BANANA COCONUT MUFFINS



Banana Coconut Muffins image

These naturally sweetened banana coconut muffins are a real treat. I bet you can't tell they're made with 100% whole wheat flour! Recipe yields 1 dozen muffins.

3/4 cup whole wheat pastry flour or white/regular whole wheat flour
1/2 cup white whole wheat flour or regular whole wheat flour
1 1/2 teaspoons baking powder
1/4 teaspoon fine sea salt
1/2 teaspoon lemon zest (the zest from about about 1/2 medium lemon)
1 cup mashed ripe banana (from about 3 bananas)
1/2 cup virgin coconut oil, melted
1/4 cup honey
1 large egg, preferably at room temperature
1 teaspoon vanilla extract
3/4 cup unsweetened shredded coconut, divided
1 tablespoon turbinado (raw) sugar

Steps:

  • Preheat oven to 375 degrees Fahrenheit. If necessary, grease all 12 cups of your muffin tin with butter or muffin liners (my pan is non-stick and didn't require any grease).
  • In a medium bowl, whisk together the flours, baking powder, salt and lemon zest. Stir in 1/2 cup of the shredded coconut.
  • In a separate, medium bowl, whisk together the mashed banana, coconut oil, honey, egg and vanilla.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Divide the batter evenly between the muffin cups (a scant 1/4 cup batter each), then sprinkle the muffin tops with the remaining 1/4 cup shredded coconut. Sprinkle the tops with the raw sugar.
  • Bake for about 17 to 20 minutes, until a toothpick inserted into the center comes out clean. Transfer muffins to a cooling rack and let them cool.

Banana Flapjacks with Coconut and White Chocolate image

Crisp around the edges but chewy in the middle, these flapjacks are tasty and not overly sweet. They're a good way to use up brown bananas but because of the coconut and white chocolate they don't taste overwhelmingly of banana. Use the right oats and they're also gluten-free. They're fairly robust, so make a good addition to lunch boxes and they're a perfect energy boost for outdoor activities.

150 g unsalted butter
1 tbsp golden syrup
50 g white chocolate ((I use Green & Blacks))
2 bananas
60 g light brown sugar ((I use muscovado))
50 g desiccated coconut
300 g rolled oats ((ensure they're gluten-free if you need a gluten-free bake))
1 tsp sesame seeds ((optional))

Steps:

  • Melt the butter in a pan over a low heat along with the syrup, sugar and white chocolate.
  • Mash the bananas in a large bowl.
  • Pour in the butter mixture and give a good stir.
  • Stir in the the coconut, followed by the oats.
  • Press into a 23 cm (9") square silicone mould or lined tin and sprinkle with sesame seeds if desired.
  • Bake for twenty minutes in the middle of a preheated oven at 180℃ (160℃ fan, 350℉, Gas 4).
  • Leave to cool in the tin then cut into sixteen squares.

3 very ripe bananas
1 egg
125 ml vegetable oil
250 g flour
100 g caster sugar
1 1/2 teaspoons baking powder
150 white chocolate chunks
2 tablespoons desiccated coconut

Steps:

  • 1. Preheat the oven to 180C.
  • 2. Line a muffin tray with 12 paper muffin cases.
  • 3. Mash the bananas well.
  • 4. Beat together the eggs and oil.
  • 5. Put the flour, baking powder and sugar together in a large bowl, and stir through. Mix in the mashed bananas and beaten egg and oil mixture.
  • 6. Fold in the white chocolate chunks and coconut. Spoon evenly into baking cases in muffin tin.
  • 7. Bake in the oven for 20 minutes or until the muffins come away from the side of the pan when touched.
  • 8. Rest the muffin tray on a wire rack for five minutes then remove the muffins and leave on the rack for another five minutes before serving.

1/2 cup shortening
2 cups sugar
2 large eggs
1-1/2 cups mashed ripe bananas (about 3 medium)
3 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
4 ounces white baking chocolate, melted and cooled
CREAM CHEESE FROSTING:
1 package (8 ounces) cream cheese, softened
3/4 cup butter, softened
1 teaspoon vanilla extract
5 cups confectioners' sugar
1/2 cup finely chopped pecans, toasted

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating will after each addition. Beat in bananas and vanilla. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition. Fold in chocolate., Pour into three greased and floured 9-in. round baking pan. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing cake from pans to wire racks to cool completely., For frosting, in a large bowl, beat the cream cheese, butter and vanilla until smooth. Gradually beat in confectioners' sugar. Spread between layers and over top and sides of cake. Sprinkle with pecans. Store in refrigerator.
