GRILLED CITRUS MARGARITA

8 to 10 large limes
5 large lemons
4 oranges
1 1/4 cups superfine sugar (or caster sugar), plus more for rimming glasses
3/4 cup tequila, or more if desired

Steps:

  • Preheat a grill on medium-high heat. Slice 2 of the limes and 1 of the lemons into rounds. Set aside.
  • Cut the oranges and the remaining 6 limes and 4 lemons in half crosswise. Pour 3/4 cup of the sugar in a bowl. Dip the cut side of each fruit in the sugar to lightly coat.
  • Grill the sugared fruit over medium-high heat until caramelized with char marks. When cool enough to handle, use a fork or citrus reamer to juice the grilled citrus. There should be about 2 cups of grilled citrus juice.
  • Stir the remaining 1/2 cup sugar into the juice and add the tequila, stirring to combine. Refrigerate until chilled.
  • When ready to serve, pour the drink mix into a large pitcher of ice. Add the sliced citrus rounds and serve over ice in glasses rimmed with sugar.

A fresh tasting margarita! If I am using a premium tequila, I don't salt the rim since I think it takes away from the flavor of the tequila.

1 cup orange-flavored liqueur, such as Cointreau
1 cup tequila
1/4 cup fresh orange juice
1/4 cup fresh lime juice
1/4 cup grapefruit juice
lime wedge
margarita salt

Steps:

  • Combine liqueur, tequila, orange juice, lime juice and grapefruit juice in a large pitcher and mix well.
  • Chill covered in the refrigerator.
  • To serve, rub the rims of margarita glasses with lime wedges and dip in margarita salt, rotating gently to cover the rims evenly.
  • Fill the salt-filled glasses with ice.
  • Shake the chilled margarita mixture in a cocktail shaker filled with ice and strain into the prepared glasses.
  • Garnish each serving with orange, lime and/or grapefruit slices.

Made with thin-skinned limes, these margaritas are bright and flavorful-nothing reminiscent of a bottled mix! The lime rind adds beautiful color and a burst of tart, but not overly sweet, taste. You'll never make a margarita the old way again.

2 medium thin-skinned limes
2 cups ice cold water
1 cup tequila
½ cup white sugar
¼ cup orange liqueur (such as Cointreau®)
¼ teaspoon kosher salt
ice, as needed
6 slices lime

Steps:

  • Cut limes into quarters; remove and discard the center part of the rinds. Transfer lime quarters to a blender with water, tequila, sugar, orange liqueur, and salt. Blend until completely smooth, about 1 minute.
  • Strain mixture into a large measuring cup or small pitcher. Serve over ice and garnish with lime slices.

2 navel oranges
1 lemon, cut into 3/4-inch pieces
1 lime, cut into 3/4-inch pieces
1/4 cup superfine sugar
6 tablespoons Cointreau
4 tablespoons triple sec 3/4 cup good quality tequila (best to use 100% agave "reposado")
6 cups ice
Fine gray salt for the rims of the glasses

Steps:

  • Use a juicing machine for the oranges, lemon and lime. Whisk the juice with the sugar to dissolve then stir in the Cointreau, triple sec and tequila. In a blender, blend the juice mix with 3 cups of ice for about a minute or so then add another 3 cups of ice. Continue to blend until smooth, about 2 minutes. Serve in frosted margarita glasses rimmed with salt, if desired. Farm freshness is the key here. Look for the citrus that is most in season and adjust the recipe. Tangerine, Meyer Lemons and Key Limes all have amazing flavor if you can find them.
