APPLE-CRANBERRY BREAKFAST COOKIES

Toss a few of these fruity cookies in your bag for a breakfast on the run. Or, enjoy them as a snack with a hot cup of fruit-spiced tea.

0.75 cup(s) Dark brown sugar
2 large Raw egg(s)
0.5 cup(s) Unsweetened applesauce
1.5 cup(s) Whole-grain wheat flour
0.5 tsp(s) Table salt
0.5 tsp(s) Ground cinnamon
1 tsp(s) Baking soda
1.5 cup(s) Uncooked quick oats
0.5 cup(s) Dried apple(s) chopped
0.5 cup(s) Dried cranberries
0.5 tbsp(s) Chopped walnuts
1 spray(s) Butter flavour cooking spray

Steps:

  • Preheat oven to 350°F.
  • Combine margarine and sugar in the bowl of an electric mixer; beat until light and fluffy, about 1 minute. Add eggs and beat for 30 seconds; add applesauce and beat just to mix.
  • In another bowl, stir together flour, salt, cinnamon and baking soda; add to mixer and beat to form batter. Add oats, apples, cranberries and walnuts; combine by hand.
  • Line cookie sheet with parchment paper or coat with cooking spray. Drop batter by heaping tablespoons 1 inch apart. Bake until cookies are lightly browned and firm, about 13 to 15 minutes.
  • Remove from oven and let stand 10 minutes. Move to wire rack and cool completely. Yields 1 cookie per serving. (Note: Store leftovers in an airtight plastic bag or container in the freezer.)

3/4 cup reduced-fat butter, softened
1-1/4 cups packed brown sugar
1 egg
1/4 cup 2% milk
1-1/2 teaspoons vanilla extract
1 cup all-purpose flour
1-1/4 teaspoons ground cinnamon
1/2 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon ground nutmeg
3 cups quick-cooking oats
1-1/2 cups dried cranberries
1 cup chopped peeled tart apple
1/2 cup chopped walnuts

Steps:

  • In a large bowl, cream butter and brown sugar until light and fluffy. Beat in the egg, milk and vanilla. Combine the flour, cinnamon, salt, baking soda and nutmeg; gradually add to creamed mixture and mix well. Stir in the oats, cranberries, apple and walnuts., Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 375° for 12-15 minutes or until lightly browned. Cool for 2 minutes before removing to wire racks.

  • Preheat the oven to 350°F. Spray 2 large baking sheets with nonstick cooking spray. In a small bowl, combine the flour, baking soda, cinnamon and salt.
  • In a large bowl, with an electric mixer on high speed, beat the brown sugar, butter, granulated sugar, egg white and vanilla until fluffy and well blended, about 2 minutes. Beat in the applesauce. Add the dry ingredients and beat until just blended. Stir in the oats and cranberries.
  • Drop the batter by rounded teaspoons onto the baking sheets, 3 inches apart, making 24 cookies; with the back of a spoon, spread each to a 2' diameter. Bake until the edges are browned, 13-15 minutes. Let cool on the baking sheets 2 minutes, then remove with a spatula to wire racks to cool completely.
  • In a small bowl, combine the powdered sugar and milk. Drizzle over cooled cookies. Let stand until the glaze sets, about 1 hour. Store in an airtight container.
