Steps:
- Arrange steaks in buttered or sprayed shallow oven dish.
- Arrange lemon and onion slices over fish.
- Season with pepper and allspice.
- Carefully pour wine over all.
- Let stand for 15 minutes.
- Combine- bread crumbs, grated cheese, parsley.
- Sprinkle over fish.
- Dot with butter or margarine.
- Bake uncovered in 350°F oven for 25 minutes.

Halibut is probably my favorite fish and the steaks hold up to grilling well and are a fast meal anytime. This recipe is a combination of lots of recipe browsing and mostly what makes my family happy- that is the real goal now, isn't it? Prep time includes marinade time.

- Combine first 4 ingredients and mix well in a shallow dish (I use an 8x8 glass dish). Add Halibut, coat and marinate 30 minutes on each side.
- Heat grill to high. Salt and pepper steak just before placing on grill. Cook 4 minutes per side. Flip it once only.
- Serve with lemon wedges.

- Combine the above marinade ingredients in a non metallic container.
- Marinate halibut steaks in this mixture for an hour, turning the halibut steaks after 30 minutes to ensure they are marinated equally on both sides.
- Remove from the marinade and let excess marinade drain off of steaks.
- Place the halibut steaks on a broiler pan, making sure they are not touching each other.
- Place the pan about 4 inches underneath the broiler element.
- Broil about 10 minutes per inch of thickness measured at the thickest part, or until the fish flakes when tested with a fork.
- This dish may be garnished with lemon wedges and a small parsley sprig.

- In a small mixing bowl, combine 1/4 cup butter, shallots, dill weed, parsley, mustard, lemon juice, garlic and salt; mix well.
- Rinse halibut steaks in cold water and pat dry on paper towels.
- In a 8 inch x 8 inch oven proof casserole dish, add 1 tablespoon of butter and 1 tablespoon of olive oil. Place under the broiler on HIGH heat for about 2 minutes or until the butter has melted.
- Place the halibut steaks in the casserole dish.
- Spread one half the lemon/herb mixture equally over each steak.
- Place under the broiler on HIGH heat and broil for 6 minutes.
- Turn halibut steaks over and spread the remaining lemon/herb mixture evenly over the steaks.
- Continue to broil on HIGH heat for another 5 to 6 minutes or until fish flakes easily with a fork. Do not overcook the fish.
- Serve with cooked basmati brown rice.
- You may also use finely chopped chives or green onions instead of the shallots.

- Rinse halibut steaks in cold water and pat dry on paper towellling; set aside.
- In a small bowl, beat together eggs, milk and mustard until blended.
- Crush corn flakes.
- In a shallow mixing bowl, combine crushed corn flakes, granulated garlic powder, dried dill weed, parmesan cheese and Italian herb seasoning mix.
- Preheat oven to 450 F degrees.
- Dip halibut in egg mixture.
- Now dip halibut in corn flakes mixture to coat all surfaces well. With floured fingers, press the cornflakes firmly into the halibut.
- In a shallow 8" x 10" oven-proof casserole dish, in preheated 450 F oven, heat butter and olive oil until butter melts.
- Place coated halibut steaks in a single layer in the buttered casserole dish.
- Bake in preheated 450 F oven for 5 minutes.
- Turn halibut steaks over and continue to bake for 5 to 6 minutes or until fish flakes when tested with a fork; DO NOT OVERCOOK.
- Serve immediately with tartar sauce, lemon wedges or both.

- Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat. Grilled steak covered in melting herb butter is a cornerstone of summer cooking. Here, both the steak and the compound butter are spiked with Worcestershire sauce, fresh thyme and garlic for an intensely brawny flavor. Then, the steak is garnished with a mix of charred tomatoes, scallions and basil, which gives everything a juicy sweetness brightened with lemon. You can use any cut of beef here; the flank steak has a deeply mineral taste and chewy texture that's at its best sliced thin. - Season steak all over with 1 teaspoon salt and 1/2 teaspoon pepper. In a bowl or resealable bag, combine thyme, garlic, jalapeño, chives, Worcestershire sauce, sugar and lemon juice. Add meat and let marinate in the refrigerator for at least 2 hours and up to overnight.
- Prepare the Worcestershire butter: In a bowl, mash together the butter, thyme, chives, Worcestershire sauce, garlic, lemon zest, salt and pepper.
- Spoon the butter onto a piece of parchment paper or plastic wrap, form into a log and wrap well. Chill for at least 2 hours before using.
- Light the grill or heat the broiler, arranging the rack about 4 inches from the heat source. Grill tomatoes, or broil them on a rimmed baking pan, turning them, until charred on all sides, about 2 to 4 minutes per side. Transfer to a cutting board to cool.
- Brush off any pieces of marinade clinging to the steak, pat steak dry and coat it lightly with oil. Grill or broil steak until it reaches desired doneness, 3 to 5 minutes per side for medium-rare (125 degrees).
- Transfer steak to a cutting board. Slice butter into coins and place them on the steak to melt slightly. Let steak rest for 5 minutes while you prepare the tomatoes.
- Roughly chop tomatoes and place in a bowl with scallions, basil, a pinch of salt and pepper, a drizzle of olive oil and a squeeze of lemon juice. Toss well, adding more salt or lemon juice, or both, to taste.
- Slice the steak thinly, across the grain, and serve with the charred tomato mixture spooned on top. Garnish with more chives and torn basil, if you like.
