANISH WW 2 PTS
I have always loved doughnuts and danishes for breakfast. Once I started eating healthier, I really missed them. This is what I came up with as a substitute, and I now love them more than the full fat version! You can also use sliced strawberries or peaches in place of the blueberries, or a little sugar free jam.
