GLUTEN-FREE WHITE SAUCE (BéCHAMEL)
Gluten-free white sauce, also known as a classic béchamel sauce, is one of the five mother sauces in French cuisine. This easy recipe, made from butter, gluten-free flour, and milk, can be used on its own or as the base for many other sauces. Easy to customize for dairy-free or grain-free options.

Steps:
- In a small saucepan over medium heat, melt butter.
- Whisk in sweet rice flour.
- Season with salt and pepper, if desired.
- Cook and stir for 2 minutes.
- Gradually whisk in the milk.
- Continue to cook over medium to low heat, stirring continuously, until the sauce is thick, about 10 minutes.
- Add more milk if needed to reach desired consistency.

Finding wheat, dairy and sugar free recipes for my daughter is hard, but I adapted a white sauce recipe and made it slightly sweet for some flavour. She loves this sauce with anything, including salad!

Steps:
- In a warm saucepan mix margarine and flour together, stirring quickly.
- When combined and melted add milk slowly, stirring quickly.
- Add honey.
- Simmer whilst stirring and serve with wheat-free pasta, rice noodles, roast beef, potatoes or use in a lasagna.
- I even use it instead of margarine on crackers with salmon or avacado.
