3/4 cup sugar
2 tablespoons cornstarch
1/8 teaspoon salt
3 egg yolks, beaten
1 1/2 cups half-and-half
1 cup milk
1 tablespoon butter
1 1/2 teaspoons pure vanilla extract
2 medium bananas, peeled
2 teaspoons fresh lemon juice
1 (9 inch) pastry shells, baked
3/4 cup whipping cream
1/3 cup powdered sugar, sifted

Steps:

  • Combine the sugar, cornstarch and salt in a heavy saucepan; stir well.
  • Combine egg yolks, half and half, and milk and beat until blended.
  • Gradually stir into sugar mixture until smooth.
  • Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil 1 minute, stirring constantly.
  • Transfer to a glass bowl; stir in butter and vanilla. Cover with plastic wrap and cool to room temperature.
  • Slice one banana and toss with 1 teaspoons of lemon juice to prevent browning. Arrange the sliced banana in the bottom of pastry shell.
  • Pour cooled custard gently over banana, cover, and chill until firm.
  • Beat whipping cream and powdered sugar until stiff peaks form. Spread over pie filling.
  • Slice remaining banana and toss with remaining 1 teaspoons of lemon juice; drain juice if any, and arrange on top of pie.

Putting this recipe here for safe keeping. Found through Whistle Stop Cafe Cookbook. Looks a little different than the other recipes posted and sounds great. The cookbook says the filling is great in sandwiches as well as stuffed in celery. Also says taste good in a BLT.

3 cups cheddar cheese, shredded
1 cup mayonnaise
2 tablespoons onions, grated
2 -3 tablespoons Worcestershire sauce (optional)
1/4-1/2 teaspoon cayenne
2 (4 ounce) jars diced pimentos, drained

Steps:

  • Combine first 4 ingredients in a food processor; pulse until blended and cheese is processed as fine as you want it.
  • Add pimento; pulse just until blended.
  • Store in covered container in the refrigerator.

Coffee, pudding and a ripe banana give this luscious (and easy!) cream pie its extraordinary flavor.

1 large banana, sliced
1 chocolate cookie crumb crust (6 oz.)
2 cups cold milk
1 Tbsp. MAXWELL HOUSE Instant Coffee
2 pkg. (3.3 oz. each) JELL-O White Chocolate Flavor Instant Pudding
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
1/4 cup caramel ice cream topping

Steps:

  • Arrange banana slices on bottom of crust.
  • Mix milk and coffee granules in medium bowl until blended. Add pudding mixes; beat with whisk 1 min. (Mixture will be thick.) Stir in half of the COOL WHIP; spoon into crust.
  • Refrigerate 3 hours or until firm. Serve topped with remaining COOL WHIP and caramel topping.
