BERRY WAFFLES

Number Of Ingredients 11

3 tablespoons unssalted butter
1 cup flour
1 teaspoon baking powder
Pinch of baking soda
Pinch cinnamon
Pinch of salt
1/4 sugar
1/2 cup yogurt
1/2 cup milk
1 egg, lightly beaten
1 cup frozen blueberries not thawed

Steps:

  • Preheat waffle iron and read manufacturer's instructions. Melt butter in microwave. In a large bowl, combine flour, baking powder, baking soda, cinnamon, salt and sugar. In another bowl, beat together yogurt, milk and egg. Whisk liquid mixture into dry ingredients until just combined. Fold in frozen berries. Stir in melted butter. Brush hot waffle iron with butter or spray. Spoon about 1/2 cup of batter onto iron, smooth out with back of spoon and close to cook. This first waffle will be the tester. Cook waffle until golden brown. Remove to plate and keep warm. Serve with butter, maple syrup or blueberry syrup.

I am fortunate to have four blueberry bushes in my back yard, and they supply me with fresh blueberries all summer long. This is one of the recipes that I use to help use up the massive amount of berries that I pick each summer.

3 egg yolks, beaten
1 ⅔ cups milk
2 cups all-purpose flour
2 ¼ teaspoons baking powder
½ teaspoon salt
¼ cup melted butter
3 egg whites, stiffly beaten
⅔ cup blueberries
1 ½ cups blueberries
3 tablespoons honey
½ cup orange juice
1 tablespoon cornstarch

Steps:

  • In a medium bowl, whisk together egg yolks and milk. Stir in flour, baking powder and salt. Stir in butter, and set mixture aside for about 30 minutes.
  • Preheat a lightly greased waffle iron.
  • Fold egg whites and 2/3 cup blueberries into the mixture. Scoop portions of the mixture into the prepared waffle iron, and cook until golden brown.
  • To prepare the sauce, in a medium saucepan over medium heat, mix 1 1/2 cups blueberries, honey and 1/4 cup orange juice. Bring to a boil. Mix remaining orange juice and cornstarch in a small bowl, and stir into the blueberry mixture. Stir constantly until thickened. Serve warm over waffles.

1/2 cup seasoned bread crumbs
1 teaspoon dried thyme
1 pork tenderloin (1 pound), cut into 12 slices
2 tablespoons olive oil
2 medium pears, thinly sliced
1/2 cup maple syrup
2 tablespoons Dijon mustard
1/2 teaspoon salt
8 frozen waffles, toasted
2 tablespoons minced chives

Steps:

  • In a large resealable plastic bag, combine bread crumbs and thyme. Add pork, a few pieces at a time, and shake to coat. In a large skillet, cook pork in oil in batches over medium heat for 2-4 minutes on each side or until tender. Remove from the pan and keep warm., Add the pears, syrup, mustard and salt to the skillet; cook and stir for 1-2 minutes or until pears are tender. Serve pork slices and pear mixture over waffles. Sprinkle with chives.

2-1/4 teaspoons baking powder
1/2 teaspoon salt
1-2/3 cups milk
3 eggs, separated
1/4 cup butter, melted
2/3 cup fresh or frozen blueberries
SAUCE:
1-1/2 cups fresh or frozen blueberries
1/2 cup orange juice, divided
3 tablespoons honey
1 tablespoon cornstarch

Steps:

  • In a large bowl, combine the flour, baking powder and salt. Whisk the milk, egg yolks and butter; stir into dry ingredients just until moistened. Fold in blueberries., In a small bowl, beat egg whites until stiff peaks form; fold into batter., Bake in a preheated waffle iron according to manufacturer's directions until golden brown., Meanwhile, in a small saucepan, combine the blueberries, 1/4 cup orange juice and honey. Bring to a boil. Combine cornstarch and remaining orange juice until smooth; gradually stir into berry mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve warm with waffles.

  • Ricotta, mascarpone and berries: In a small bowl, stir together 1/2 cup part-skim ricotta, 1/2 cup mascarpone cheese and 1 tablespoon confectioners sugar.
  • Chili: On the stove or in the microwave, heat 1 (14.7-ounce) can or 2 cups homemade meat or vegetarian chili. Meanwhile, cook waffles per your recipe or the package instructions and assemble your favorite chili toppings, such as chopped scallions, grated cheese and sour cream.
  • The Elvis (peanut butter, banana and bacon):Peel 2 bananas and cut them into 1/4-inch-thick slices. Cook 4 slices of bacon until crispy then let cool and cut each slice in half crosswise.

  • Broccoli and cheese: In a foil-lined baking dish, toss 4 cups of small broccoli florets with 2 tablespoons of olive oil, season with salt and pepper and roast in a 400 degree F oven until starting to brown, about 20 minutes.
  • Avocado and egg: Halve and pit 2 ripe avocados then spoon the flesh into a small bowl. Add lemon juice, olive oil, salt and crushed red pepper to taste, and gently mash everything together.
