one of my Top Ten favorite foods since i was 18 years old and used to order this at the Walker Brothers Pancake House - a favorite restaurant for those who live on the North Shore of Chicago - so quick, so easy, so delicious - special for Christmas morning, too

1 -2 apple, sliced very thin
2 tablespoons unsalted butter
1/3 cup flour
1 teaspoon sugar
1/4 teaspoon salt
1/3 cup half-and-half
2 large eggs
4 tablespoons butter, melted
cinnamon sugar, added to butter, to taste

Steps:

  • Preheat oven to 400 degrees [i use a Cuisinart larger sized toaster oven - a great appliance for cooking for 2].
  • In a cast iron or LeCreuset ovenproof pan, cook sliced apple in melted butter until softened. Remove from heat.
  • Mix flour, sugar, salt. Add half and half and blend. Add eggs and whisk thoroughly. Pour this over the sliced apples and place in preheated oven.
  • Bake in oven for 12-15 minutes. Remove when puffed and not browned.
  • Melt butter in pan while pancake is baking. Add cinnamon sugar to taste. Dish up pancake and drizzle melted butter/cinnamon sugar over each serving.
  • [use 2nd apple if you'd like this to be more fruit than pancake].

2 Granny Smith Apples, sliced,peeled and cored
2 teaspoons ground cinnamon
1/2 cup sugar
1/2 cup brown sugar
3/4 cup flour
1 teaspoon baking powder
1/8 teaspoon salt
3/4 cup buttermilk
3 eggs, beaten
2 tablespoons oil
5 tablespoons unsalted butter

Steps:

  • Heat oven to 375. Very lightly oil a oven proof cast iron pan. Peel apples and core and slice them. Mix apples and cinnamon and sugars in a bowl. Mix flour, baking powder and salt in a medium bowl. Stir in buttermilk and eggs, mix well. Melt butter in a pan add apple mixture and cook stirring until sugars are melted and apples are well coated about 5 minutes. Pour egg mixture over apples. Bake until puffed and edges brown and apples are tender about 30 minutes. Serve immediately.

5 lbs stewing chicken, cut into serving pieces
1 onion, studded with 2
clove
2 stalks celery & leaves
salt
1/2 bay leaf
1 carrot
3 cups water
4 tablespoons butter
1/4 cup flour
1/2 lb mushroom, sliced
1 egg yolk, slightly beaten
1 tablespoon dry sherry
3 tablespoons light cream
1 (8 ounce) package spaghetti noodles
2 tablespoons grated parmesan cheese
1 teaspoon butter
toasted almond (optional)
Tabasco sauce (optional)

Steps:

  • In a heavy kettle place the chicken, onion, celery, one TBS salt, bay leaf, carrot and 3 cups water.
  • Bring to a boil, reduce the heat and simmer, covered, until the chicken is tender, 3-4 hours.
  • Remove the chicken from the broth and let cool.
  • Remove the meat from the bones in shredded slim pieces about 2 inches long, discarding skin and bones.
  • Skim the fat from the top of the broth and place 4 TBS of the fat (or an equivalent amount of butter)in a 2 quart saucepan.
  • Add the flour and salt to taste, stirring with a wire whisk until blended.
  • Meanwhile, bring 2 cups of the strained chicken broth to a boil and add all at once to the fat-flour mixture, stirring vigorously with the whisk until the sauce is thickened and smooth.
  • If desired, season with tabasco sauce.
  • In a skillet, heat 3 TBS of the remaining fat or butter and add the mushrooms; cook until browned.
  • To the sauce, add the egg yolk lightly beaten with a little of the hot sauce and stir in the sherry, cream, chicken and mushrooms.
  • Cook, stirring until heated through.
  • DO NOT LET BOIL.
  • Cook the spaghetti according to package directions.
  • Place alternate layers of drained spaghetti noodles and sauce in a buttered casserole, sprinkle with grated parmesan cheese and dot with butter.
  • Brown quickly in a preheated broiler and serve with toasted almonds, if desired.
  • If using leftover turkey meat, use organic chicken ready-made broth, celery flakes and a pinch of ground cloves.
  • You can make this ahead 1-2 days and refrigerate, covered -- then reheat 45 minutes at 325 degrees just before serving - and it's even better, as the flavors have had a chance to blend nicely.

