Quick Walnut Bread image

This savory quick bread is easy to make and versatile. Try it lightly toasted for breakfast or tea, or drizzled with a little honey. You may also slice it thin and serve it with cheese.

Number Of Ingredients 10

1 cup whole wheat flour
3/4 cup unbleached all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
4 eggs
1/2 cup buttermilk or plain yogurt
3 tablespoons olive oil
3 tablespoons walnut oil
1 cup (3 ounces) chopped walnuts

Steps:

  • Preheat the oven to 375 degrees. Move the rack to the center of the oven. Butter or oil a loaf pan. Sift together the flour, baking powder, baking soda and salt.
  • Beat the eggs in a large bowl. Whisk in the buttermilk or yogurt and the oils. Quickly whisk in the flour, and fold in the walnuts. Scrape into the bread pan.
  • Bake 50 minutes to one hour, until nicely browned and a tester comes out clean. Remove from the heat, allow to cool for 10 minutes in the pan. Then reverse onto a rack and allow to cool.

Yield Makes 2 loaves

Number Of Ingredients 8

1/2 cup (1 stick) butter or walnut oil
3/4 cup finely chopped onion
2 cups warm milk (105°F. to 115°F.)
2 tablespoons sugar
2 envelopes dry yeast
2 teaspoons salt
5 cups (about) all purpose flour
3/4 cup walnuts, toasted, coarsely chopped (about 3 ounces)

Steps:

  • Melt butter in heavy large skillet over medium heat. Add onion and sauté until tender, about 5 minutes. Let cool.
  • Combine milk and sugar in large bowl. Sprinkle yeast over; stir to blend. Let stand until foamy, about 10 minutes. Transfer to processor. Mix in onion mixture, salt and 1 cup flour. Blend in enough remaining flour, 1 cup at a time, to form smooth ball. Transfer dough to floured work surface and knead until smooth and elastic, about 3 minutes. Shape dough into ball.
  • Butter large bowl. Place dough in bowl; turn to coat. Cover bowl with clean kitchen towel. Let dough rise in warm draft-free area until doubled in volume, about 45 minutes.
  • Butter heavy large baking sheet. Punch down dough. Turn out onto floured work surface. Sprinkle walnuts over; knead to incorporate. Divide dough in half. Shape each half into 6-inch round loaf. Place dough rounds on prepared baking sheet, spacing 4 inches apart. Flatten slightly. Cover with dry towel. Let rise in warm draft-free area until almost doubled in volume, about 45 minutes. Preheat oven to 400°F. Bake until loaves are golden brown and sound hollow when tapped on bottom, about 25 minutes. Transfer to racks; cool. Serve at room temperature.

OAT AND WALNUT BUTTERMILK BRAID

Number Of Ingredients 13

1/2 cup warm water (105°F. to 115°F.)
1/4 cup honey
1 envelope dry yeast
2 cups buttermilk
4 1/3 cups (about) bread flour
2 cups old-fashioned oats
1 cup whole wheat flour
2 tablespoons vegetable oil
2 teaspoons salt
1 cup chopped walnuts
1 egg
2 tablespoons milk
Additional old-fashioned oats

Steps:

  • Stir warm water and honey in large bowl to blend. Sprinkle yeast over. Let stand until foamy, about 8 minutes. Heat buttermilk in small saucepan to lukewarm (about 100°F.). Stir into yeast mixture. Add 2 cups bread flour, 2 cups oats, wheat flour, oil and salt and stir until smooth. Gradually mix in enough remaining bread flour to form dough. Cover and let dough rest 15 minutes.
  • Turn out dough onto floured surface. Knead until smooth and elastic, Adding more bread flour if sticky, about 10 minutes. Knead in nuts. Oil large bowl. Add dough; turn to coat. Cover bowl with clean towel; let rise in warm area until doubled, about 50 minutes.
  • Oil large baking sheet. Punch down dough. Turn out onto oiled surface; knead briefly. Divide dough into 3 pieces. Roll each piece into 16-inch-long rope. Braid ropes together; tuck ends under and pinch to seal. Transfer to prepared sheet. Cover with clean towel. Let rise in warm area until almost doubled, about 45 minutes.
  • Preheat oven to 375°F. Whisk egg and milk in bowl. Brush loaf generously with some of egg mixture. Sprinkle with additional oats. Bake until golden and tester inserted into center comes out clean, about 50 minutes. Transfer to rack; cool. (Can be made 1 day ahead. Wrap tightly; store at room temperature.)

1 c walnut halves, divided
1 large egg
1 c buttermilk
2 Tbsp unsalted butter, melted
1 1/2 c all purpose flour
1 c light brown sugar, lightly packed
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350°F Lightly coat a 5-by-9-inch loaf pan with non-stick cooking spray.
  • 2. Coarsely chop 1/2 cup walnuts. Reserve remaining walnut halves.
  • 3. In a large bowl, with mixer on medium-high speed, beat to blend egg, buttermilk, and butter. Add chopped walnuts, flour, brown sugar, baking soda, baking powder, salt and vanilla; stir just until evenly moistened.
  • 4. Pour into loaf pan and arrange remaining walnut halves evenly on top of batter.
  • 5. Bake 45 to 50 minutes, until bread begins to pull away from side of pan. Let bread cool in pan on wire rack for 10 minutes. Run a knife between bread and pan sides, then turn out onto wire rack. Let cool 10 minutes before slicing.

4 very ripe bananas, mashed
1 teaspoon vanilla

1/3 cup buttermilk
1 1/2 cups unbleached flour

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl cream together the sugar and the butter; add eggs one at a time, beating after each addition.
  • Beat in mashed bananas and vanilla and continue beating until mixture is smooth.
  • In a large measuring cup stir baking soda into the buttermilk and add it to the banana mixture along with the flour and chopped nuts.
  • Stir the batter until it is just combined.
  • Pour batter into a greased and floured 9x5 inch loaf pan and bake for one hour or until tooth pick inserted in the center comes out clean.
  • Transfer the bread to a rack and let it cool in the pan for 10 minutes.
  • Turn it out onto a rack and let it cool completely.
