This is superb! I could eat buckets of this! There are no Whole Foods near us, so I searched the Web and found the recipe on the Whole Food Web Site. Culinary homesickness is not a nice thing. Cook time is chill time.

4 (6 ounce) cans chunk light tuna, drained well
14 ounces artichoke hearts, drained and coarsely chopped
1/2 cup chopped red pepper
3/4 cup Greek olive, coarsely chopped
1/2 small red onion, minced
1/4 cup Italian parsley, minced
1/4 cup basil, minced
2 garlic cloves, minced (1 teaspoon)
1 teaspoon dried oregano or 1 tablespoon fresh oregano
1 cup mayonnaise
3 tablespoons lemon juice
fresh ground black pepper

Steps:

  • In a large bowl, combine the tuna, artichoke hearts, red pepper, olives, onion, parsley, basil, garlic, oregano, mayonnaise, lemon juice, and pepper. Mix all the ingredients together well. Serve on bread, on top of a green salad or in lettuce cups.

This recipe was given to me by a friend of my sister's, who is a nutritionist/dietitian for a living. I thought it might be bad, but holy crap it was so easy to make and tasted like heaven. Even if you don't like one of the ingredients, try it and THEN judge! ;o)

1 cup brown rice
1 cup fresh green beans
1 cup celery, chopped
1 cup red bell pepper, diced
1 cup red onion, diced
1/2 cup fresh basil, chopped
3 (6 ounce) canned tuna, in water
1/4 cup extra virgin olive oil
1/4 cup beef broth
1/2 teaspoon sea salt
black pepper, to taste

Steps:

  • Cook rice according to package directions; after, set aside to cool.
  • While rice cools, steam the green beans until tender-crisp; then rinse under cold, running water.
  • Transfer the green beans to a large serving bowl and add the celery, bell pepper, onion and basil.
  • Add the rice and dressing (the dressing is comprised of the last 4 ingredients listed).
  • Toss to combine, then add tuna.
  • Toss to combine and eat immediately or cover and refrigerate until serving time. (I prefer to refrigerate for a few hours.).
  • (Additional notes: you can also use frozen green beans in lieu of fresh for the recipe if necessary, but please use FRESH basil! It makes all the difference to not be using a dried spice. Also, I love to serve these as tacos/burritos on whole wheat tortillas, but you can serve them however you want!).

This is a different twist on a tuna salad -- made with English cucumbers and a light olive oil vinaigrette. The Kalamata olives and vinaigrette give it a nice tangy taste.

1 English cucumber, prewrapped (not the standard Kirby cucumber)
10 ounces drained and flaked light chunk tuna in water
1/3 cup pitted kalamata olive, chopped
2 small tomatoes, chopped
3 tablespoons of bottled olive oil vinaigrette (salad dressing)
lettuce greens or toasted French baguette

Steps:

  • Cut cucumber into 3/4-inch chunks (English cucumbers don't need to have the seeds removed). In a large bowl, combine the chopped cucumbers, tuna, Kalamata olives, chopped tomatoes, and olive oil vinaigrette salad dressing. Stir until blended. Serve over lettuce greens or on toasted baguettes.

1 (14 ounce) can quartered artichoke hearts, drained well
1/2 cup chopped red pepper
3/4 cup sliced Greek olive, such as kalamata
1/2 small red onion, minced
1/4 cup minced Italian parsley (optional)
1/4 cup minced fresh basil
2 garlic cloves, minced (1 tsp)
1 teaspoon dried oregano or 1 tablespoon fresh oregano
1 cup light mayonnaise
3 tablespoons lemon juice, fresh not bottled
fresh ground pepper

Steps:

  • Combine all ingredients.

3/4 cup artichoke hearts, marinated in oil or 3/4 cup artichoke heart, water-packed
1/2 cup pitted kalamata olive, coarsely chopped
2 green onions, finely diced
1/2 cup diced fresh tomato
2 teaspoons dried oregano
3/4 cup feta cheese, crumbled
3 -4 tablespoons olive oil (to taste)
1 -2 tablespoon balsamic vinegar (to taste)
salt and pepper, to taste

Steps:

  • Drain tuna and flake into a mixing bowl.
  • Coarsely chop, or quarter, artichoke hearts and mix with tuna.
  • Add remaining ingredients, mix gently until just blended.