This recipe my mother told me about when I was 5 years old and I am passing it down to you all. The key ingredient is the scrubbed stone which is to be placed in the boiling water. Zaar won't recognize the ingredient so when you scrub yours along side the river bank, just plop it into the pot of boiling water. ONCE UPON A TIME,,, there were two unemployed and very poor men who decided to become beggars so they shouldn't starve to death. 'Well', they thought,'this will be easy'. They were turned down at every door and tavern and were shooed out of town. 'Eureka! I have an idea' said one fellow and he proceeded to fill his pot with water from the nearby river. He asked his companion to find a large rock and to scrub it on the rivers edge. The companion did just so and brought it to his friend just as the townspeople were drawing water from the river. The friend put the stone into the boiling water. 'Hey there, you two, just what are you cooking"? The fellow shouted across the river. "Why it's just stone soup! Please my friend, have a taste." So the new friend waded through the water and dipped his spoon into the stone soup. ''Gracious me, this is the best stone soup I have ever tasted! But you know, I have some onions and some beans in my kitchen that would make your stone soup taste spectacular. Would you mind?" ' Why no kind sir if you think it would help my meager soup'. Soon the laundress came over with an apron full of potatoes. 'Excuse me sir but if you are going to put his onions into your stone soup you surely would want my new potatoes to sweeten the taste." ''Well yes, we would...'' One by one the villagers dropped in their offers, a pheasant plucked clean, celery and radishes, rutabagas and turnips and even a haunch of beef. Finally after adding a bottle of fine wine the pot was filled to the top. "Patience dear villagers. As you all know stone soup cannot be rushed, It must simmer the full two hours''. While they waited some went home for honey cakes and loaves of bread and some went for cheese and fruit and even tables and chairs. Soon the hour arrived and the villagers dined on Stone Soup to their hearts content. No one could recall ever eating such delicious stone soup. As dark fell upon them they asked the beggar-men if they would serve stone soup again next midday. No, they lamented, they would be making coin soup and they would love to invite the villagers to dine. Hu-rah! They would bring coins, meat, fowl and cockles and perhaps bread for the coin soup and went home sated and content that they would dine better the next day.

1 pheasant, plucked clean
1 haunch beef
1 bunch onion
1 bunch celery
new potato, peeled (1 apronful)
2 rutabagas
2 turnips
1 liter wine (fine)
salt and pepper
herbs, and
spices, to taste

Steps:

  • Put everything into the boiling water and simmer for at least two hours.
  • Serve to villagers.

1/2 cup kerry irish gold sweet butter
3/4 cup brown sugar
1 egg
1 cup unsifted stoneground whole wheat flour
1/2 cup unsifted unbleached white flour
1 teaspoon baking soda
3/4 teaspoon sea salt
1 1/4 cups mashed ripe bananas (2 large or 3 small)
1/3 cup buttermilk or 1/3 cup yogurt

Steps:

  • Preheat oven to 350 degrees.
  • Cream the butter and sugar together until very light. Beat in the egg.
  • Sift together the whole wheat flour, white flour, baking soda and salt.
  • Combine the bananas and buttermilk, stirring just enough to combine well.
  • Alternately add dry ingredients and banana mixture to creamed butter/sugar/egg mixture.
  • Turn into an oiled 9 by 5 inch loaf pan.
  • Bake 50-60 minutes or until done.
  • White flour can be substituted for whole wheat flour - also try rice flour, oat flour, coconut flour [add extra liquid if using coconut flour in a 1 to 1 ratio].
  • Cool in pan 10 minutes. Remove from the pan and finish cooling on a rack.
  • Yields 1 loaf.

