I never thought I would eat baked fish until I went by my moms on a suprise visit and smelled the delectable odor coming from the oven. She had to tell me what it was, color me surprised, it did'nt smell like fish at all.

4 (6oz) oz catfish filets
1 large yellow onions, diced
1 large bell pepper, diced
1 can(s) cream of mushroom soup, golden
1 1/2 c long grain wild rice
6 oz mushrooms, fresh,sliced

Steps:

  • 1. Rinse fillets and butterfly open. Pat dry sprinkle with onion powder, garlic powder, fresh cracked black pepper, and "Old Bay" Seasoning.
  • 2. Place each fillet on a piece of aluminum foil spray with no stick cooking spray. set aside. Cook wild rice according to package instructions .Make sure all liquid is absorbed because fish and veggies will add moisture as it cooks.
  • 3. Let rice cool completely before gently mixing all ingredients in mixing bowl. taste. adjust seasoning as needed.
  • 4. Spoon mixture into each catfish fillet, being careful not to overstuff.Tear foil for fish,place each fish in foil and seal closed leave enought room for air to circulate.
  • 5. place in pyrex dish and put in the oven, preheated to 350 degress. Cook for 20 minutes,. Check that fish is opaque and flakes with a fork. Oh and allow to sit for 15 minutes. be careful of steam. Enjoy!

This wild rice stuffing recipe is an unexpected addition to your Thanksgiving meal. It's delicious alongside a roast turkey.

Number Of Ingredients 17

1/2 cup slivered almonds
5 tablespoons olive oil
2 medium onions, coarsely chopped
4 celery ribs, chopped into 1/2-inch pieces
5 large cloves garlic, finely minced
2 tablespoons finely chopped fresh rosemary
2 tablespoons finely chopped fresh sage
Salt and freshly ground pepper
1/4 cup coarsely chopped fresh flat-leaf parsley
8 ounces sweet fennel sausage, casings removed
2 Granny Smith apples, peeled, cored, and cut into 1/2-inch dice
1/2 cup Calvados, or white wine
6 cups cooked wild rice
4 cups cooked white rice
20 dried apricot halves, quartered
12 dried pitted prunes, halved
Unsalted butter, for baking dish

Steps:

  • Heat oven to 375 degrees. Spread almonds on a baking pan, and toast until golden, 5 to 7 minutes. Remove pan from oven, and set almonds aside to cool.
  • Heat 3 tablespoons olive oil in a large saute pan set over medium heat. Add onion, celery, and garlic. Cook, stirring occasionally, until tender, about 7 minutes.
  • Increase heat to high, and add rosemary and sage; season with salt and pepper. Continue cooking until vegetables are golden, 2 to 3 minutes. Remove pan from heat; stir in parsley. Transfer vegetables to a large bowl, and set aside. Return pan to heat.
  • Crumble sausage, separating meat. Add 1 tablespoon olive oil to saute pan. Add sausage, and cook, stirring and breaking up meat until well browned, 2 1/2 to 3 minutes. Transfer sausage to bowl with reserved vegetables. Return pan to heat.
  • Add remaining tablespoon olive oil to pan. Add apple, and cook, stirring occasionally, until browned, 2 to 3 minutes. Add Calvados. Using a wooden spoon, scrape up any brown bits on bottom of pan. Cook until most of the liquid has evaporated, about 1 minute.
  • Remove pan from heat, and transfer mixture to bowl with sausage and vegetables. Add wild and white rice, apricots, prunes, and reserved toasted almonds. Season with salt and pepper. Transfer to a buttered baking dish and bake at 375 degrees until browned and heated through.

BAKED FLOUNDER WITH WILD-RICE STUFFING



Baked Flounder With Wild-Rice Stuffing image

Number Of Ingredients 16

1/2 cup raw wild rice, cooked according to the recipe on this page
6 tablespoons butter
Salt and freshly ground pepper to taste
8 fillets of flounder or sole, about two and one-quarter pounds total weight
1/2 cup finely chopped onion
1/2 cup finely chopped celery
1/2 pint (1 cup) shucked oysters
1/3 cup finely chopped scallions
1/2 cup plus 2 tablespoons fine fresh bread crumbs
1/2 cup heavy cream
1 egg, lightly beaten
Dash of cayenne pepper
1/2 cup finely chopped parsley
2 tablespoons finely grated Parmesan cheese
1/4 cup melted butter (optional)
Juice of half a lemon (optional)

Steps:

  • Cook the rice, drain and set it aside to cool.
  • Preheat oven to 450 degrees.
  • Butter a baking dish with two tablespoons of the butter and sprinkle with salt and pepper to taste. Arrange the fillets close together in one layer on the baking dish.
  • Melt two tablespoons of butter in a saucepan and add the onion and celery. Cook, stirring often, until the onion is wilted. Add the oysters and cook about 10 seconds. Add the scallions and cook about 10 seconds. Add the cooked rice, one-half cup bread crumbs, cream and egg. Bring to the boil, stirring. Add the cayenne, parsley and salt and pepper to taste. Remove from the heat and let cool.
  • Melt the remaining two tablespoons butter and brush the top of each fish fillet. Spoon equal portions of the wild-rice mixture on top of each fillet. Smooth the mixture almost but not quite to the edges of each fillet.
  • Sprinkle the top of the fillets with equal portions of the remaining two tablespoons bread crumb and the cheese. Place in the oven and bake seven to 10 minutes. To provide a better glaze, run the dish under the broiler for a minute or less. Combine the melted butter and lemon juice and pour over the fillets when served.
