WARM THREE-BEAN SALAD
This classic American picnic salad gets a modern makeover with frozen green beans, white cannellini beans, edamame beans and a grainy mustard vinaigrette. In addition to being delicious, beans are also an excellent source of fiber and protein.

- Cook a 12-ounce bag cut green beans as the label directs. Whisk 3 tablespoons olive oil, 2 tablespoons lemon juice, 1 tablespoon grainy mustard, 1 minced garlic clove and 1/2 teaspoon each salt and pepper in a bowl. Cook 1 chopped red onion in olive oil in a skillet over medium-high heat, 2 minutes. Add one 15-ounce can drained cannellini beans, one 10-ounce bag thawed frozen edamame and the green beans; heat through. Toss with the dressing, sprinkle with parsley.
WARM PASTA-BEAN SALAD

- Cook 8 ounces small pasta as the label directs, adding 1 1/2 cups thawed frozen fava or lima beans in the last minute of cooking. Drain and toss with 1 cup chopped parsley, 1 bunch sliced scallions, 1/4 cup olive oil, 3/4 cup grated parmesan, 1/2 teaspoon grated lemon zest, and salt and pepper.
PORK CHOPS WITH WARM THREE-BEAN SALAD

- Preheat the oven to 350 degrees F. Bring a large pot of salted water to a boil. Season the pork chops with salt and pepper. Combine the fennel and coriander in a small bowl and rub all over the pork.
- Heat 2 tablespoons olive oil in a large skillet over high heat. Add the pork chops and cook until browned, about 1 minute per side. Transfer to a baking sheet and roast in the oven until cooked through, about 5 minutes. Reserve the skillet.
- Meanwhile, add the green beans and wax beans to the boiling water and cook until just crisp-tender, about 5 minutes. Reserve 1/4 cup cooking water, then drain.
- Add the bacon to the reserved skillet along with 1 tablespoon olive oil; cook over medium heat until crisp, 2 to 3 minutes. Add the shallots and cook, stirring, until tender, about 3 minutes. Add the green and wax beans, butter beans and reserved cooking water. Bring to a simmer and cook until the butter beans are warmed through and the mixture is saucy, 1 to 2 minutes. Add the tarragon and vinegar and season with salt and pepper. Drizzle with the remaining 1 tablespoon olive oil and toss. Serve with the pork chops.

- Drain and rinse the three cans of beans and add them to a large mixing bowl.
- In a separate, medium, microwave-safe bowl, combine the olive oil, sugar, and vinegar. Mix well and place in the microwave for 30-45 seconds or until the sugar fully dissolves when stirred.
- Add the remaining ingredients along with the sugar mixture to the bowl with the beans and gently fold it all together until it's thoroughly combined.
- Serve immediately or for more flavor, chill for 24 hours. Enjoy!
