ANTIPASTO FOCACCIA SANDWICH WEDGES

Get a taste of Italy in this super-simple sandwich, perfect for a summer lunch gathering.

1/2 cup creamy Italian or regular Italian dressing
1 focaccia bread (8 to 10 inch), cut in half horizontally
4 leaves romaine or iceberg lettuce
1/2 cup roasted red bell peppers (from a jar), cut into 2x1/4-inch strips
1 package (6 oz) deli sliced provolone cheese
6 oz thinly sliced hard salami

Steps:

  • Spread 1/4 cup of the dressing on bottom half of focaccia bread. Layer lettuce, roasted peppers, cheese and salami over dressing.
  • Spread cut side of top half of bread with remaining 1/4 cup dressing; place dressing side down over salami. Cut sandwich into wedges to serve.

1 package (12 oz) cheese or garlic focaccia bread (8 to 10 inch)
3 cups torn romaine lettuce
9 oz cooked turkey, cut into bite-size strips (2 cups)
1/3 cup creamy Caesar dressing
1/4 cup grated Parmesan cheese
1/4 teaspoon coarse ground black pepper

Steps:

  • Cut focaccia bread in half horizontally; set aside. In large bowl, mix remaining ingredients.
  • Spoon turkey mixture evenly onto bottom half of bread. Cover with top half of bread. Cut into 6 wedges to serve.

Focaccia is one of my favorite bread recipes. It's one of the least labor-intensive since there isn't any kneading. The dough is very wet, which is perfect for a tender, yet chewy, bread with a very distinct salt bite. -James Schend, Taste of Home Deputy Editor

Number Of Ingredients 7

1 package (1/4 ounce) active dry yeast
1-1/4 cups warm water (110° to 115°), divided
1 tablespoon honey
3 cups (375 grams) all-purpose flour
1/4 cup plus 3 tablespoons olive oil, divided
3/4 teaspoon kosher salt
1 teaspoon flaky sea salt, optional

Steps:

  • In a large bowl, dissolve yeast in 1/2-cup warm water and honey; let stand for 5 minutes. Add flour, 1/4 cup oil, salt and remaining 3/4-cup water; mixing until smooth (dough will be wet). Scrape the sides of the bowl clean; cover and let rise in a warm place until doubled, about 45 minutes., Preheat oven to 425°. Brush a 13x9-in. baking pan with 1 tablespoon oil. Gently scrape dough directly into pan. With oiled hands, gently spread dough. If dough springs back, wait 10 minutes and stretch again. Make indentations in the dough with your fingers. Drizzle with remaining 2 tablespoons oil; let rise until doubled in size, 30-40 minutes. , If desired, sprinkle with sea salt. Bake until golden brown, 20-25 minutes. Cut into squares; serve warm.

Number Of Ingredients 12

1-1/4 teaspoons active dry yeast
1/2 cup warm water (110° to 115°)
1/2 teaspoon honey
3/4 to 1 cup all-purpose flour
1/4 cup whole wheat flour
1 tablespoon olive oil
2 teaspoons minced fresh sage
1/4 teaspoon salt
TOPPING:
1-1/2 teaspoons olive oil, divided
8 fresh sage leaves
1/2 cup shredded fontina cheese

Steps:

  • In a large bowl, dissolve yeast in warm water. Stir in honey; let stand for 5 minutes. Add 3/4 cup all- purpose flour, whole wheat flour, oil, minced sage and salt. Beat on medium speed for 3 minutes or until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn onto a lightly floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Cover and let rest for 5 minutes. Place 1 tablespoon olive oil in a 10-in. cast-iron or other ovenproof skillet; tilt pan to evenly coat. Add dough; shape to fit pan. Cover and let rise until doubled, about 30 minutes. , With fingertips, make several dimples over top of dough. For topping, brush dough with 1 teaspoon oil. Top with sage leaves; brush leaves with remaining oil. Sprinkle with cheese. Bake at 400° until golden brown, 10-15 minutes. Remove to a wire rack. Serve warm.,

Number Of Ingredients 8

1 (14-ounce) can artichoke hearts, drained, chopped
1 red bell pepper, chopped
1/2 medium cucumber, peeled, chopped
1/3 cup Italian salad dressing
2 focaccia rounds (10-12 inches in diameter)
1 pound sliced smoked turkey, divided
4 slices provolone cheese
1 cup fresh alfalfa sprouts

Steps:

  • Mix artichoke hearts, bell pepper, cucumber, and salad dressing. Heat focaccia as directed on package. Place 1 focaccia, flat side up, on cutting board. Layer with half the turkey, all the vegetable mixture, remaining turkey, cheese, and sprouts. Top with remaining focaccia, flat side down. Secure with toothpicks, if necessary. Cut into wedges.
