WHEAT GERM MUFFINS (WHOLE FOODS)
I collected a lot of whole foods recipes some years ago. This is one that my kids like. It is moist and has lots of vitamins.

Steps:
- Preheat oven to 350°.
- Mix all the wet ingredients plus wheat germ together in a large bowl.
- In another bowl mix the flour, salt, and baking powder.
- Add the flour mix to the wheat germ mix and stir very well.
- Fill your greased muffin tins 3/4 way full with batter.
- Bake for 10-12 minutes or until a toothpick inserted comes out clean.
WHEAT GERM MUFFINS
I developed a love for wheat germ muffins when my mother worked at Woodward's. We tried to recreate them. This recipe comes very close. Don't worry...it freezes very well.

- mix all liquids together and add to dry ingredients.
- Scoop into paper lined muffin tin.
- Bake at 350 degree oven for 25 minutes or until golden brown.

ALMOND WHEAT GERM MUFFINS
There's a couple wheat germ muffins here on 'Zaar, but none quite like this. I love wheat germ! Recipe is from the La Leache League International cookbook "Whole Foods for the Whole Family" and credit goes to Maureen Onstott of Jacksonville, Florida and Shannon Stieglitz of Norcross, Gerogia.

- Preheat oven to 425 degrees F.
- In large bowl, combine flour, wheat germ, baking powder, baking soda, salt, cinnamon and nutmeg.
- In medium bowl, beat egg replacer with brown sugar, oil, applesauce and soy milk.
- Mix with dry ingredients just until evenly moistened.
- Spoon into muffin tins.
- Mix 2 teaspoons of sugar and 1/4 teaspoon cinnamon and sprinkle on top of muffins.
- Bake for 15-17 minutes.

These are great for when you want a sweet treat. Not as sweet as cupcakes, yet sweeter than most "healthy" muffins (due to the bananas), these are perfect any time! The recipe is from Veganomicon.

- Preheat the oven to 375°F Lightly grease a 12-cup muffin tin with cooking spray (or use foil muffin liners--much easier).
- Pour the soy milk into a measuring cup and add the vinegar to it. Set it aside to curdle.
- Meanwhile, mash the bananas in a large mixing bowl. Add the soy milk mixture to the bowl along with the oil, sugar, and vanilla, and mix well.
- In a separate bowl, mix together the flour, wheat germ, cinnamon, baking powder, and salt. Add this to the banana mixture and use a wooden spoon to gently stir the ingredients, until all the dry ingredients are just moistened (do not over-stir!).
- Fill the muffin cups three-quarters full and bake for 22 minutes. Remove from the oven and, once cool enough to handle, transfer to a cooling rack to cool the rest of the way. You can also serve them warm.
