EASY PECAN PIE



Easy Pecan Pie image

You will enjoy making this traditional pecan pie as much as you will enjoy eating a slice.

Number Of Ingredients 7

1 (9 inch) unbaked pie crust
3 eggs, beaten
1 cup dark corn syrup
1 cup white sugar
¼ cup melted butter
1 teaspoon vanilla extract
1 cup pecan halves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat together the eggs, corn syrup, sugar, butter and vanilla.
  • Arrange pecans in bottom of pie crust and pour mixture over.
  • Bake for 1 hour or until knife inserted 1 inch from edge comes out clean. Allow to cool before slicing.

1 whole unbaked pie shell (I Use "sylvia's Perfect Pie Crust" Recipe)
1 cup white sugar
2 tablespoons brown sugar
1/4 teaspoon salt
1 cup corn syrup
1 cup melted butter (salted)
3 whole eggs, beaten
1/4 teaspoon vanilla
1 cup heaping chopped pecans

Steps:

  • First, whip up your pie crust.
  • Next, mix sugar, brown sugar, salt, corn syrup, butter, eggs, and vanilla together in a bowl.
  • Pour chopped pecans in the bottom of the unbaked pie shell. Pour syrup mixture over the top. Bake pie at 350º for 50 minutes, being careful not to burn pecans and crust.
  • Allow to cool for several hours or overnight. Serve in thin slivers.

  • Sift flour and icing sugar into a bowl. Rub in butter until mixture resembles breadcrumbs. Add lemon juice and enough water to mix to a firm dough. Knead lightly until smooth; refrigerate 30 minutes.
  • Roll dough to line base and side of a greased 23cm flan tin. Press pastry around side of tin (do not stretch pastry). Trim edges. Refrigerate for 15 minutes.
  • Preheat oven to hot, 200°C. Place sheet of baking paper over base of pastry. Sprinkle with dry rice or dried beans or peas. Blind bake for 15 minutes. Remove paper and rice. Sprinkle nuts evenly over pastry base. Reduce oven to 180°C.
  • FILLING: In a medium saucepan, melt butter. Stir in golden syrup, brown sugar, egg, then sifted flours. Stir until smooth. Pour mixture over pecan nuts.
