ARTICHOKE & WHITE BEAN SOUP
If you love beans, you will LOVE this recipe. I also used a can of great northern beans and omitted the croutons to lower the calories. [Adapted from the Culinary Institute of America].

Steps:
- Puree artichoke hearts and beans in the food processor.
- Heat the oil over medium heat in a small saucepan.
- Add the garlic and saute.
- Add the artichoke/bean puree and the broth and heat through.
- Season with salt and pepper.
- Garnish with mint and croutons.
WHITE BEAN & ARTICHOKE SOUP
I only like soups when they are blended; this one is a wonderful orange color. This recipe was inspired by a recipe in Vegan with a Vengeance.

Steps:
- In a stockpot over medium-high heat, sauté onion in the olive oil until translucent (approx. 3-5 minutes).
- Add the pepper, artichoke hearts, garlic, salt, roasted red pepper, sage, and bay leaf. Stir for 1 minute.
- Add the vegetable broth and beans. Bring to a boil.
- Reduce heat and simmer for five minutes or until the beans are heated through. In batches, transfer soup to a blender and puree until smooth, or use an immersion blender right in the pot.
- Add soup back to stockpot and stir in lemon juice. Adjust the salt and pepper to taste.

An adaptation from an old (1998) Eating Well recipe -- very quick to make and very tasty. Add some toasted Parmesan cheese bread and a green salad and you've got a very tasty dinner.

Steps:
- Heat oil in saucepan over medium heat. Add garlic and onion, and saute until translucent and fragrant. Remove from heat.
- Puree artichokes, cannellini beans, sauteed garlic and onion in food processor until smooth. (I had to use my blender, so I added some of the chicken broth at this point!).
- Add pureed mixture to saucepan, add remainder of chicken broth, thyme, salt and pepper and heat through.
- Check seasoning and adjust as necessary.
- Serve with croutons to garnish.

- Heat oil in a Dutch oven or soup pot over medium-high heat. Add the onion, carrots and celery. Reduce heat to medium-low and cook 8-10 minutes or until vegetables are softened, stirring frequently. Stir in garlic and cook 15 seconds or until fragrant.
- Add broth, tomatoes, Italian seasoning and red pepper flakes. Bring to a boil, reduce heat to medium-low and simmer uncovered 5-10 minutes or until vegetables are very tender.
- Stir in beans, artichokes hearts, baby greens and salt and black pepper, to taste. Simmer gently until heated through and greens are wilted.
- Add parsley if using and adjust seasoning with salt and black pepper, to taste. Serve topped with Parmesan cheese.
