8 large eggs, hard-boiled
1/2 cup chopped celery
1/3 cup chopped scallion
1/3 cup chopped green bell pepper
1 tablespoon fat-free mayonnaise
3 tablespoons nonfat yogurt
1/4 teaspoon black pepper
1 teaspoon Dijon mustard
8 slices nonfat rye bread
romaine lettuce leaf

Steps:

  • Shell the eggs and discard the yolks, reserving the whites.
  • Chop the egg whites. Combine the chopped egg whites, celery, scallion, green pepper, mayonnaise, yogurt, black pepper and Dijon mustard in a bowl.
  • Spread four slices rye bread with the egg salad mixture. Top with romaine lettuce leaves and the remaining four slices of rye bread.
  • 3 Points per serving (1 sandwich).

1/4 cup plain fat-free yogurt
1/4 cup fat-free mayonnaise
1/4 teaspoon gingerroot
6 ounces skinless chicken breasts, cooked, cubed
1/2 cup red seedless grapes, halved
1/4 cup celery, chopped
1/4 cup carrot, grated
2 medium scallions, chopped
1 teaspoon chopped walnuts
2 large whole wheat pita bread, split in half
12 cups romaine lettuce, leaves

Steps:

  • Combine yogurt, mayonnaise, ginger and cooked chicken together in a large bowl until chicken is well-coated.
  • Stir in grapes, celery, carrots, scallions and chopped walnuts.
  • Cover and chill until ready to serve.
  • Place about 3 romaine lettuce leaves in each pita half.
  • Add about 1/2 cup of chicken salad mixture.
  • 3 Points per serving.

3 ounces cream cheese, softened
1/4 cup Miracle Whip
1/2 teaspoon prepared mustard
1/2 teaspoon salt
1/2 teaspoon dill weed
Pinch pepper
6 hard-boiled large eggs, chopped
1/2 cup chopped celery
1 can (2-1/4 ounces) sliced ripe olives, drained
2 tablespoons chopped onion
1 tablespoon chopped pimientos
Bread or pita bread

Steps:

  • In a bowl, combine the first six ingredients; mix well. Add eggs, celery, olives, onion and pimientos; mix well. Cover and chill for at least 1 hour. Serve on bread or pita bread, using about 1/2 cup for each sandwich.

4 large eggs
2 large egg whites, you'll have to boil these as whole eggs and discard the yolks
2 tablespoons fresh chives, chopped
2 tablespoons reduced-calorie mayonnaise (I used FF, less fat = less points!)
1/2 teaspoon Dijon mustard
1/2 teaspoon table salt
dill
1/4 teaspoon black pepper, freshly ground

Steps:

  • Place eggs in a medium saucepan and pour in enough water to cover them; set pan over high heat and bring to a boil.
  • Boil 10 minutes; drain and place eggs in an ice-water bath.
  • When eggs are cool enough to handle, remove shells.
  • Discard yolks from two of the eggs. Cut remaining whole eggs and whites into 1/2-inch pieces (or use an egg slicer).
  • Transfer eggs to a medium bowl. Add chives, mayonnaise, mustard, dill, salt and pepper; mix until blended.
  • Yields about 1/2 cup per serving.
