The walnut flavor really comes through in this nicely textured loaf from Ginny Rice of Oshkosh, Wisconsin. "It's delicious, moist and excellent for toasting," she adds.

1 cup water (70° to 80°)
4-1/2 teaspoons butter, softened
1 egg
2 tablespoons nonfat dry milk powder
2 tablespoons sugar
1 teaspoon salt
3 cups bread flour
3/4 cup chopped walnuts, toasted
1-1/2 teaspoons active dry yeast

Steps:

  • In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).

1 cake yeast or 1 envelope active dry yeast
2 tablespoons sugar
1 cup warm water
2 tablespoons extra-virgin olive oil, plus oil for greasing
1/2 tablespoon salt
1/2 cup chopped fresh herbs (basil, rosemary, oregano, thyme or parsley)
1 teaspoon minced garlic
1 tablespoon minced shallots
3 1/2 to 4 cups bread flour
1/3 cup chopped walnuts
1/3 cup pitted, chopped black olives like Gaeta or nicoise

Steps:

  • Combine the yeast, sugar and water in a bowl, and let stand for 5 minutes. When the mixture is foamy, stir in the remaining ingredients. Knead the dough for 8 to 10 minutes in a mixer with a dough hook or by hand until it is smooth, shiny and elastic. (The dough can also be made in a food processor.) Place the dough in an oiled bowl, cover with plastic wrap, and let rise in a warm place for 1 hour, or until doubled in bulk.
  • Punch the dough down, roll it into 2 oblongs (about 8 inches long, 4 inches wide and 3 inches high), and place in oiled loaf pans. Let rise for 30 minutes or until doubled in bulk.
  • Preheat the oven to 375 degrees.
  • Bake for 25 to 35 minutes, or until the crust is crisp and the loaf sounds hollow when tapped. Let cool before slicing.

This family favorite comes from a collection of Amish recipes. I gave the recipe to several friends, and everyone loves it. Loaded with cranberries, nuts and cinnamon flavor, it's perfect for fall and winter.

1 cup water (70° to 80°)
1/4 cup packed brown sugar
4-1/2 teaspoons butter, softened
1-1/2 teaspoons salt
1/2 teaspoon ground cinnamon
3 cups bread flour
2-1/4 teaspoons active dry yeast
1/2 cup chopped walnuts
1/2 cup dried cranberries

Steps:

  • In bread machine pan, place the first seven ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed)., Just before the final kneading (your machine may audibly signal this), add walnuts and cranberries.

One of my Nanny's favorite holiday breads. This needs to stand for 20 minutes before baking, so I do not preheat my oven until I have put the dough in the pan, that way the oven is ready right as the dough is ready to go in. My Grandpa loaves this toasted and spread with cream cheese.

2 1/2 cups flour, sifted
1/3 cup sugar
4 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 egg, beaten
1 cup stuffed green olive, sliced
1 cup walnuts, coarsely chopped
2 tablespoons chopped pimiento

Steps:

  • Sift together in a large mixing bowl the flour, sugar, baking powder, and salt.
  • In a small bowl, mix the milk and egg. Add this to the dry ingredients and stir until just moistened.
  • Stir in olives, walnuts, and pimento. Mix thoroughly.
  • Pour into greased and floured 9x5x3 loaf pan.
  • Preheat oven to 350.
  • Let the bread stand in pan for 20 minutes before baking.
  • Bake for 1 hour.
  • Let stand for 5 minutes before removing from pan.

2 cups all-purpose flour
1 cup sugar
1-1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 large egg, room temperature
1/2 cup orange juice
Grated zest of 1 orange
2 tablespoons butter, melted
2 tablespoons hot water
1 cup fresh or frozen cranberries
1 cup coarsely chopped walnuts

Steps:

  • Preheat oven to 325°. In a large bowl, combine the dry ingredients. In another bowl, beat egg. Add orange juice, zest, butter and hot water. Add to flour mixture, stirring just until moistened. Gently fold in cranberries and walnuts. , Spoon into a greased 9x5-in. loaf pan. Bake until a toothpick inserted in the center comes out clean, 1 hour. Cool for 10 minutes before removing from pan to a wire rack.

The perfect size for one or two people when baked in two mini loaf pans. Eat one now and store one for later. Freezes very well. Tastes best when tightly wrapped and allowed to set overnight. I like to use walnut or coconut oil, but any neutral/mild tasting oil will do fine. There are variations listed below.

1 cup white flour
1 1/2 teaspoons baking powder
1 teaspoon salt
3/4 cup sugar
1 cup walnuts, chopped
1/4 cup walnuts, chopped (optional garnish)
1 egg
3/4 cup milk
2 teaspoons vanilla
2 tablespoons oil

Steps:

  • Preheat oven to 350°F - Spray two mini loaf pans or one 8x4 loaf pan.
  • Combine dry ingredients (except optional 1/4 cup nuts) in a med size bowl; set aside.
  • Crack the egg into a measuring cup and stir to break yolk.
  • Add milk up to the 3/4 cup mark; then add vanilla and oil.
  • Make a well in the flour mixture and pour wet ingredients into the dry ingredients.
  • Mix until combined. Don't over mix. If batter is very stiff add an additional tbsp milk.
  • Transfer batter to prepared pan(s).
  • Sprinkle on optional 1/4 cup chopped nuts and lightly press down so they adhere.
  • Bake for 38 minutes or until tested done.
  • Cool on a rack for 1/2 hour. While still warm, wrap well and let set overnight for best texture. Can be frozen.
  • Variations: Pecans/rum extract; Coconut/vanilla or coconut extract; Almonds/almond extract.

Oh, my this is yummy. Great for OAMC, since it makes two loaves, you can freeze one and still have one to smear butter all over. This is not a diet friendly recipe! :) The riper the bananas, the better the flavor and the easier to mash (my peels were practically brown).

3/4 cup butter, softened
1 (8 ounce) package cream cheese, softened
2 cups sugar
2 eggs
3 cups flour
1/2 teaspoon baking powder

1 1/2 cups mashed bananas (about 4 medium)
1 cup chopped walnuts
1/2 teaspoon vanilla

Steps:

  • Preheat oven to 350°F and grease 2 loaf pans (8x4-inch).
  • Beat butter and cream cheese together until smooth using a stand mixer until creamy.
  • While the mixer is still on, add the sugar slowly, letting it combine.
  • Add the eggs one at a time, again letting each egg combine before adding the next.
  • Combine the flour, baking powder and soda, and salt. At this point make sure everything else is ready to combine, because once the flour hits the batter, you want to mix as little as possible. Add the flour slowly to the mixture as the mixer is going.
  • Turn off the mixer and add the bananas, nuts, and vanilla. Turn the mixer on briefly to combine.
  • Spoon the batter into the loaf pans and bake for 50 minutes to one hour, or until a wooden toothpick inserted comes out clean (or slightly damp if you like your banana bread slightly on the undercooked side, with a gummy top *yum*).
  • Cool in the pan at least 10 minutes, remove and cool on a rack for at least 30 more minutes if you want nice clean slices.
  • Note, you do not need a stand mixer to make this recipe. You could even do all this mixing by hand, it will just take longer. Simply add everything in little bits (maybe 1/4 cup to 1/2 cup at a time) and stir in between until it is mixed. Do not over beat once you have added the flour though, or the bread will be tough.
