TWO-INGREDIENT DOUGH MEXICAN SOFT TOSTADAS

1 cup(s) Plain fat free Greek yogurt
1 cup(s) White self-rising flour
1 cup(s) Fat free no sugar canned refried beans
0.5 cup(s) Canned white corn or yellow corn
0.5 cup(s) Grape tomatoes roughly chopped
0.25 cup(s) Feta cheese
1 tbsp(s) Cilantro fresh, chopped
4 splash(es) Hot sauce or to taste

Steps:

  • Preheat oven to 375ºF. Line a baking sheet with parchment paper.
  • Place yogurt and flour in a large bowl; stir well with a wooden spoon until just combined and then keep mixing dough in bowl with your hands until smooth (about 2 minutes of kneading). If dough is too sticky to knead, add more flour, 1 Tbsp at a time, until no longer sticky.
  • Place a large piece of parchment paper on a work surface and sprinkle with a little flour; place dough on paper. Use a knife to cut dough into 4 equal pieces. Use a rolling pin to roll each piece of dough into a 6-inch circle; slightly curl up edges to make a crust with a center. Place on prepared baking sheet; bake until dough is cooked through, 18-22 minutes.
  • Remove from oven and immediately fill each with ¼ c beans; top each with 2 Tbsp corn, 2 Tbsp tomato and 1 Tbsp feta. Serve sprinkled with cilantro; pass hot sauce on the side.

8 corn tortillas
16 ounces fat-free refried beans
2 cups chopped lettuce
1 diced tomato
8 tablespoons fat free sour cream
4 roasted green chilies or 4 your favorite salsa
1/4 cup diced onion

Steps:

  • Preheat oven to 350.
  • Bake corn tortillas for approximately 3 to 5 minutes per side until they are slightly brown on each side. You want the tortillas to be crispy. Watch carefully so they don't burn.
  • Heat beans and spread 1/4 cup on each tortilla.
  • Spread 1 tablespoon of fat free sour cream over the beans.
  • Garnish with lettuce, tomatoes, green chile or salsa, and onions.

1 tablespoon light butter
1/4 cup scallion, minced
2 1/2 cups frozen corn kernels (no need to thaw frozen corn) or 2 1/2 cups fresh corn (no need to thaw frozen corn)
1 tablespoon all-purpose flour
1 cup skim milk
1/8 teaspoon table salt (or more)
1/8 teaspoon black pepper, freshly ground (to taste)

Steps:

  • Melt butter in a large skillet over medium heat. Add scallions and sauté until soft, about 3 minutes. Add corn and sauté 1 minute to heat through (or slightly longer if using frozen corn). Add flour and stir to coat corn and scallions. Add milk and bring to a simmer.
  • Reduce heat to low and cook, uncovered, until mixture thickens, about 8 to 10 minutes. Season to taste with salt and pepper. Yields about 1/2 cup per serving.
