This is a cookie recipe that I got from my mother and have never been able to find anywhere else, they are a yummy dark chocolate cookie

½ cup shortening
2 cups white sugar
4 eggs
2 cups all-purpose flour
1 cup unsweetened cocoa powder
2 teaspoons baking powder
1 teaspoon salt
1 cup chopped walnuts
1 cup confectioners' sugar
2 teaspoons vanilla extract

Steps:

  • In a large bowl, cream together the shortening and sugar until smooth. Beat in the eggs one at a time then stir in the vanilla. Combine the flour, cocoa, baking powder and salt; stir into the creamed mixture. Stir in walnuts if desired. Cover dough and chill for at least one hour.
  • Preheat oven to 350 degrees F (175 degrees C). Roll the dough into walnut sized balls. Roll the balls in confectioners' sugar. Place the cookies 2 inches apart onto the cookie sheet.
  • Bake for 10 to 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

1-1/2 cups frozen shredded hash brown potatoes, thawed
3 tablespoons cream cheese, softened
2 tablespoons plus 2 teaspoons 2% milk, divided
1 green onion, chopped
1/8 teaspoon salt, optional
Dash pepper
4 uncooked breakfast sausage links
1/4 cup biscuit/baking mix
1 large egg
Dash ground nutmeg
Dash paprika

Steps:

  • Place the hash browns in a 7-in. pie plate coated with cooking spray. In a small bowl, combine the cream cheese, 2 tablespoons milk, onion, salt if desired and pepper; spread over potatoes. , Cut sausage links in half lengthwise; arrange over potatoes in a spoke-like fashion. , In a small bowl, whisk the biscuit mix, egg, nutmeg and remaining milk until smooth; pour between sausages. Sprinkle with paprika., Bake at 400° for 25-30 minutes or until golden brown and filling is bubbly.

Another recipe that I have used for years and years. Makes a hearty breakfast, or a good "breakfast-for-supper" meal, along with hot biscuits and maybe even some gravy!

1 package(s) brown'n'serve sausage links (pk of 10)
1 package(s) simply potatoes hash browns
1/3 cup(s) onion, diced
1/3 cup(s) green bell pepper, diced
- salt and pepper, to taste
2 - eggs, beaten
3/4 cup(s) cheddar cheese, shredded

Steps:

  • Brown sausage links in a 12" non-stick skillet, according to directions. Remove to paper towel.
  • Combine hash browns, onion and bell pepper. Press into same skillet that you used to brown sausage links. Sprinkle potatoes with salt and pepper, cover, and let cook over medium-low heat for 10-15 minutes, or until bottom of hash browns is a light brown.
  • Meanwhile, beat two eggs. Pour over potatoes at the end of the 10 minutes, tilting skillet to coat top of potatoes. Add sausage links, in a spoke design, around the skillet. Cover, and let cook an additional 5 minutes, or until eggs are set. Turn off heat, sprinkle with cheese and cover until cheese is melted.

1/2 pound uncooked wagon wheel pasta
1 pound ground beef
1/2 cup chopped onion
1-3/4 cups water
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1 can (8-3/4 ounces) whole kernel corn, drained
1 envelope spaghetti sauce mix
1/8 teaspoon pepper
4 ounces sliced Colby cheese, cut into strips

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. , Stir in the water, soup, corn, spaghetti sauce mix and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 2-3 minutes or until heated through. , Drain pasta; stir into beef mixture. Top with cheese; cook and stir for 2 minutes or until cheese is melted.

6 cups uncooked wagon wheel macaroni (or other short shape pasta such as rotini or penne)
2 eggs
1 teaspoon salt
1/2 teaspoon minced garlic
1/4 teaspoon pepper, to taste
1 lb ground beef
1/4 cup grated parmesan cheese
1/4 cup Italian seasoned breadcrumbs
4 cups marinara sauce
2 cups shredded mozzarella cheese, divided

Steps:

  • Cook pasta for about 1-2 minutes less than called for on the package directions. You want it to be slightly under-cooked so that it doesn't become mushy when you bake it in the oven later.
  • Meanwhile, in a large bowl, beat the eggs, salt, garlic, and pepper. Add beef and mix well. Sprinkle with Parmesan cheese and bread crumbs; mix gently.
  • Crumble beef mixture into a large skillet. Cook over medium-high heat until meat is no longer pink; drain. Stir in the marinara sauce.
  • Drain pasta; place in a large bowl. Add beef mixture; sprinkle with 1 cup mozzarella cheese. Toss until pasta is well coated.
  • Pour pasta mixture into a 13x9-inch baking dish (or into two 8-inch square baking dishes). Top with remaining 1 cup of mozzarella cheese.
  • Cover and bake at 350 degrees F for approximately 25-30 minutes. Remove cover and bake for an additional 5 minutes, or until top browns and pasta is heated through.
  • Serve with additional Parmesan cheese on top, if desired.

  • For the jam, place the raspberries in a small deep-sided pan and crush them with a wooden spoon. Add the sugar and bring to the boil over a low heat, until the sugar has melted. Increase the heat and boil for 4 minutes, until thickened. Remove from the heat and carefully pass through a sieve into a shallow container. Leave to cool and set.
  • For the marshmallow, pour 100ml of water into a small bowl, then sprinkle the gelatine over the top to soften. Set aside. Tip the sugar into a pan, add the glucose and 100ml of water and cook over a low heat to dissolve. Increase the heat and bring to the boil. Cook until the syrup reaches 120°C/248°F on a sugar thermometer.
  • While the syrup is cooking, whisk the egg white in the bowl of a stand mixer until firm but not dry. As soon as the syrup reaches 120°C/248°F, remove the pan from the heat and stir in the gelatine.
