This is a recipe Mom made usually at Christmas, adding a variety to her cookie tray. This is an unbaked cookies, that is cooked in a skillet and formed into a roll and cut into slices. Rice puffs is used in this recipe which is different from the other recipes posted here.

Number Of Ingredients 10

2 tablespoons butter
1 cup sugar
2 eggs
1/2 cup nuts, chopped
1 cup dates, finely chopped
1/8 teaspoon salt
1 teaspoon vanilla
3 cups puffed rice cereal (not rice krispes)
1/2 cup icing sugar, opt (approx)
3/4 cup coconut, toasted and fine (approx)

Steps:

  • Melt butter in a heavy frypan, add dates, sugar, salt and unbeaten eggs.
  • Cook over very low heat, stirring constantly until mixture becomes quite thick and starts to cling to the spoon.
  • Remove from heat, add vanilla, then cool slightly.
  • Add rice puffs and nuts, mixing well.
  • Sprinkle waxed paper lightly with icing sugar or toasted coconut. Shape mixture into two rolls about 2 inches in diameter.
  • Wrap in wax paper and chill.
  • To serve, cut int 1/2 inch slices.
  • Keep refrigerated.

I noticed a lack of blackberry recipes and found this one....years of baking experience tells me this is going to be a winner.

Number Of Ingredients 15

2 cups sugar
1 cup butter, softened
4 eggs
3 cups flour
1 teaspoon ground cloves
1 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1 cup buttermilk
1 1/2 cups fresh blackberries
1 cup butter, softened
1 lb powdered sugar
1 teaspoon vanilla
3 tablespoons coffee, cold

Steps:

  • Icing (recipe follows) using the last 4 ingredients
  • Cream sugar and butter until fluffy. Beat eggs and add to creamed mixture, beating well.
  • Combine flour, spices, baking soda and baking powder; whisk well. Add to creamed mixture alternately with buttermilk, in three additions each, beating until smooth. Fold in berries.
  • Pour batter into three greased and floured, 8-inch-round layer pans. Bake at 350°F for 30 minutes, or until the top springs back when gently touched. Remove from pans and cool on wire racks. Stack layers, filling and frosting with icing.
  • Icing-Combine ingredients and beat until smooth, adding coffee if necessary to achieve a spreading consistency.
