Croquetas de Jamón (Ham Croquettes) are a Cuban household staple! They're crispy, bite-size logs of smooth ground ham coated in breadcrumbs then fried to perfection. The perfect breakfast or snack for any day of the week!

4 tablespoons unsalted butter (room temperature)
1 tablespoon finely chopped onion
1 cup whole milk (room temperature)
1 cup all-purpose flour (divided)
1/4 teaspoon nutmeg
Salt and pepper to taste
1 tablespoon dry cooking wine ((vino seco))
1 pound ground ham* ((see note))
2 large eggs (room temperature)
1 cup bread crumbs ((or finely ground saltine crackers))
Vegetable oil for frying

Steps:

  • In a saucepan, melt butter at medium-low heat. Add onion and cook for 1 minute.
  • Slowly whisk in milk, 1/3 cup of flour, nutmeg, salt, and pepper. Continue to whisk until it becomes a very thick sauce (a roux).
  • Add in the cooking wine and ground ham to the sauce. Mix together slowly until all is combined. Reduce heat to low and let simmer for 5 minutes.
  • Transfer the filling to a bowl. Let it rest at room temperature then refrigerate for 2 hours or overnight (the longer the better). The mixture has to harden in order to form into logs and coat evenly. If this step is skipped, it will be very hard to form logs, coat with the breading, and fry. This is an important step. Don't skip it.
  • Remove the filling from the refrigerator. Form logs from the mixture straight from the fridge. It's ok if they are cold, it will be easier to form the logs this way. You want the logs to be approximately 3" long and 1" wide. If the mixture is sticky as you're making the logs, add bread crumbs, 1 tablespoon at a time, to the mixture until it's no longer sticky.
  • Continue forming the logs until you have all the croquette logs done then place them back in the fridge to firm up once again, about 30 minutes.**
  • To bread the croquette logs, you want to set up a breading station. In one bowl, whisk eggs and set aside. In another bowl, mix the remaining flour and bread crumbs.
  • Remove the logs from the fridge. Dip each croquette log in the egg wash and then coat in bread crumb/flour mixture. Repeat with each one until they are all breaded. Let the croquettes rest at room temperature for 5 minutes before frying.
  • In a large pot or pan, heat enough vegetable oil to cover the croquettes completely. Fry each croquette until golden brown, approximately 3-4 minutes. Don't crowd the pot too much as you are frying. This will help them all get evenly cooked.
  • Remove the croquettes from oil and drain on a paper towel-lined plate. Serve with saltines and lime wedges. Enjoy!

Croquetas de jamon, or Spanish ham croquettes, are one of the most typical Spanish tapas that you will find at restaurants and bars across the country. This croquetas recipe is a perfect way to make a traditional Spanish dish at home.

3/4 cups jamón serrano
1/2 large-sized onion, diced
4 tablespoons unsalted butter
4 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon ground black pepper
4 tablespoons all-purpose flour
1 1/2 cups whole milk
1 large egg
2 cups breadcrumbs
vegetable oil, for frying the croquetas

Steps:

  • Using a food processor, chop the ham into very tiny pieces.
  • Heat a large pan over medium heat and put in the butter and olive oil.
  • Heat until the butter is melted, then add the chopped onion. Turn down the heat to the minimum and sautée the onion at low heat for 8-10 minutes, until tender and golden-colored.
  • Mix in the chopped ham and cook for a few more seconds.
  • Sautée with salt, nutmeg, and ground black pepper.
  • To create the bechamel, slowly mix flour with the onion and ham. Stir until it starts to darken a bit.
  • Then slowly add in the milk in small dashes, being sure that it evaporates and thickens before adding the next pour.
  • Once all the milk is integrated and the batter separates from the pan, turn off the heat and let it cool down for 20 minutes at room temperature.
  • Let the batter rest in the refrigerator for a minimum of 2 hours but preferably overnight, so it can fully develop its flavors.
  • Once the batter has rested, beat the eggs and put them on a large plate. On another plate, prepare a bed of breadcrumbs.
  • Slightly wet your hands with water or oil and shape little cylinders. You can also use two spoons if you do not wish to use your hands. Keep wetting your hands once the batter starts to stick.
  • Gently place the croquetas on the egg plate, being careful that they do not lose their shape. Repeat until all the croquetas are shaped.
  • Turn each of them around to cover with the beaten eggs.
  • Then transfer them into the breadcrumbs plate and completely coat them.
  • Pour the vegetable frying oil into a large pan and heat at medium heat.
  • Fry the ham croquetas for about 3-4 minutes on each side until browned.

I don't know how this recipe came to be, but we know my great-grandmother made this. It is made with diced ham in the oven and covered in bread crumbs. After shaping them, you can put cheese or anything you want into the middle for a filling. I personally like cream cheese or Cheddar cheese in mine but you can put whatever you want in the middle.

½ cup all-purpose flour
1 cup milk
½ teaspoon salt
2 cups diced ham

Steps:

  • Melt butter in a saucepan over medium heat. Add flour slowly, stirring to create a buttery paste. Add milk and salt; cook and stir until mixture thickens, about 5 minutes. Let cool.
  • Mix ham, mustard, and onion thoroughly into the butter mixture. Chill dough in the refrigerator until safe to handle, 1 to 2 hours.
  • Shape chilled dough into croquettes about 1/3 cup apiece.
  • Preheat oil in a skillet over medium-high heat.

