1 (13 1/2 ounce) box Rice Chex
1 (16 ounce) jar dry roasted peanuts
1 (11 ounce) box raisins
1 (12 ounce) bag chocolate chips
1 (12 ounce) bag peanut butter chips
1 cup butter, melted
16 ounces powdered sugar

Steps:

  • Mix cereal, peanuts, and raisins in a large deep bowl. Melt chips and butter, stirring until smooth.
  • Pour melted chips over cereal mixture and carefully stir to coat all pieces.
  • Sift powdered sugar into a small plastic trash bag or paper grocery bag. Add cereal mixture to bag and shake vigorously, making sure bag is tightly sealed.
  • Arrange in a single layer on wax paper-lined cookie sheets several hours to dry. Store in airtight container.

This is my favorite standard dumpling recipe from the cookbook "White Trash Cooking." This is not a light and fluffy dumpling but more like a noodle, but not really pasta. They hold up well when making homemade chicken and dumplings. This is incredibly easy and I'm still unsure why it works so well but I won't complain.

4 cups flour
2 cups water
1/2 cup butter
2 teaspoons salt

Steps:

  • Combine flour and salt in a large mixing bowl.
  • Boil water and stir in butter until it is melted, too.
  • Remove from heat and pour over flour.
  • Mix well.
  • Roll out into a 1/8th inch sheet and cut into strips or squares with a knife or pizza cutter. You may need to toss with additional flour to prevent sticking to your cutting board or rolling pin.
  • Add raw strips or squares of dough to your chicken and dumpling broth (on a low simmer) for about 10 minutes. Stir once or twice gently every five minutes. No more or they might break apart or become gummy and sticky.

OMG.. there isn't even a category for this.. it has to be right up there as the Queen of White Trash Cooking..if you aren't familiar with White Castles..they're similar to Castle Burgers. I found an old W.C. cookbook the other day and this was a winner. You make it up the night before and chill it, so it's ready to bake in the morning.

10 frozen White Castle hamburgers
1 lb mild cheddar cheese, shredded
6 eggs, beaten
1 1/2 cups skim milk
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons mild green chilies, chopped

Steps:

  • Separate hamburgers and pickles from bun tops and bottoms.
  • Spray a 9x13 baking dish with nonstick cooking spray.
  • Line entire pan, coming up halfway on the sides of the pan with the bottoms and tops of the buns.
  • Chop and crumble the hamburger,and sprinkle over the buns evenly.
  • Sprinkle with the cheese.
  • Combine eggs,milk ,salt and pepper, green chilies (I would throw in a shot or two of Tabasco sauce).
  • Pour this mixture over the cheese.
  • Cover and chill overnight.
  • Remove from refrigerator 15 minutes before baking.
  • Bake for 40 minutes or until set, uncovered in a preheated 350°F oven.
  • Garnish with a sprinkle of paprika and the pickles.

I think with this recipe it fits the topic very well.Thanks to Kim for Recipe#63684, which the potato part of the recipe is based on. Even if your not " White Trash or Redneck " I think you might like this. 2 1/2 cups potatoes, peeled and diced into 2 inch chunks
1 1/2 tablespoons vegetable oil
3 tablespoons parmesan cheese (the stuff in the green shaker )
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt (or to taste )
1/8 teaspoon cayenne pepper
1/2 teaspoon black pepper (or to taste )
6 ounces diced Spam
3 tablespoons margarine
3 tablespoons all-purpose flour
1 cup milk

Steps:

  • Preheat your oven to 450 degrees.
  • In a 3 cup bowl with lid, add all the potato ingredients,cover and shake until potatoes are well coated.
  • Place on a cookie sheet that has been lined with aluminum foil and sprayed with cooking spray, bake for 25 minutes, stirring once or twice during baking.
  • While potatoes are baking, melt margarine in a medium sized skillet add Spam and lightly brown.
  • Add flour and cook until " flour taste " is gone about 5 minutes.
  • Then add a little milk at a time, stirring until desired thickness is reached ( you might need a little bit more milk ) add salt and pepper to taste.
  • Divide potatoes between two plates, and cover with gravy.

After I saw a recipe for White Trash on Pinerest and posted it here I started to think how I could change it up quite by accident. This is what I came up with and plan to try it next time. You can use more hamburger meat, I use 1lb and 1/2 and add a little milk to thin.

1 -1 1/2 lb ground meat
1 small onion, chopped
10 ounces cream of onion soup
1 small pkg velveeta white quaso cheese, cut in cubes
32 ounces tater tots
1 (11 ounce) can shoe peg white corn, drained
salt and pepper, to taste

Steps:

  • Brown hamburger meat with onions.
  • Add soup, thin with a small amount of milk if too thick.
  • Add corn.
  • Pour into a 9 x 13 greased casserole dish and top with Velvetta pieces.
  • Add tator tots to top.
  • Bake 375 for 35 minutes.

WHITE-TRASH POT ROAST

I don't know why, exactly,when I first receievd this recipe it was called "white-trash" and it certainly isn't an insult. It's simply a really easy way to put dinner on the table, using a crockpot. As a former chemistry student, I know that the acid in the Cola tenderizes the meat, and the caramel coloring in the soda makes your gravy brown. Delicious!

2 1/2 lbs pot roast
12 ounces cola
1 1/4 ounces onion soup mix
10 ounces condensed cream soup
3 carrots
2 potatoes
1 onion

Steps:

  • Cut carrots, potatoes, and onion into stew-size pieces and place in bottom of crockpot.
  • Place roast on top. Sprinkle with black pepper (no salt--the onion soup mix contains a lot of salt).
  • In bowl, mix soup from can, cola, and onion soup mix with a whisk, to remove lumps. Pour this liquid over roast and veggies.
  • Cook on low in a lidded crockpot 6-8 hours or more. Don't take the lid off until you're ready to eat.You can't overcook. Serve atop wide egg noodles or rice.

1 cup peanut butter
1 (16 ounce) box Rice Chex
2 (16 ounce) boxes confectioners' sugar
1 (16 ounce) bag chocolate chips (optional)
1 (16 ounce) jar dry roasted peanuts (optional)

Steps:

  • For "WHITE TRASH," use the first four ingredients only. Or for a fun variation - add the optional chocolate chips and dry roasted peanuts to make "TRAILER TRASH!".
  • Melt butter, peanut butter (and chocolate chips) together in medium sauce pan OVER LOW HEAT. Place Rice Chex (and dry roasted peanuts) in a large container (plastic salad mixing bowls with lids work great!). Pour melted mixture over Rice Chex (and peanuts) and toss, until evenly coated throughout.
  • ---Kids love this part!---.
  • Then pour conf. sugar over mixture (1 box at a time), place lid on container, and shake shake shake! Shake well, until all the mixture is coated with sugar. Repeat with second box.
  • Serve, and enjoy!
