CHERRY WALDORF SALAD

We combine apples with tart cherries and dried cranberries to give an autumn twist to classic Waldorf salad. -Marie Hattrup, Sonoma, California

Number Of Ingredients 10

1/4 cup mayonnaise
1/4 cup sour cream
2 tablespoons honey
1/8 teaspoon salt
2 large apples (about 1 pound), cubed
1 tablespoon lemon juice
2 celery ribs, chopped
1/2 cup dried cranberries
1/2 cup slivered almonds, toasted
1 cup fresh or frozen pitted tart cherries, thawed

Steps:

  • For dressing, whisk together first 4 ingredients. In a large bowl, toss apples with lemon juice. Add celery, cranberries and almonds; toss with dressing. Gently stir in cherries., Refrigerate, covered, 1 hour before serving.

This fruity concoction was first made in Waldorf Astoria Hotel in New York over a century ago and since then has become a staple in restaurants, country clubs, and Southern homes. Our Best Waldorf Salad combines fresh celery, granny smith apples, seedless grapes, and pecans to make a fruity, light dish. After these fresh ingredients are chopped and mixed, you can eat them right out of the bowl or serve them on a bed of crisp lettuce. While the recipe calls to dress the salad with mayonnaise, to create a healthier dish, you can swap out the mayonnaise for Greek yogurt. This dish is versatile enough to serve as an appetizer or a light lunch salad. This salad is truly fit for any occasion but is most enjoyable in the summer heat or in the fall when crisp apples are in season.

Invented in 1896 not by a chef but by the maître d'hôtel Oscar Tschirky, the Waldorf salad was an instant success. As often happens, many variations evolved-some with raisins, some with chopped nuts. This one has green apples and red seedless grapes.

1 cup boiling water

1 1/3 cups very thinly sliced celery
1 1/3 cups red seedless grapes, halved
Romaine lettuce leaves
Sweet and Spicy Candied Pecans

Steps:

  • Soak cherries in 1 cup boiling water until softened, about 10 minutes. Drain.
  • Whisk mayonnaise and next 3 ingredients in large bowl. Add apples, celery, grapes and cherries; toss. Season with salt and pepper.
  • Arrange lettuce on platter. Spoon salad over. Top salad with candied pecans.

½ cup mayonnaise
2 ½ tablespoons distilled white vinegar
1 apple - peeled, cored, and chopped
1 large stalk celery, diced
½ cup raisins
½ cup chopped walnuts
salt and pepper to taste

Steps:

  • In a mixing bowl, whisk together the mayonnaise and vinegar.
  • Add the apples, celery, raisins and walnuts if desired. Add salt and pepper to taste.
  • Mix together well and serve chilled.

It's hard to believe that cranberries, apples, green grapes, pineapple, mashmallows and Cool Whip can make such a delightful tasting salad. It's abit different from the usual Waldorf Salad, but a great compliment to your holiday meal.

2 cups frozen cranberries, partially thawed and cut in half
1/2 cup sugar
3 cups miniature marshmallows
2 cups diced unpeeled golden delicious apples
1 cup green seedless grape (*See note)
1 (20 ounce) can pineapple tidbits, drained
1 (8 ounce) container Cool Whip

Steps:

  • In a large bowl, combine the cranberries and sugar; mix thoroughly.
  • In a 3-quart (12 cup) bowl, add the marshmallows, apples, grapes, and pineapple.
  • Add the cranberry/sugar mixture; mix well.
  • Fold in the Cool Whip.
  • Cover, and chill in the refrigerator until ready to serve.
  • *Note: If using rather large grapes, cut them in half.
  • If the grapes are small in size, I do not bother cutting them in half.
