MEAT LOAF MUFFINS

- Preheat oven to 375°. Mix the first 5 ingredients. Add beef; mix lightly but thoroughly. Press about 1/3 cupful into each of 12 ungreased muffin cups., Bake 15 minutes. Brush tops with 3 tablespoons ketchup; bake until a thermometer reads 160°, 5-7 minutes. If desired, serve with additional ketchup. , Freeze option: Bake meat loaves without ketchup; cover and freeze on a waxed paper-lined baking sheet until firm. Transfer meat loaves to an airtight freezer container; return to freezer. To use, partially thaw in refrigerator overnight. Place meat loaves on a greased shallow baking pan. Spread with ketchup. Bake in a preheated 350° oven until heated through.

- Reserve 3 Tbsp. cheese. Mix remaining cheese with all remaining ingredients just until blended.
- Press into 12 muffin cups sprayed with cooking spray.

My family loves meatloaf, but it is difficult to do on a weeknight because of the time involved. Found this recipe on the web and keeping it here for future reference.

Steps:
- In small bowl, stir ketchup and brown sugar until mixed; reserve 1/4 cup for topping. In large bowl, stir remaining ingredients and remaining ketchup mixture until well mixed.
- Spray 13x9-inch pan with cooking spray. Place meat mixture in pan; pat into 12x4-inch rectangle. Cut lengthwise down center and then crosswise into sixths to form 12 loaves. Separate loaves, using spatula, so no edges are touching. Brush loaves with reserved 1/4 cup ketchup mixture.
- Bake 18 to 20 minutes at 450 degrees or until loaves are no longer pink in center.

- In a large bowl, add ground beef, egg, sour cream, bread crumbs, Worcestershire sauce, ketchup, salt, pepper, parsley, garlic powder, Montreal seasoning, dried onion flakes and Parmesan. Using your hands or a wooden spoon, mix ingredients together being careful not to over mix.
- Using a 1/3 cup measuring cup, scoop out meatloaf mixture and place into one cup of muffin pan. Continue fulling cups until all meatloaf mixture is used. Spoon 1 teaspoon of ketchup on top of each meatloaf. Place in oven and cook for approximately 25 minutes until meatloaf muffins are brown and pulling away from side of pan.
- Remove from oven and serve immediately. ***Meatloaves can be frozen. Cool and place in a freezer safe container or zip top back and freeze for up to 3 months. To serve, thaw and reheat meatloaf muffins until warmed through.
