MEXICAN PARTY WINGS

Steps:

• Heat oven to 350ºF. Spray large baking sheet with nonstick cooking spray. In blender container, combine salad dressing and chiles; cover and blend until smooth. Spoon into small serving bowl. Refrigerate while making drummettes.
• In shallow dish, combine flour and taco seasoning mix; mix well. Stir in oil with fork until well blended. Coat drummettes with flour mixture. Coat drummettes again to use up flour mixture. Place on sprayed baking sheet.
• Bake at 350ºF for 15 minutes. Turn drummettes; bake an additional 14 to 17 minutes or until chicken is fork-tender and juices run clear. Sprinkle parsley flakes on salad dressing mixture; serve as dip with warm drummettes.

TEX-MEX CHICKEN WINGS (OR DRUMSTICKS)

Steps:

• Preheat oven to 180°C/160°C fan-forced. Line a baking tray with baking paper.
• Combine seasoning, lime juice, oil and garlic in a large bowl. Add wings. Toss to coat.
• Transfer to prepared tray.
• Bake 50 minutes or until wings are browned and cooked through.

TEX-MEX PARTY NUTS

Steps:

• Heat oven to 300°F. In medium bowl, mix nuts and butter until nuts are coated. In small bowl, mix remaining ingredients except sugar; sprinkle over nuts. Stir until nuts are completely coated. Spread in single layer in 15x10x1-inch pan.
• Bake uncovered about 10 minutes or until nuts are toasted. Return to medium bowl. While nuts are still hot, sprinkle with sugar and toss to coat.
• Cool completely, about 1 hour. Store in airtight container at room temperature up to 3 weeks.
