"This sweet and colorful fruit compote is perfect with an egg casserole at a holiday brunch. It can bake right alongside the eggs, so everything is conveniently done at the same time," notes Joyce Moynihan in Lakeville, Minnesota.

Number Of Ingredients 7

2 cans (15-1/4 ounces each) sliced pears, drained
1 can (29 ounces) sliced peaches, drained
1 can (20 ounces) unsweetened pineapple chunks, drained
1 package (20 ounces) pitted dried plums (prunes)
1 jar (16 ounces) unsweetened applesauce
1 can (21 ounces) cherry pie filling
1/4 cup packed brown sugar

Steps:

  • In a large bowl, combine the first five ingredients. Pour into a 13-in. x 9-in. baking dish coated with cooking spray. Spread pie filling over fruit mixture; sprinkle with brown sugar. , Cover and bake at 350° for 40-45 minutes or until bubbly. Serve warm.

Spiced Winter Fruit Salad image

2 grapefruits
2 navel oranges
1 cup red grapes, halved
1 pomegranate, peeled and broken into pips
2 bananas
14 cup honey
1/4 cup water
1/2 vanilla bean, split and scraped
3 coin-size pieces fresh peeled ginger
1 cinnamon stick
1 star anise (optional)

Steps:

  • For the fruit: Cut the grapefruits and oranges into segments over a large bowl, and squeeze the remaining juice from the inner membrane. Gently toss the segments with the grapes and pomegranate pips and grapes. Peel, slice, and toss in the bananas.
  • For the syrup: Stir together the honey, water, vanilla bean pod and seeds, ginger, cinnamon, and star anise, if using, in a small saucepan. Bring the mixture to a simmer, and then pour over the fruit. Remove the star anise, set aside for about 1 hour for the flavors to come together. Serve.

A foolproof recipe, you can vary it by using other dried fruits and/or spices. You can use ruby or tawny port--no need to use a great vintage here, but do use something drinkable. I think it is worth it to seek out organic dried fruits.

12 prunes, pitted
8 dried figs
4 dried apricot halves (or peaches)
4 dried pear halves
3 pieces crystallized ginger
1 clove
5 allspice berries
5 peppercorns
1 star anise
1 cinnamon stick, about 1-inch long
1 cup port wine

Steps:

  • Combine everything in a heavy non reactive pan and bring to a boil.
  • Lower the heat, cover and simmer for 30 minutes.
  • If the dried fruits are not sufficiently tender, add 1/4 cup of water and simmer and additional 15 minutes.
  • Once the fruit is sufficently tender, remove the fruit to a serving bowl and strain the liquid over the fruit.
