I made these simple yet special cranberry walnut chicken salad sandwiches for a birthday party. Tangy cranberries and crunchy celery pep up the chicken. Leftover turkey works well, too. -Shannon Tucker, Land O' Lakes, Florida

1/2 cup mayonnaise
2 tablespoons honey Dijon mustard
1/4 teaspoon pepper
2 cups cubed rotisserie chicken
1 cup shredded Swiss cheese
1/2 cup chopped celery
1/2 cup dried cranberries
1/4 cup chopped walnuts
1/2 teaspoon dried parsley flakes
8 lettuce leaves
16 slices pumpernickel bread

Steps:

  • In a large bowl, combine the mayonnaise, mustard and pepper. Stir in the chicken, cheese, celery, cranberries, walnuts and parsley., Place lettuce on 8 slices of bread; top each with 1/2 cup chicken salad. Top with remaining bread.

3 cups cooked chicken, diced
3 celery ribs, diced
1/2 cup chopped red onion
1 1/2 cups chopped walnuts
3 hard-boiled eggs, chopped
4 tablespoons dill pickle relish
1 cup mayonnaise
1/2 cup reduced-fat sour cream
2 tablespoons lemon juice
1/2 teaspoon sugar
salt and pepper, to taste

Steps:

  • In a large bowl, combine chicken through relish; mix well.
  • In a small bowl, whisk together mayonnaise, sour cream, lemon juice, sugar, salt and pepper.
  • Pour creamy dressing mixture into chicken salad mixture and mix everything together well.
  • Serve on lettuce or croissants/rolls.

Most chicken salads are loaded with mayonnaise; this one relies on a yogurt-based dressing to make it moist, flavorful and lower in calories. Use whole-wheat pita bread if you can find it; it contains more fiber, and it's nutty flavor works well with the walnuts in the salad.

1/2 cup finely chopped fresh spinach; OR 3 tablespoons finely chopped frozen spinach, thawed and drained
2/3 cup nonfat yogurt
1 tablespoon lemon juice
1 teaspoon dry mustard
1/4 cup chopped green onion
1 tablespoon chopped fresh dill or tarragon, OR 1/2 teaspoon dried tarragon or dill
1/2 cup finely chopped celery
2 cups diced, cooked white meat chicken
1 apple, cored and diced
1 cup chopped California walnuts
Salt and pepper
Several leaves iceberg or other crisp lettuce (optional)
4 whole-wheat pita breads, halved, if making sandwiches

Steps:

  • In a large bowl, combine the spinach, yogurt, lemon juice, mustard, green onion, dill or tarragon and celery. Stir to combine.
  • Add the chicken, apple, and chopped walnuts, blend well, then season to taste with salt and pepper if desired.
  • Either serve the salad on a bed of lettuce leaves, or spoon about 1/2 cup of the salad into each pita half, tuck in a lettuce leaf, and serve.

Chicken Salad Sandwiches With Walnut-Dill Pesto image

1 small red onion, halved and thinly sliced
Finely grated zest and juice of 1 lemon
1 teaspoon sugar
Kosher salt and freshly ground pepper
1 small bunch dill, leaves and tender stems (about 1 cup)
1/4 cup walnuts
1 small clove garlic
1/3 cup extra-virgin olive oil, plus more for drizzling
1 2 1/2-pound rotisserie chicken, skin removed and meat shredded
2 tomatoes, sliced
1/2 head Boston lettuce, leaves separated
8 thick slices country white bread, lightly toasted
Potato chips, for serving (optional)

Steps:

  • Combine the onion, lemon juice, sugar, 1/4 cup water, 1/2 teaspoon salt and 1/4 teaspoon pepper in a medium bowl; set aside.
  • Put the dill, walnuts and garlic in a food processor and pulse until coarsely chopped. With the motor running, slowly add the olive oil until the mixture comes together, scraping down the sides of the processor as needed. Transfer the dill pesto to a large bowl and stir in the lemon zest and 1/2 teaspoon each salt and pepper. Add the chicken and toss to coat.
  • Drain the onion and squeeze dry. Drizzle the tomatoes with olive oil and season with salt and pepper. Divide the lettuce and tomatoes among 4 pieces of bread; top each with some chicken salad, onion and another piece of bread. Serve with chips.

Half of a leftover chicken from Easy Thyme-Roasted Chicken with Potatoes
2 peeled and thinly sliced Golden Delicious apples
3 to 4 thinly sliced celery stalks
1/2 cup coarsely chopped toasted walnuts

Steps:

  • In a large bowl, whisk together mayonnaise, lemon juice, salt and pepper.
  • Remove skin from half of a leftover thyme-roasted chicken.
  • Shred meat, and add to dressing. Add apples, celery stalks and walnuts. Serve over a bed of lettuce.
