This simple cake is egg-free and dairy-free. It's easy to make and you can customize to create various flavors.

2 cups all purpose flour
2 tsp baking powder
3/4 cup granulated sugar
1 cup water
1/4 cup vegetable, canola or olive oil
2 tsp vanilla
1 tbsp lemon zest (optional)

Steps:

  • Preheat oven to 350°F. Grease the interior of an 8 inch round springform cake pan. Line the bottom with parchment paper.
  • In a large bowl, add flour, baking powder, sugar. Whisk vigorously with a whisk until evenly combined.
  • Add water, oil, vanilla and lemon zest (is using). Whisk until batter is smooth and no lumps remain.
  • Pour cake batter into the prepared cake pan. Bake for about 40-45 minutes or until the surface of the cake is a light golden brown and toothpick inserted comes out clean. Let cake cool before slicing and serving. You can dust cake with powdered sugar if desired.

Number Of Ingredients 8

1 1/4 cups (2 1/2 sticks) unsalted butter, softened, plus more for pan and wire rack
4 1/2 cups sifted cake flour, plus more for pan
2 tablespoons baking powder
3/4 teaspoon kosher salt
1 1/2 cups milk
1 1/2 tablespoons pure vanilla extract
2 1/4 cups sugar
7 large egg whites

Steps:

  • Preheat oven to 350 degrees. Butter baking pan. Line bottom with parchment paper; butter paper, and dust with flour, tapping out any excess. Set aside.
  • Sift together flour, baking powder, and salt into a medium bowl, and set aside. Combine milk and vanilla in another bowl, and set aside. Beat butter in the bowl of an electric mixture fitted with the paddle attachment until pale and creamy. Add sugar in a steady stream, and continue beating until light and fluffy, about 3 minutes. Reduce speed to low. Add dry ingredients in 3 batches, alternating with the milk mixture and starting and ending with the dry ingredients. Be careful to avoid overbeating. Set aside.
  • In a clean bowl of an electric mixer fitted with the whisk attachment, beat egg whites until stiff peaks form. Fold a third of the whites into batter until combined. Fold in remaining whites in 2 batches.
  • Pour batter into prepared pan, and smooth top with a metal spatula. Bake until a tester inserted near the center comes out clean and the cake springs back when pressed lightly in the center, 35 to 45 minutes. Transfer to wire rack; cool 15 minutes before unmolding. Butter wire rack. Loosen cake sides with a paring knife, and invert cake onto greased rack. Reinvert to prevent it from splitting. Cool completely before using or storing in the freezer.

1 cup white sugar
½ cup butter
2 eggs
2 teaspoons vanilla extract
1 ½ cups all-purpose flour
1 ¾ teaspoons baking powder
½ cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x9 inch pan or line a muffin pan with paper liners.
  • In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan.
  • Bake for 30 to 40 minutes in the preheated oven. For cupcakes, bake 20 to 25 minutes. Cake is done when it springs back to the touch.

  • Prepare the cake pans - line the bottom of two 8 inch cake pans and butter and flour the sides. For best results, you can use cake baking strips for white sides. These need to be soaked in cold water ahead of time (at least 15 minutes). After 15 - 30 minutes of soaking, wrap the prepared cake pans with the soaked baking strips and set aside until needed.
  • Sift all the dry ingredients together and set aside. This includes the cake flour, baking powder and baking soda.
  • Place the sugar and water in a saucepan. Heat over medium-high heat and stir to dissolve the sugar. Heat until the mixture comes to a boil. Lower the heat and let it simmer for 2 - 5 minutes and then remove from the heat. Stir in the vanilla extract.