1/4 to 1/2 teaspoon curry powder
1/4 cup all-purpose flour
3/4 cup whole milk
2 to 3 teaspoons prepared mustard
1 teaspoon grated onion
2 cups coarsely ground fully cooked ham
2/3 cup dry bread crumbs
1 large egg, room temperature, beaten
2 tablespoons water
Oil for deep-fat frying
2 tablespoons butter
2 tablespoons all-purpose flour

Dash pepper
1-1/4 cups whole milk
1/2 cup shredded cheddar cheese
1/2 cup shredded Swiss cheese

  • In a saucepan, melt butter; stir in curry powder and flour. Gradually add milk. Bring to a boil; cook and stir until thickened, 2 minutes. Remove from the heat. Crisp ham croquetas, gooey on the inside, are as synonymous with Miami as the Cubano. Deep-fried and shaped like cigars, these ham snacks are a classic Cuban dish. Though many new Cuban bakeries and restaurants play around with the ingredients, ham remains the most popular croqueta base. This version, from Islas Canarias Restaurant in Miami, is considered by many to be gold-star croquetas that hit the ideal sweet and salty notes. Squeeze some fresh lime on top, drizzle with hot sauce and serve with saltine crackers.

1 pound honey ham, coarsely chopped
1 Spanish onion (12 ounces), coarsely chopped
4 tablespoons unsalted butter
1 cup all-purpose flour
1 2/3 cups whole milk
1/4 cup curly parsley, finely chopped
1 tablespoon garlic powder
1 teaspoon fine salt, plus more to taste
2 cups finely crushed soda crackers or plain bread crumbs (4 ounces)
1 large egg, room temperature
Vegetable oil, for frying (about 4 cups)
Lime wedges, hot sauce and saltine crackers, for serving

Steps:

  • In a food processor, pulse the ham and onion until coarsely ground. Set aside.
  • In a large saucepan, melt the butter over medium heat. Quickly whisk in 1/2 cup flour and cook, whisking constantly, until smooth and tan, 2 to 3 minutes. While whisking, gradually add 1 cup milk, then continue whisking until the mixture thickens to the consistency of soft mashed potatoes, 1 to 2 minutes. Add the remaining 1/2 cup flour and use a wooden spoon or sturdy spatula to stir until very thick, firm and a darker shade of brown, 1 to 2 minutes. Some browning on the bottom of the pan is OK.
  • To the pan, add the ham mixture, parsley, garlic powder and salt, and vigorously mix until the ingredients are evenly incorporated, 3 to 5 minutes. Transfer the mixture to a sheet pan lined with plastic wrap or parchment paper and pat into a 9-by-7-inch rectangle. Refrigerate for at least 2 hours or preferably overnight.
  • Cut the chilled paste into 21 (3-by-1-inch) rectangles, then gently roll each into a 3-inch-long cylinder. Make sure the croquetas are smooth and without cracks. Place the croquetas on the sheet pan and chill in the freezer for 30 minutes.
  • Place the cracker crumbs on a plate. In a medium bowl, combine the egg and remaining 2/3 cup milk, and whisk until combined.
  • Submerge 4 to 5 chilled croquetas in the milk mixture to thoroughly coat, then transfer immediately to the crackers, making sure the croquetas are coated in the crumbs. Return to the sheet pan and repeat with the remaining croquetas. Freeze again until firm but not frozen, 15 to 30 minutes. Don't freeze for longer than 30 minutes as they may burst in the hot oil.
  • Towards the end of the chilling time, fill a small Dutch oven or heavy saucepan with oil to a depth of 1 1/2 inches. Heat over medium-high until a deep-fry thermometer registers 350 degrees. If you don't have a thermometer, use a croqueta as a test piece: Carefully drop in 1 croqueta. If it immediately begins to fry and brown, the oil is ready. Carefully add 2 to 3 croquetas and fry, turning if needed to evenly cook, until golden brown,1 1/2 to 2 1/2 minutes. Transfer to a plate lined with paper towels and let rest for 1 to 2 minutes before serving. Repeat with the remaining croquetas, working in batches and adjusting the heat to maintain the oil temperature. Serve immediately with lime wedges, hot sauce and saltine crackers.

  • 1 Melt the butter in a pan over a medium heat and add the chopped onion and jamón serrano. Cook for a few minutes until the onion turns translucent but not coloured. Meanwhile, in a separate pan, bring the milk almost to boiling point and then set aside.
  • 2 Add the flour to the onion and cook for 5 minutes, stirring, until the flour has toasted a bit. Add the hot milk little by little, whisking all the time, to make a thick roux. Keep going until you have added all the milk and you have a smooth and silky béchamel. When it comes back to the boil reduce the heat to low and add the nutmeg, salt and pepper. Leave to simmer for about 40 minutes, whisking to make sure it doesn’t stick to the bottom of the pan. Taste and adjust the seasoning if necessary.
  • 3 Line the bottom of a baking tray with baking parchment and then pour the béchamel into the baking tray. Spread it out and then immediately place a layer of cling film directly on top, making sure the cling film is touching the surface of the béchamel as this will stop a skin from forming. Transfer to the fridge to chill completely.
  • 4 After 3 hours the béchamel should be firm enough to handle. Peel off the cling film, turn the béchamel out on to a floured surface and carefully peel away the baking parchment. Sprinkle with a little more flour and use a knife to cut the béchamel into strips and then small squares, about 4 cm square. Dust your hands with flour and roll these little squares into balls between your hands.
