WAGON WHEEL COOKIES
Steps:
- In a large bowl, cream together the shortening and sugar until smooth. Beat in the eggs one at a time then stir in the vanilla. Combine the flour, cocoa, baking powder and salt; stir into the creamed mixture. Stir in walnuts if desired. Cover dough and chill for at least one hour.
- Preheat oven to 350 degrees F (175 degrees C). Roll the dough into walnut sized balls. Roll the balls in confectioners' sugar. Place the cookies 2 inches apart onto the cookie sheet.
- Bake for 10 to 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

- Place the hash browns in a 7-in. pie plate coated with cooking spray. In a small bowl, combine the cream cheese, 2 tablespoons milk, onion, salt if desired and pepper; spread over potatoes. , Cut sausage links in half lengthwise; arrange over potatoes in a spoke-like fashion. , In a small bowl, whisk the biscuit mix, egg, nutmeg and remaining milk until smooth; pour between sausages. WAGON WHEEL OMELET
Another recipe that I have used for years and years. Makes a hearty breakfast, or a good "breakfast-for-supper" meal, along with hot biscuits and maybe even some gravy!

- Brown sausage links in a 12" non-stick skillet, according to directions. Remove to paper towel.
- Combine hash browns, onion and bell pepper. Press into same skillet that you used to brown sausage links. Sprinkle potatoes with salt and pepper, cover, and let cook over medium-low heat for 10-15 minutes, or until bottom of hash browns is a light brown.
- Meanwhile, beat two eggs. Pour over potatoes at the end of the 10 minutes, tilting skillet to coat top of potatoes. Add sausage links, in a spoke design, around the skillet. Cover, and let cook an additional 5 minutes, or until eggs are set. Turn off heat, sprinkle with cheese and cover until cheese is melted.

Steps:
- Cook pasta for about 1-2 minutes less than called for on the package directions. You want it to be slightly under-cooked so that it doesn't become mushy when you bake it in the oven later.
- Meanwhile, in a large bowl, beat the eggs, salt, garlic, and pepper. Add beef and mix well. Sprinkle with Parmesan cheese and bread crumbs; mix gently.
- Crumble beef mixture into a large skillet. Cook over medium-high heat until meat is no longer pink; drain. Stir in the marinara sauce.
- Drain pasta; place in a large bowl. Add beef mixture; sprinkle with 1 cup mozzarella cheese. Toss until pasta is well coated.
- Pour pasta mixture into a 13x9-inch baking dish (or into two 8-inch square baking dishes). Top with remaining 1 cup of mozzarella cheese.
- Cover and bake at 350 degrees F for approximately 25-30 minutes. Remove cover and bake for an additional 5 minutes, or until top browns and pasta is heated through.
- Serve with additional Parmesan cheese on top, if desired.

- To make the biscuits, tip the flour, salt and butter into a bowl. Rub the butter into the flour until the mixture resembles fine crumbs. Stir in the sugar and vanilla paste, then add the egg yolk. Using your hands, bring the dough together. Wrap in cling film and chill for 30 minutes.
- For the jam, place the raspberries in a small deep-sided pan and crush them with a wooden spoon. Add the sugar and bring to the boil over a low heat, until the sugar has melted. Increase the heat and boil for 4 minutes, until thickened. Remove from the heat and carefully pass through a sieve into a shallow container. Leave to cool and set.
- For the marshmallow, pour 100ml of water into a small bowl, then sprinkle the gelatine over the top to soften. Set aside. Tip the sugar into a pan, add the glucose and 100ml of water and cook over a low heat to dissolve. Increase the heat and bring to the boil. Cook until the syrup reaches 120°C/248°F on a sugar thermometer.
- While the syrup is cooking, whisk the egg white in the bowl of a stand mixer until firm but not dry. As soon as the syrup reaches 120°C/248°F, remove the pan from the heat and stir in the gelatine.
