You don't need a frying pan for this taco meat! A food processor works just fine! Its rich, full of flavor, and super fast to whip up.

Number Of Ingredients 5

1 cup raw walnuts
1 tablespoon soy sauce
1 teaspoon garlic powder
1 teaspoon cumin
1 teaspoon paprika

Steps:

  • Put ingredients in a food processor.
  • Pulse until course and crumbly. Don't pulse for too long, or else you'll end up with butter!

A meal for 4 comes together in less than 15 minutes with this easy meatless taco recipe. The taco "meat" is made with California walnuts, diced onion, and just 6 other ingredients that you can almost certainly find in your pantry. It's the perfect weeknight supper for a hungry family. Top the plant-forward tacos with classic taco toppings for a no-fuss taco dinner or serve single tacos as an unexpected game day treat.

1 1/2 cups raw walnuts
2 tablespoons olive oil
½ medium onion, diced
1 1/2 tablespoons low-sodium soy sauce or coconut aminos
1 tablespoon chili powder
2 teaspoon ground cumin
1/4 teaspoon dried oregano
1/4 teaspoon garlic powder
8 hard taco shells
2 cups shredded lettuce
1 cup chopped tomatoes
1/2 cup shredded cheddar cheese
1/2 cup mild salsa
1/2 cup low-fat sour cream

Steps:

  • Add walnuts to a food processor and pulse until walnuts are evenly crumbled, resembling ground meat.
  • Heat olive oil over medium-low heat in a medium skillet. Add onions and cook for 5 minutes, add walnuts, soy sauce, chili powder, cumin, salt, oregano, and garlic powder. Stir well to evenly coat and moisten walnuts. Cook for 2-3 minutes.
  • Spoon walnut taco mixture into shells. Top with lettuce, tomato, cheese, salsa and sour cream.

This is a recipe I learned at a vegetarian cooking class. It was presented to us as what a person who is on a Raw diet would eat. It's very good and not what I had expected. Recipe courtesy of the instructor Rob McLean. Serving size is dependant on how much filling you use.

2 cups walnuts
soy sauce, to taste
ground cumin, to taste
2 tomatoes, chopped
2 tablespoons cilantro, chopped
1 green onion, chopped
1 garlic clove, finely minced
1 lemon, juice of
pepper
10 -12 leaves collard greens, cleaned and trimmed of large stalks

Steps:

  • In food processor, place walnuts and blend until finely chopped, but not into powder.
  • Add in the seasonings to your taste.
  • In a bowl, combine all other ingredients except greens.
  • Place a collard leaf on a surface and crack the ribs remaining to flatten.
  • Place an amount of the walnut mixture on top along with desired amount of tomato mixture.
  • Roll up and enjoy.
