PEANUT BUTTER ENERGY BALLS
You'd never know these yummy little balls are actually healthy! With the main ingredients being wheat germ and peanut butter, they are full of protein! Kids love them! Add chocolate chips, raisins, or coconut to the mix. Rolling in coconut is also delicious!

- Mix wheat germ, peanut butter, honey, and milk powder together in a bowl; shape into bite-size balls. Arrange balls on a plate.
- Place in the freezer until solid, at least 1 hour.

Steps:
- Combine all ingredients except the 3/4 cup wheat germ in a bowl.
- With an electric mixer, beat on low speed until well mixed.
- Chill dough until easy to handle. Form into 1 inch balls.
- Roll dough balls in 3/4 cup wheat germ. Place on cookie sheet.
- Bake in preheated oven at 350 Fahrenheit for 12-15 minutes.

Steps:
- Mix the ground ham, ground pork, raisin bran, milk, egg, onion, salt, pepper and thyme together thoroughly.
- Shape into 8-10 meatballs, using about 1/4 cup mixture for each.
- Place balls in an 8x11x1 1/2-inch baking pan.
- Bake, uncovered, at 350°F for 30 minutes.
- In a small saucepan, combine brown sugar, syrup, vinegar and mustard; bring to boiling.
- Pour over ham balls and bake 20 minutes more, basting with sauce once or twice during baking.
- Makes 2-3 main course servings.
- If making them as an appetizer, shape meat mixture into 1 to 1 1/2-inch (bite sized) balls, and adjust baking times accordingly.

- Preheat oven to 425 degrees.
- In large bowl, beat together the egg, sugar, milk and butter.
- Mix into the milk mixture the flour, salt and baking powder.
- Batter may be lumpy.
- Fold in one cup wheat germ.

- Bake for 20 minutes.

- Preheat oven to 350 degrees. Stir together oats, flour, wheat germ, baking soda, baking powder, cinnamon, and salt in a large bowl; set aside. Put butter and sugars in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until pale and fluffy, about 5 minutes. Mix in eggs and vanilla. Reduce speed to low. Add oat mixture; mix until just combined. Mix in raisins.
- Using a 1 1/2-inch ice cream scoop, drop dough onto baking sheets lined with parchment paper, spacing 2 inches apart. Flatten slightly.
- Bake until golden and just set, about 14 minutes. Let cool on sheets on wire racks 5 minutes. Transfer cookies to racks using a spatula; let cool completely. Cookies can be stored in airtight containers at room temperature up to 3 days.
