6 red potatoes
1/3 cup olive oil
2 tablespoons vinegar
1 tablespoon Dijon mustard
1/2 cup red onion, sliced
1/4 lb brie cheese or 1/4 lb camembert cheese, cubed
salt and pepper
6 radishes, chopped
fresh parsley, for garnish

Steps:

  • Cut potatoes into 1 cm cubes, spread in an 8 cup casserole dish.
  • Cover and microwave for 8-10 min on High.
  • Whisk together oil, vinegar, and mustard; stir into potatoes.
  • Sprinkle with onion and brie, cover & microwave for 30-40 seconds on High.
  • Stir gently.
  • Divide among 4 lettuce lined plates and garnish with radish slices and parsley if desired.

1 pound new potatoes, scrubbed and cut into 1/4" slices
4 tablespoons white wine vinegar
2 tablespoons Dijon mustard
salt & pepper
1/2 cup olive oil
2 scallions, thinly sliced
3 tablespoons chopped fresh parsley

Steps:

  • In a large pot of boiling water, cook potatoes until they are tender. In a large bowl whisk together the vinegar and the mustard. Season with salt & pepper. Whisk in the olive oil a third at a time until it binds together. Add the warm, drained potatoes and toss to coat. Let the potatoes sit for 10 minutes or longer to absorb the flavor of the dressing. Add the scallions and parsley and toss to coat. Season well with salt & pepper.

3 medium Yukon Gold potatoes (about 1-1/2 pounds), peeled and cubed
6 hard-boiled large eggs, chopped
2 celery ribs, chopped
1 small onion, chopped
1/2 cup chopped green pepper
1/2 cup mayonnaise
2 tablespoons Dijon mustard
3/4 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon hot pepper sauce

Steps:

  • Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, 10-15 minutes or until tender. Drain potatoes and place in a large bowl. Add the eggs, celery, onion and green pepper., In a small bowl, mix the remaining ingredients; add to potato mixture. Toss gently to coat. Serve warm. Cover and refrigerate leftovers.

This French-style main meal salad with roasted new potatoes makes a fabulous lunch

500g salad potato , halved
2 tbsp olive oil
2 red onions , each sliced into 6 wedges
4 rashers smoked back bacon , trimmed and cut into large pieces
140g mushroom , sliced
1 tbsp wholegrain mustard
1 tbsp red wine vinegar
100g bag mixed watercress and spinach salad
85g creamy blue cheese (we used St Agur)

Steps:

  • Heat oven to 220C/fan 200C/gas 7. Place the potatoes in a roasting tin, then rub with 1 tbsp oil and a sprinkling of salt. Roast for 20 mins, then add the onion wedges to the tin, giving everything a good shake. Roast for 20 mins more until the potatoes have turned a deep golden brown and the onions have caramelised and softened. Leave to cool slightly.
  • Heat a non-stick frying pan. Dry-fry the bacon until crisp. Add the sliced mushrooms, then fry for 5 mins more until they have softened.
  • Meanwhile, make the dressing. Whisk the mustard, vinegar and remaining 1 tbsp oil with a splash of water. Place potatoes, onions, bacon and mushrooms in a large bowl with the salad leaves, pour over the dressing, then toss well. Divide between 4 plates, then crumble over the blue cheese.

I have served this many times at dinners where a seperate salad course is appropriate.It is simple, quite sophisticated and the taste combinations are interesting.

2/3 cup olive oil (or flavored oil of your choice)
1/3 cup fresh lemon juice
1 bag mixed salad green, from grocer (also delicious with plain red leaf lettuce)
8 pieces triple cream brie, about 4 inches long and 1 inch wide at base (St.Andre is a very good brand)
toasted pecans (to garnish)

Steps:

  • Wisk together in a small bowl the oil of your choice,lemon juice and a little salt and pepper.
  • Let stand at least an hour at room temp.
  • If you use plain olive oil you may want to flavor to taste with a little garlic powder in the oil.
  • Preheat the oven to 350*.
  • Toss the dressing with the greens and divide among salad plates.
  • Arrange brie on the baking sheet and bake until soft but not runny.
  • You really need to stand there and keep an eye on it.
  • (about one minute) Top each salad with the wedge of cheese and toasted pecans.
  • A nice variation is a"fan" of thinly sliced pear on the plate.

2 teaspoons extra-virgin olive oil
2 tablespoons red-wine vinegar
1 teaspoon Dijon mustard
1 hard-cooked large egg
1/2 small red onion, thinly sliced
Coarse salt and ground pepper

Steps:

  • Set a steamer basket in a saucepan with 1 inch simmering water. Add potatoes, cover, and steam until potatoes are tender, 15 to 18 minutes. Transfer potatoes to a medium bowl and add olive oil, vinegar, and mustard; toss to combine. Using the large holes on a box grater, grate egg into potatoes. Add onion, season with salt and pepper, and toss to combine.

  • Scrub potatoes then, place into a medium-sized pot. Cover with water and bring to a boil. Reduce to low and cook for 12-15 minutes. Drain and cool.
  • Heat a medium-sized skillet on medium-high heat. Once the skillet is hot, add oil and move about until it shimmers. Add chopped shallot and cook until it softens. Add mustard, vinegar and lemon juice, stir and cook for about two minutes. Add sour cream, stir and cook until bubbling. Remove from heat.
  • Cut potatoes in half and place into a large bowl. Add celery, scallion and radish. Pour dressing over vegetables, stir and add salt and pepper to taste. Serve warm.
