Number Of Ingredients 6

2 teaspoons active dry yeast, from 1 package
1 1/4 cups warm water
1 tablespoon agave syrup
1 1/2 teaspoons salt
3 cups all-purpose flour, plus more for dusting
2 tablespoons grapeseed oil

Steps:

  • Mix the yeast and the warm water in a large bowl and let sit for 10 minutes. Stir in the agave syrup, salt and flour. Mix until well combined.
  • Add in the oil and mix by hand or in a food processor for 6 to 8 minutes. Cover the bowl and let the dough rise for 90 minutes in a warm, dry place. Dough should double in size.
  • Preheat the oven to 425 degrees F and if possible, use a baking stone.
  • Punch the dough down and divide it into 8 pieces. Roll them into balls, then cover and let rest for 20 minutes to let the dough relax.
  • Dust a clean work surface with flour, then roll each ball out to 1/8-inch thick and approximately 6 inches in diameter. Cook on baking stone until puffed and starting to brown about 6 minutes each side. Spritz the oven with water, during baking, to create nice crisp pitas.

4 medium-size whole wheat pitas
4 medium-size white pitas
4 tablespoons unsalted butter
6 cloves garlic, minced
3 tablespoons minced fresh parsley
1/4 cup grated Parmesan
Kosher salt and freshly cracked black pepper

Steps:

  • Preheat the oven to 350 degrees F. Cut the pitas into 6 wedges.
  • In a medium saucepan, add the butter and garlic. Set over medium heat and warm through until the butter melts and the garlic becomes fragrant, 5 to 6 minutes. Add the parsley and mix well.
  • Place the pita wedges in a large bowl and pour the garlic butter over the top. Toss well to combine and coat everything evenly. Spread the pita wedges out evenly on a sheet tray and dust with the grated Parmesan. Bake in the oven until golden and crispy, 12 to 15 minutes. Remove from the oven and taste. Adjust seasonings with salt and pepper, if necessary. Serve warm.

3 tablespoons extra-virgin olive oil
2 garlic cloves, smashed
2 tablespoons finely chopped oregano
6 (6-to 8-inch) pocketless pita bread rounds
Kosher salt to taste

Steps:

  • Heat oil in a small heavy skillet over medium heat until it shimmers. Cook garlic, turning once, until pale golden, about 1 minute. Discard garlic and remove skillet from heat, then stir in oregano.
  • Prepare grill for direct-heat cooking over medium-hot charcoal (medium-high heat for gas); see Grilling Procedure .
  • Oil grill rack. Grill pitas, 3 at a time, covered only if using a gas grill, turning once, until grill marks appear, about 2 minutes total per batch. Transfer to a cutting board and brush both sides with garlic-oregano oil. Cut pitas into wedges. Sprinkle with kosher salt. Serve warm.

1 (10 ounce) package pita bread, cut in half
3 tablespoons butter
1 teaspoon crushed garlic
1 teaspoon dried Italian-style seasoning
2 tablespoons grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Open pita bread halves and roughly cut into approximately 2 inch pieces. Arrange on a medium baking sheet.
  • In a small saucepan over medium heat, melt butter and mix in garlic and dried Italian-style seasoning. Pour the mixture over pita bread pieces.
  • Sprinkle bread with Parmesan cheese, adjusting the amount as desired. Bake in the preheated oven 10 minutes, or until lightly browned.
