HOMEMADE NACHOS WITH GROUND BEEF



Homemade Nachos with Ground Beef image

A tray of these easy homemade nachos with ground beef makes a fun weeknight dinner or a festive party appetizer.

Number Of Ingredients 7

1 lb. ground beef
½ cup finely chopped onion
1 (1 ounce) packet taco seasoning mix (or use homemade taco seasoning blend)
1 large bag tortilla chips ((about 11 ounces))
4 cups grated cheese ((try cheddar, Monterey Jack, Pepper Jack, Colby, or a combination of these))
½ cup pickled jalapeños, patted dry (optional)
Optional toppings: chopped tomato, salsa, sour cream, sliced black olives, chopped green onions, fresh cilantro, diced avocado or guacamole

Steps:

  • Preheat oven to 425° F. Grease a large rimmed baking sheet or line with foil or parchment; set aside.
  • In a large skillet over medium-high heat, cook the ground beef and onion until the onion is tender and the meat is no longer pink. Drain off the fat; return beef and onion to the skillet. Add taco seasoning (and water if called for on the packet). Cook according to the instructions on the seasoning packet.
  • Arrange half of the tortilla chips on the prepared baking sheet. Top chips with half of the beef mixture, half of the cheese, and half of the jalapeños (if using).
  • Repeat layers once more.
  • Bake in the oven until the cheese melts, about 10-15 minutes. Add optional toppings; serve immediately.

2 lb ground turkey breast
2 pkg taco seasoning mix packets, 1.25 oz each
1/4 c water
1 can(s) refried beans, vegetarian style canned (Rosarita preferred), 30 oz.
8 oz cheese, shredded (sharp cheddar or mexican blend preferred)
sour cream (optional)
guacamole (optional)
tomatoes, diced or salsa
tortilla chips, baked
black olives (optional)

Steps:

  • 1. Brown turkey in a pan. Add taco seasoning and water, then continue cooking until saucy but not too "soupy" (just a couple minutes).
  • 2. In a 13x9 glass dish, add a bean layer.
  • 3. Then top with the ground meat.
  • 4. Top with cheese.
  • 5. Cover with foil.
  • 6. Bake at 350 degrees for 30 minutes or until cheese is melted and bubbly.
  • 7. Serve with chips, sour cream, guacamole, salsa, and any other garnish desired. Enjoy!!

A quick, easy and somewhat healthy dinner fix for anytime you need to get dinner on the table quickly and keep 'em happy! Can even be a great appetizer or dip for a party. ;) I use this often and it keeps everyone asking for it over and over. Black olives are a great addition for a dip- or if your family will eat them - I use them off and on depending on if I have them in the house!

1/4 cup water
1 (30 ounce) can vegetarian refried beans, vegetarian style (Rosarita preferred)
1 (8 ounce) bag cheese, shredded (sharp, mexican blend, your choice)
sour cream
salsa
guacamole
tortilla chips, tostitos white corn preferred

Steps:

  • Brown turkey in a pan.
  • Add taco seasoning and water, then continue cooking until saucy but not too "soupy" (just a couple minutes).
  • In a 13x9 glass dish, layer beans, meat then cheese.

COPYCAT TRIPLE LAYER NACHOS



Copycat Triple Layer Nachos image

Last week at work there was some chatter about how it had been a year since Taco Bell® took the Triple Layer Nachos off their menu and how they were missed. I set out on a mission and this is what I came up with. Note: the restaurant chain sells their own line of refried beans, queso, and sauce so that makes it all the more easy to recreate this at home. This will dirty 4 pans but it is so worth it!

1 (16 ounce) can fat-free refried beans
¼ cup water
½ (15.5 ounce) jar prepared salsa con queso
2 tablespoons water
½ cup red enchilada sauce
¼ cup Taco Bell® mild sauce
½ cup vegetable oil
12 (6 inch) white corn tortillas, cut into chips
salt to taste

Steps:

  • Line a plate with paper towels.
  • Combine refried beans and 1/4 cup water in a small saucepan over low heat.
  • Combine salsa con queso and 2 tablespoons of water in a second saucepan and heat over low heat.
  • Combine enchilada sauce and mild sauce in a third saucepan and heat over low heat.
  • Preheat vegetable oil in a large skillet over medium-high heat. Add tortilla chips to the skillet, making sure to not overcrowd. Cook for 4 minutes, flipping halfway through. Use tongs and transfer chips to the paper towel-lined plate; sprinkle with salt. Repeat with remaining chips.
  • Divide chips between 4 serving dishes. Scatter beans on top of chips, drizzle with cheese, then drizzle with red sauce. Serve immediately.

