6 cups Baby Spinach, washed and torn into bite-size pieces
2 cups strawberries, washed, hulled and sliced
1 medium granny smith apple, diced
2 green onions, sliced
1 large jalapeno pepper, seeded and minced
3 tablespoons cilantro, chopped
citrus vinaigrette dressing
ascorbic acid (optional)

Steps:

  • In a medium bowl, mix the strawberries and apples; sprinkle lightly with asorbic acid if using.
  • Add the onions, jalapeno pepper and cilantro; mix well.
  • Allow the fruit to sit at room temperature for about 20-30 minutes.
  • Place the spinach in a large bowl, add the fruit and toss well to mix.
  • Pour on a citrus vinaigrette dressing to suit your taste and serve on chilled salad plates.

1 lb sweet onion, thinly sliced
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup reduced-sodium chicken broth
1 cup grape tomatoes
2 tablespoons red wine vinegar
1/2 head chicory lettuce, torn into 1-inch pieces
6 ounces Baby Spinach

Steps:

  • Melt the butter in a large nonstick skillet over medium-high heat. Add the onions, salt, and pepper; cook, covered, stirring occasionally, until softened, about 8 minutes. Cook, uncovered, stirring frequently, until golden brown and caramelized, about 8 minutes longer.
  • Remove the skillet from heat; stir in the broth, tomatoes, and vinegar.
  • To make the salad, place the chicory in a large bowl. Add the onion mixture and toss to coat. Add the spinach; toss and serve at once.

1 teaspoon Dijon mustard
1/2 teaspoon honey
1 pinch rosemary
pepper
1 (10 ounce) bag spinach, rinsed and torn
2 cups strawberries, hulled and halved
1/4 onion, thinly sliced
2/3 cup aged goat cheese, crumbled

Steps:

  • In a large salad bowl whisk together the dressing ingredients (vinegar - pepper).
  • Add the spinach, strawberries and onion. Toss.
  • Sprinkle with the cheese. Toss.
