Spinach Salad with Chicken, Apple, Blue Cheese, and Balsamic image

This substantial salad makes a great dinner for busy weeknights. Chicken tenderloins cook up quickly and are delicious paired with apple, blue cheese, walnuts, and balsamic dressing.

0.25 cup(s) Low-fat balsamic vinaigrette salad dressing divided
2 cup(s) Fresh baby spinach
1 cup(s) Uncooked radicchio sliced
1 medium Fresh apple(s) cut into matchsticks
2 tbsp(s) Reduced fat crumbled blue cheese
2 tbsp(s) Chopped walnuts

Steps:

  • Cook chicken tenders according to stovetop package instructions - when finished cooking toss with 1 Tbsp. balsamic dressing to glaze.
  • Divide spinach and radicchio between two bowls and drizzle with remaining dressing.
  • Top with chicken, garnish with blue cheese and walnuts, and serve immediately.

2 slices bacon, crisp-cooked and crumbled
2 eggs, hard boiled, peeled and cut into wedges

Steps:

  • In large bowl, whisk the oil, vinegar, mustard, salt, and pepper.
  • Add spinach, toss to coat.
  • Divide salad among 4 plates, then sprinkle with bacon and top with eggs.

2 cups strawberries, washed, hulled and sliced
1 medium granny smith apple, diced
2 green onions, sliced
1 large jalapeno pepper, seeded and minced
3 tablespoons cilantro, chopped
citrus vinaigrette dressing
ascorbic acid (optional)

Steps:

  • 1 In a medium bowl, mix the strawberries and apples; sprinkle lightly with asorbic acid if using. 2 Add the onions, jalapeno pepper and cilantro; mix well. 3 Allow the fruit to sit at room temperature for about 20-30 minutes. 4 Place the spinach in a large bowl, add the fruit and toss well to mix. 5 Pour on a citrus vinaigrette dressing to suit your taste and serve on chilled salad plates.

1/4 onion, thinly sliced
2/3 cup aged goat cheese, crumbled