1 large bag nacho chips
2 cups shredded hot pepper jack cheese
2 cups shredded salsa jack cheese
2 cups shredded traditional Sonoma jack cheese
1/2 cup chopped green onions
1 cup diced tomatoes
1 cup black beans, drained and rinsed
1/2 cup chopped cilantro
Grilled chicken strips or steak, optional toppings

Steps:

  • Preheat the oven to 350 degrees F.
  • Put half the nacho chips on an ovenproof platter and sprinkle with half of each cheese followed by a portion of the remaining ingredients. Top with the remaining chips and toppings ending with a layer of the remaining cheeses. Bake until the cheeses have melted. Serve with salsa and sour cream.

8 ounces cream cheese (softened)
8 ounces sour cream
1/2 tablespoon taco seasoning
15.5 ounces salsa
2 cups Mexican cheese blend (shredded)
Green onions (thinly sliced)
Tortilla chips (for serving)

Steps:

  • Put the cream cheese in a mixing bowl and beat until smooth and creamy.
  • Add the sour cream and taco seasoning and mix until evenly combined.
  • Spread the cream cheese mixture in the bottom of a glass baking dish or pie plate in an even layer.
  • Evenly spread the salsa over the cream cheese, and then cover the top of the dip with shredded cheese.
  • Chill until the cream cheese firms pp a bit, about 30 minutes.
  • Remove from the fridge, add some green onions on top for garnish, and serve with tortilla chips for dipping.

Bricklayer-Style Nachos image

Bricklayer-style beef, or puntas al albañil, made with tender pieces of beef, salty bacon and sometimes chorizo in a chunky fire-roasted salsa, is a beloved taco filling in Mexico. Once a common snack available near construction sites in central Mexico, it became popular beyond street food stands, expanding into homes and restaurants over the years. Here it's used as the foundation for nachos, topped with mounds of melted cheese, tangy queso fresco, creamy avocado and crunchy scallions for a hearty, delicious meal.

Number Of Ingredients 13

2 pounds ripe Roma tomatoes or 2 (15-ounce) cans fire-roasted tomatoes
8 ounces thick-cut bacon, thinly sliced
8 ounces fresh Mexican chorizo, casing removed, coarsely chopped
1 1/2 pounds beef sirloin, excess fat removed, meat cut into 1/2-inch pieces
Kosher or sea salt and black pepper
1 medium white onion, halved and slivered (about 1 1/2 cups)
1 to 2 jalapeños or serrano chiles, halved, deseeded if desired, and sliced
2 garlic cloves, finely chopped
1 to 1 1/2 pounds store-bought or Homemade Tortilla Chips (see recipe)
12 ounces shredded Mexican melty cheese, like Oaxaca, Asadero or quesadilla, or even Monterey Jack or mozzarella (about 3 cups)
1 ripe avocado, halved, pitted and finely chopped
1 cup crumbled queso fresco
8 scallions, trimmed and thinly sliced

Steps:

  • If using fresh tomatoes, place them on a small baking sheet covered with aluminum foil. Place them under the broiler for 8 to 10 minutes, turning halfway through, until charred, mushy and juices have begun to run. Remove from heat. Once cool enough to handle, chop them without discarding any of the juices, seeds or charred skin.
  • Heat a large (12-inch) skillet over medium-high. Add the bacon and cook, stirring occasionally, until it browns slightly and renders some of its fat, 3 to 4 minutes.
  • Add the chorizo to the bacon, and cook, breaking the sausage into smaller pieces using a wooden spoon as it begins to brown and crisp, 3 to 4 minutes.
  • Add the beef, season with salt and pepper and cook, stirring a couple times, until it begins to brown, about 4 minutes. Incorporate the onion and jalapeño and cook until they begin to wilt, 2 to 3 minutes. Add the garlic and stir until fragrant but not browned, less than 1 minute.
  • Stir in the fresh or canned chopped tomatoes with their juices and cook over high, stirring occasionally, until saucy, 2 to 3 minutes. Season to taste with salt.
  • Set the rack in the middle of the oven and heat to 400 degrees. Place all the tortilla chips in a half sheet pan or large baking sheet in an even layer. Cover the chips with the bricklayer meat mixture and all of its chunky salsa. Cover with the shredded cheese. Bake until cheese has completely melted, 8 to 10 minutes.
  • Garnish with the avocado, crumbled queso fresco and scallions. Dig in while hot!
