1/2 cup reduced-calorie margarine, soft
1/2 cup brown sugar, not packed
1 large egg
1 tablespoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon pumpkin pie spice
1/4 cup powdered sugar

Steps:

  • Preheat oven to 375 degrees.
  • In a mixing bowl, on medium speed (or by hand), beat margarine with brown sugar until creamy. Add egg and vanilla extract and beat until light and fluffy. Mix in flour, baking soda, pumpkin pie spice and salt.
  • Roll rounded teaspoonfuls of dough into powdered sugar. Place on baking sheet (spacing is'nt really important, but about an inch or two apart is good). Bake until golden, about 7 to 8 minutes. Makes 1 cookie per serving.

2/3 cup cake flour
1/4 cup cornstarch
1/8 teaspoon salt
8 egg whites
1 cup confectioners' sugar, sifted
1/2 teaspoon cream of tartar
1 tablespoon unsalted butter, melted
1 1/2 teaspoons vanilla extract
1/4 cup ground walnuts (optional) or 1/4 cup hazelnuts (optional)
1 tablespoon grated citrus zest (optional)
1 teaspoon almond extract (optional)

Steps:

  • Preheat oven to 325°F.
  • Spray 10-inch jelly-roll pan with nonstick spray, dust with flour, and line with parchment paper.
  • Combine cake flour, cornstarch, and salt in medium bowl, sift three times.
  • With electric mixer on medium speed, beat the egg whites in large bowl until thick and foamy.
  • Gradually sprinkle in the sugar and cream of tartar.
  • Continue beating until the egg whites form medium peaks, 3-5 minute.
  • Add the flour mixture in 3 additions, gently folding each addition into the egg whites until well combined.
  • Fold in the butter, vanilla, if using, fold in the walnuts, citrus zest, and almond extract.
  • Pour the batter in the pan.
  • Bake until toothpick inserted comes out clean and cake begins to pull away from the sides of the pan, about 25 minute.
  • Cool the cake in the pan for 10 minute.
  • Remove from pan and cool completely.
  • Variation: For chocolate sponge cake, replace 1/4 cup of the cake flour with 1/4 dutch unsweetened cocoa powder, plus 1/2 tsp instant espresso powder.
  • Optional topping (may increase points): Combine 1/2 cup water with 1/2 cup sugar in saucepan, and bring to a boil. Remove syrup from heat and let stand until cool. Syrup can be flavored with dissolved espresso powder, run, or any type of liqueur.

1 teaspoon garlic powder

Steps:

  • Turn on broiler.
  • Place bread on a cookie sheet.
  • Spray each slice with 5 sprays olive oil flavored cooking spray.
  • Sprinkle on seasonings.
  • Put cookie sheet in oven.
  • Keep an eye on your bread-depending on your broiler it could take anywhere from a minute to 3 or 4 minutes.
  • **If you have a few extra minutes, try baking the garlic bread in a 350 degree oven for about 10 minutes (and then put it under the broiler for a few seconds to get a nice golden color) You can really taste the difference!

1 cup all-purpose flour
1 tablespoon cornstarch
2 tablespoons sugar
1 pinch salt
4 tablespoons low-fat cream cheese (Neufchatel)
2 tablespoons unsalted butter, diced
1 teaspoon unsalted butter, diced
2 tablespoons nonfat milk
1 egg yolk, lightly beaten
2 (4 ounce) prepared fat-free vanilla pudding, snack cups
1 1/2 cups berries (any combination)
2 -3 teaspoons confectioners' sugar

Steps:

  • To prepare shells, preheat oven to 350°F Spray 24 nonstick mini-muffin cups with cooking spray.
  • Pulse the flour, cornstarch, sugar, and salt in a food processor. Add cream cheese, butter, and milk. Pulse until mixture forms into fine, damp crumbs. Press into a ball and knead gently a few times.
  • Divide the dough into 4 pieces; then divide each one into 6 tablespoon size pieces. Gently press each piece into the bottom and up the sides of the prepared muffin cups. Make a few holes in the bottom of each cup with a fork. Lightly brush the inside of each cup with the egg yolk. Bake until golden along the edges (about 20 min). Cool completely.
  • To assemble, spread 1 tsp pudding into each cooked shell. Top with berries. Just before serving, sift a light dusting of confectioners sugar over the tartlets.
  • 1 Point per serving (1 tartlet).
