Beet Salad with Goat Cheese, Watercress and Shallot Thyme Dressing image

Beets are so humble. They may look funny raw but they're really diamonds in the rough. Their incredible color and flavor never cease to astound me. I dress the beets up with complementary ingredients that serve to make their flavor shine without overpowering. Beets are special and should be the only star on the stage.

8 medium or 12 small beets
1/3 cup olive oil
1 large shallot, finely chopped
Juice of 1 lemon
Leaves from about 10 sprigs thyme
3 good pinches salt
10 grinds fresh black pepper
1 large bunch watercress
4 tablespoons cold goat cheese

Steps:

  • Cook beets in water to cover until tender, about 40 to 45 minutes. Drain the beets and set aside to cool.
  • For the dressing, whisk together olive oil, shallot, half the lemon juice, the thyme, salt and pepper. Set aside.
  • While the beets are cooling, wash the watercress and trim the thicker stems from the leaves. Spread the trimmed watercress out over some paper towels to dry.
  • When the beets are cool enough to handle, use a paring knife to peel off the beets skins, they should come off very easily.
  • Cut the beets into quarters lengthwise and then those pieces in half crosswise.
  • Place the beets and watercress in separate bowls. Divide the dressing between the 2 bowls. Toss the watercress and beets until evenly coated with the dressing.
  • Spread the watercress out on a serving platter to make a bed for the beets. Crumble the cold cheese into the beets and toss gently. Spread the beets over the bed of watercress and sprinkle with remaining lemon juice. Serve immediately.

16 whole green beans, washed,frenched,cooked for 1 minute and drained well (frenched=thinly sliced on the diagonal)
1 bunch watercress, washed,dried and stems removed
1/2 head lettuce, washed,dried and torn into small pieces
1 head radicchio, washed,dried and torn into small pieces
2 ounces of soft goat cheese, crumbled (or use Feta)
pepper
2 tablespoons mixed fresh herbs (Your choice E.G.oregano, thyme, chives, marjoram)
2 cloves garlic
1 egg yolk
1 tablespoon red wine vinegar
2 teaspoons Dijon mustard
salt
3/4 cup lite olive oil (or other salad oil)

Steps:

  • Put the herbs in food processor and chop.
  • With the processor running drop in the garlic and mince.
  • Add egg yolk,vinegar, mustard and salt process for 1/2 minute.
  • With the machine rtunning slowly add the oil through the feed tube.
  • Process for a few seconds after the oil has been added.
  • Just before serving combine beans, watercress, lettuce, radicchio& cheese in a chilled bowl.
  • Toss with dressing (use as much or as little as you like).
  • Season with Pepper.

4 medium beets, scrubbed and trimmed, leaving about 1 inch of stems attached
For vinaigrette
1 1/4 teaspoons Dijon mustard
2 tablespoons white-wine vinegar
1/4 teaspoon dried tarragon, crumbled
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup plus 2 tablespoons extra-virgin olive oil
For herbed goat cheese
3/4 cup fresh bread crumbs
1/2 teaspoon dried tarragon, crumbled
3/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
8 ounces Montrachet or other soft goat cheese, cut into eight 1/2-inch rounds and chilled, covered
2 bunches watercress, coarse stems discarded, rinsed and spun dry (about 8 cups)

Steps:

  • Preheat oven to 400°F.
  • Wrap beets tightly in foil and roast in middle of oven 1 to 1 1/2 hours, or until tender. Unwrap beets carefully and cool until they can be handled. Discard stems and peel beets. Beets may be prepared up to this point 1 day ahead and chilled, covered. Cut each beet into 8 wedges and cover.
  • Make vinaigrette:
  • In a blender blend together mustard, vinegar, tarragon, salt, and pepper. With motor running add oil in a stream and blend until emulsified. Vinaigrette may be made 1 day ahead and chilled, covered.
  • Make herbed goat cheese:
  • In a bowl stir together bread crumbs, tarragon, salt, and pepper. Cut each cheese round in half crosswise. Coat each piece of cheese evenly with crumb mixture, pressing gently, and transfer to a baking sheet. Goat cheese may be prepared up to this point 1 day ahead and chilled, covered loosely. Let cheese come to room temperature before proceeding.
  • Preheat broiler.
  • Broil goat cheese about 2 inches from heat until crumbs are lightly browned, about 2 minutes.
  • In a bowl toss watercress and onion with half of vinaigrette. Arrange watercress mixture, beets, and goat cheese on 8 salad plates and drizzle remaining vinaigrette over beets.

