BANANA AND FLAX SEED MUFFINS
Family favorite. They don't last long. Taste great from the oven. I like to freeze leftovers the same day. Great for breakfast or lunch pails. Freeze ripe bananas until you're ready to do some baking.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line 2 muffin tins with paper liners.
- Mash bananas in a bowl. Add brown sugar, butter, white sugar, and eggs; mix well. Add all-purpose flour, whole wheat flour, flax seeds, baking soda, and baking powder. Scoop batter into the prepared tins.
- Bake in the preheated oven until tops spring back when lightly pressed, about 20 minutes.

- Pre-heat oven to 200c (380f).
- Mash bananas, then mix in flax and egg.
- Stir the dry ingredients together then add to the banana mix.
- Add enough milk to wet the ingredients - this will depend on your bananas.
- Spoon into lined muffin tray and bake for 20 minutes.
- You can also add blueberries or dark chocolate chips or nuts to make a little change.

WHOLE WHEAT BANANA MUFFINS (HEALTHY!)
These muffins are a healthy option because of the wheat flour and flax seed. The sugar could probably be reduced further, if desired, but I haven't tried to do that yet. If you don't want to use the wheat flour, just use 1 1/2 cups all-purpose flour. I add some quick oats to the topping, for presentation. Also good in a mini-muffin pan!

- Preheat oven to 375 degrees. Grease muffin pan or use muffin papers.
- Mix up the flours, flax, baking soda, baking powder, salt and cinnamon in a large bowl.
- In a smaller bowl, mash bananas. Add sugar, egg and melted butter to bananas.
- Add banana mixture to flour mixture and stir.
- Divide mixture evenly into muffin cups, filling each about 3/4 full.
- Prepare streusel topping. Sprinkle onto tops of muffins and lightly press struesel into batter (so it will stay in place as muffin rises).
- Bake at 375 degrees for about 20 minutes. They should pass the toothpick (or knife) test.

BANANA FLAX MUFFINS
This is a recipe I came up with for flax seed using recipe #9176 by Evie*. I tried changing it and it worked perfectly. I sometimes add dried or freeze-dried fruit to these. This recipe make a wonderful flax muffin. The addition of flax seed to recipes gives a nutty flavor without nuts.

WHOLE WHEAT HONEY BANANA MUFFINS
These muffins are delicious and have a great texture, and they are 100% healthy! No refined flour or sweeteners. We have a big family, so this recipe makes a lot of muffins, but it is easily halved for a smaller group. To make the muffins lower in fat, replace half of the oil with unsweetened applesauce. I also use "white whole-wheat" flour, which is softer than that made with red wheat (but has the exact same nutritional value).
