Steps:
- Process the fish, onion, cilantro, curry paste, fish sauce and juice in food processor until the mixture forms a smooth paste.
- Roll level tablespoons of mixture into balls.
- You will need to cook the fish balls in batches.
- Arrange a single layer of balls in a baking paper lined bamboo steamer.
- Place steamer over a wok or large pan of boiling water.
- Cook, covered, for about 5 minutes or until balls are just cooked through.
- Repeat until all of the balls are cooked.
- Make the dressing by combining all of the ingredients in a jar and shake well, until combined.
- Arrange the salad leaves on 1 large platter or or individual serving plates.
- Top the leaves with the red pepper and snow peas.
- Place the fish balls on top, drizzle with dressing and serve with lime wedges.

- Preheat the grill to high. Put the chicken on a baking tray and grill for 10-12 minutes without turning, until cooked through.
- Meanwhile, cook the noodles according to instructions. Drain and run cold water through to stop them sticking together.
- Mix the vegetables in a bowl. Thinly slice the chicken and add to the bowl, along with the noodles and coriander leaves.
- Mix the dressing ingredients together with 2 tablespoons water, pour over the salad and toss well. Serve straight away.

- Heat a heavy-bottom skillet over medium heat; add olive oil and swirl around in skillet. Cook and stir onion in the hot oil until softened, 3 to 4 minutes. Add garlic, ginger, and red pepper flakes; cook and stir until garlic and ginger are slightly browned and fragrant, about 1 minute.
- Stir carrots and celery into onion mixture; cook and stir for 1 minute. Add kale and cilantro; cook and stir until kale is slightly wilted, about 45 seconds. Stir lime juice, fish sauce, and lime zest into kale mixture until kale is evenly coated in lime juice.
- Serve kale salad topped with cucumber, peanuts, and mint.

WARM THAI SQUID AND SHRIMP SALAD

- Preheat the oven to 400 degrees. Fold four 18-inch lengths of parchment paper in half, cut into a half-heart shape, and open. In a medium bowl, combine the onion, cucumber, tomatoes, cilantro, chile, squid, and shrimp. Divide the seafood mixture among one half of each parchment heart near the crease. Fold the other half of parchment over ingredients. Make small overlapping folds to seal edges, starting at the top of the heart. Two inches from the end, twist the parchment twice, gently but firmly, to seal.
- Place the packet on a rimmed baking sheet or in a heavy skillet (preferably cast iron), and bake 15 minutes or until fully puffed. Remove from the oven, and let sit while preparing the dressing. Whisk together the sesame oil, rice-wine vinegar, salt, and pepper in a small bowl. Open the packet carefully, and transfer the mixture to a serving plate, discarding the cooking juice. Drizzle with the dressing, and serve hot or at room temperature.