1/4 cup red wine vinegar
1 1/2 tablespoons Dijon mustard
1 tablespoon minced fresh parsley
1/2 cup walnut oil or olive oil
4 bunches watercress, trimmed
1 1/2 cups walnuts, toasted, coarsely chopped (about 6 ounces)
1 1/2 cups cherry tomatoes, halved

Steps:

  • Cook beans in large pot of boiling salted water until crisp-tender, about 4 minutes. Drain. Transfer beans to large bowl of ice water to cool. Drain; pat dry. Whisk vinegar, mustard and parsley in small bowl to blend. Gradually whisk in oil. Season with salt and pepper. (Can be made 1 day ahead. Cover beans and vinaigrette separately; chill. Rewhisk before using.) Combine beans, watercress, walnuts and tomatoes in large bowl. Toss with enough vinaigrette to coat. Season to taste with salt and pepper.

1/4 cup log-style goat cheese, plus
2 tablespoons log-style goat cheese, divided
1/4 cup milk
2 tablespoons hazelnut oil
1 1/2 tablespoons fresh lemon juice
salt & freshly ground black pepper
1 ripe pear
1 bunch fresh watercress, about 4 cups

Steps:

  • Puree 1/4 cup goat cheese, milk, hazelnut oil and lemon juice in a blender until smooth, about 1 minute.
  • Season with salt and pepper; set aside.
  • Cut pear in half; core.
  • Thinly slice lengthwise.
  • Arrange slices fanned out on 4 plates.
  • Trim lower third of watercress stems.
  • Toss watercress with 1/4 cup of the dressing to lightly coat.
  • Mound next to pears.
  • Drizzle remaining dressing over salads.
  • Crumble remaining 2 tablespoons cheese over tops.
  • Grind pepper to taste over salad.

Snappy cooked green beans make for a gorgeous salad with radicchio and canned artichokes. Beyond the vegetables, all you need for this refreshing zinger of a side dish is a generous glug of olive oil, a heavy hand with salt and pepper, and an electric spritz of lemon. A sprinkle of dried oregano on top lends bottled Italian dressing vibes, but with a homemade taste. This is an excellent addition to Thanksgiving, as it lets you feed two birds with one scone: You get a green bean moment and a salad moment all at once. To prepare this in advance, assemble everything through Step 2, keep it covered in the refrigerator, then on Thanksgiving Day, proceed with the dressing.

8 ounces green beans
Salt
1 head radicchio
1 (14-ounce) can artichoke hearts
1/4 cup extra-virgin olive oil
Freshly ground black pepper
1 lemon, halved
Pinch of dried oregano

Steps:

  • Snap the tough stem ends off the green beans, then cut into 2-inch pieces or in halves. Meanwhile, bring a medium saucepan of water to a boil and season generously with salt. Add the green beans and boil until bright green, 1 to 2 minutes. Drain in a colander, rinse under cold tap water to stop the cooking and set aside.
  • While the beans continue draining, slice the radicchio in half and cut out the core (the hard white part in the bottom-center). Cut each radicchio half into 2-inch pieces, separate the leaves and arrange on a large platter. Scatter the green beans over the radicchio. Drain the artichoke hearts very well, cut each in half lengthwise and arrange cut sides up over the green beans. (If making ahead, you can stop here, cover the platter and refrigerate for up to 24 hours, then proceed with Step 3 the following day.)
  • Drizzle the salad with the olive oil and season generously with salt and pepper. Squeeze 1 lemon half over the salad and sprinkle with the oregano. Taste for seasoning, adding more salt, pepper or lemon as desired. Serve just like this or toss and serve.

Radicchio, Goat Cheese, and Raisin Salad image

This quick salad delivers a lot of flavor. The radicchio has a touch of bitterness, but the raisins bring in the sweet element, and the goat cheese the creamy complexity. It is a great appetizer, or can be a main course.

Number Of Ingredients 6

3/4 cup golden raisins
3 tablespoons balsamic vinegar
2 pounds radicchio, cut into 1-inch shreds
3 tablespoons extra-virgin olive oil
1 teaspoon kosher salt
1 pound fresh goat cheese (or Gorgonzola-dolce, or sweet, is best)

Steps:

  • Put the raisins in a small bowl, and pour the vinegar over them. Let soak for 15 minutes.
  • Pour the raisins and vinegar over the shredded radicchio in a large serving bowl. Drizzle with the olive oil, and season with the salt. Toss well to coat the salad with the dressing. Crumble the goat cheese into chunks over the salad, and gently toss again to distribute the cheese, taking care to keep it in chunks.
