1-1/3 cups almond meal/flour
1/3 cup ground golden flaxseeds
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons ground cinnamon
1/2 teaspoon seasalt
3/4 cup raisins
1/2 cup chopped walnuts
2 eggs
1 egg white
1/4 cup butter, coconut oil, or extra-light olive oil, melted and cooked
1/2 cup buttermilk

Steps:

  • Preheat oven to 350 F Grease an 8-1/2 X 4-1/2 loaf pan In a large bowl, sift together the almond meal/flour, flaxseeds, baking powder, baking soda, cinnamon, and salt. Add the raisins and walnuts and stir to combine. In a small bowl, combine the eggs, egg white, butter or oil, and buttermilk and beat lightly to break up the yolks. Pour the egg mixture into the flour mixture and mix thoroughly with a wooden spoon, just until moistened. Spoon the batter into the loaf pan and bake for 40 minutes, or until a wooden pick inserted in the center comes out clean and the bread is firm yet springy to the touch.

1/4 teaspoon ground cloves
1/2 teaspoon sea salt
1/4 cup pitted dates, chopped
1/2 cup chopped pecans
2 eggs
1 egg white
1/4 cup butter, coconut oil, or extra-light olive oil, melted and cooled
1/2 cup buttermilk

Steps:

  • Preheat oven to 350 F. Grease an 8 1/2" X 4 1/2 " loaf pan. In a large bowl, sift together the almond meal/flour, flaxseeds, baking powder, baking soda, cinnamon, nutmeg, cloves and salt. Add the dates and pecans and stir to combine. In a small bowl, combine the eggs, egg white, butter or oil, and buttermilk and beat lightly to break up the yolks. Pour the egg mixture into the flour mixture and mix thoroughly with a wooden spoon, just until moistened. I tried this bread recipe after viewing an interview on Dr. Oz featuring Wheat Belly author Dr. William Davis.It is fantastic! Has a very light, bread-y texture!

1 1/4 c almond flour/meal
1/4 + 2 Tbsp chickpea flour
1/4 c golden flax meal
1 1/2 tsp baking soda
1/4 tsp salt
5 eggs(separated)
1/4 butter(or coconut oil)
1 Tbsp milk
1/2 tsp Stevia(baking Stevia)
1 tsp cinnamon(optional)

Steps:

  • Preheat oven to 350F. Grease 8.5" x 4.5" loaf pan with either coconut oil or butter.
  • In a food processor, combine the almond flour, garbanzo bean flour, flaxseed, baking soda, cinnamon, and salt. Pulse until well blended. Add the egg yolks, butter, buttermilk and Stevia and pulse until just blended.
  • In a large bowl and using an electric mixer on high, beat the egg whites until soft peaks form. Pour into the flour mixture and pulse until the egg whites are evenly distributed, but do not run the machine at a constant speed. Spread into the pan and bake for 40 minutes, or until a wooden pick inserted in the center comes out clean.
  • Cool in the pan for 10 minutes, remove and cool completely on a rack.

1 tsp. aluminum free baking powder
1/2 tsp. sea salt
5 eggs, separated
1/4 cup butter or coconut oil, melted
1 tbsp. buttermilk or coconut milk(canned or carton variety)

Steps:

  • Preheat oven to 350 degrees. Grease an 8 1/2" X 4 1/2 " loaf pan. In a food processor, combine the baking mix, baking powder and salt. Pulse until well blended. Add the egg yolks, butter or coconut oil, and buttermilk or coconut milk and pulse until well blended. In a large bowl, with an electric mixer on high speed, beat the egg whites until soft peaks form. Pour into the flour mixture and pulse until egg whites are evenly distributed, but do not run the machine at a constant speed. Spread into the pan and bake for 40 minutes, or until wooden pick comes out clean.

From William Davis, MD's book, Wheat Belly Cookbook. He says, "This Basic Bread recipe is our starting place for many variations. As is, this bread can be toasted, can accompany dinner, or can be eaten simply spread with cream cheese, almond or peanut butter, or butter. If used for sandwiches, it may not hold up well with ingredients containing lots of moisture, so add ingredients like tomatoes just before consuming. Easy variations include adding more cinnamon, another 3 tablespoons xylitol, and ½ to ¾ cup raisins for cinnamon raisin bread; adding garlic powder to the flour and grated Parmesan or Romano cheese sprinkled on top for a garlic bread; or adding orange peel, additional cinnamon, ground nutmeg, and cloves for a spicy orange bread. A sweetener like xylitol is optional, though the xylitol does add a nice browning effect to the surface."   • Using a food processor, combine the almond flour, garbanzo bean flour, flaxseeds, baking soda, the optional cinnamon, and salt. Pulse until well blended. Add the egg yolks, butter, buttermilk, and xylitol or stevia and pulse just until blended.
  • Add the egg whites to a large mixing bowl and beat on high with an electric mixer until soft peaks form. Pour into the flour mixture and pulse until the egg whites are evenly distributed, avoiding running the machine at a constant speed. Spread into the pan and bake for 40 minutes, or until a wooden pick inserted in the center comes out clean.
  • Cool in the pan for 10 minutes. Transfer to rack and cool completely.