Found this online while searching for TOPH recipes. Fabulous recipe from The Original Pancake House! The Apple Pancake contains eggs, flour, milk, sugar, cinnamon, vanilla, butter and lots of apples. It takes about 30 minutes to bake in an iron skillet and is served all puffed up and steaming hot. The Apple Pancake really isn't much like a pancake at all. It's more a like a soufflé or really, really moist bread pudding. The only way to truly appreciate it is to try one yourself.

5 tablespoons butter
2 Granny Smith apples (peeled, cored, and sliced thin)
1 tablespoon cinnamon
1 cup flour
1 cup milk
1/4 teaspoon pure vanilla extract
4 eggs
1/2 cup dark brown sugar
1/2 cup granulated sugar

Steps:

  • In a mixing bowl, add flour, milk, vanilla and eggs. Mix well.
  • In another bowl, mix the brown sugar, granulated sugar, and remaining cinnamon.
  • Add butter to a 10 inch Pyrex pie deep dish and put in the oven (deep dish Pyrex is great) At 400 degrees.
  • When the butter is completely melted remove from oven.
  • Pour the batter into the Pyrex dish and put back in the oven for 20-25 minutes. The edges will begin to puff.
  • Remove the half-way cooked batter from the oven and now add the apple mixture to it.
  • Just simply place the apples all over the top of the batter.
  • Next, cover the entire surface with the brown sugar/sugar/cinnamon blend and put it back in the oven for another 20-25 minutes.

1/4 cup German mustard (like Dusseldorf)
2 tablespoons wine vinegar
1 teaspoon minced onion
1 teaspoon minced garlic
1 dash Worcestershire sauce
1 dash hot pepper sauce
8 ounces corned beef (ground or shredded)
6 ounces swiss cheese, shredded
1/2 cup sauerkraut, rinsed and drained
1/4 cup minced onion
12 -15 egg roll wraps
vegetable oil

Steps:

  • Make dipping sauce by combining Thousand Island dressing, German mustard, wine vinegar, 1 teaspoon minced onion, garlic, Worcestershire sauce and hot pepper sauce. Set aside.
  • To make rolls:
  • Combine corned beef, Swiss cheese, sauerkraut and 1/4 cup onion; mix well.
  • Place about 2 tablespoons of the mixture in the center of an egg roll wrapper.
  • Roll up as directed on package, sealing edges with a little water.
  • Deep-fry rolls in 2 to 3 inches of vegetable oil, heated to 325 to 350 degrees Fahrenheit, until golden brown, about 3 to 4 minutes, turning to brown evenly.
  • When done, remove from oil with slotted spoon; drain on paper towels. Serve with dipping sauce.

I love this pancake! Good apples to use would be Granny Smith, Jonagold or McIntosh. If you have access to heirloom apples, choose some that have some tartness to them. This recipe is adapted from "The Pancake Handbook".

2 tart apples, peeled, cored, thinly sliced
3 tablespoons sugar
1 lemon, juice of
1/4 teaspoon ground cinnamon
6 tablespoons unsalted butter
3 eggs
3/4 cup milk
3/4 cup flour
1/2 teaspoon salt
confectioners' sugar

Steps:

  • Combine apples, sugar, 2 T of the lemon juice and cinnamon in a medium bowl; toss to coat apples.
  • Melt 2 T of the butter in a skillet over medium-high heat; add apples, cook just until soft, 3 minutes; remove from heat and set aside.
  • Heat oven to 450 degrees.
  • Whisk together eggs and milk in a bowl until well blended, whisk in flour and salt to form a slightly lumpy batter.
  • Melt remaining 4 T of the butter in an oven-proof 10-inch skillet (a well-seasoned cast iron skillet is good) until just beginning to brown, about 2 minutes; spread apples in bottom of pan, pour batter over apples.
  • Bake until the pancake is golden brown and puffed, about 20 minutes; invert onto a large platter.
  • Sprinkle with remaining lemon juice; dust with confectioners' sugar.
