Yield 32 cookies (8 batches).

Number Of Ingredients 8

1/2 cup butter, softened
1 cup sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
Confectioners' sugar

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture (mixture will be thick)., Drop dough in batches by tablespoonfuls 3-4 in. apart onto a greased preheated waffle iron. Bake until dark brown, 2-3 minutes., Remove to wire racks to cool completely. Sprinkle with confectioners' sugar.

I reach for this recipe when I need a special dessert that requires little fuss. The cookies are quickly made in a waffle iron and then spread with chocolate frosting.

Number Of Ingredients 7

3/4 cup sugar
1/2 cup butter or margarine, melted
2 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
4-1/2 teaspoons baking cocoa
Chocolate frosting

Steps:

  • In a bowl, combine sugar, butter, eggs and vanilla. Combine flour and cocoa; gradually add to the sugar mixture. Drop tablespoonfuls of batter into each section of a preheated waffle iron. Bake according to manufacturer's directions. Remove carefully; cool on wire racks. Spread with chocolate frosting.

1-1/2 cups all-purpose flour
1 cup quick-cooking oats
3 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
2 large eggs, lightly beaten, room temperature
1-1/2 cups whole milk
6 tablespoons butter, melted
2 tablespoons brown sugar
Assorted fresh fruit and yogurt of your choice

Steps:

  • In a large bowl, combine flour, oats, baking powder, cinnamon and salt; set aside. In a small bowl, whisk eggs, milk, butter and brown sugar. Add to flour mixture; stir until blended. , Pour batter into a lightly greased waffle iron (amount will vary with size of waffle iron). Close lid quickly. Bake according to manufacturer's directions; do not open during baking. Use fork to remove baked waffle. Top with fresh fruit and yogurt.

2 stick butter (or margarine)
1 c sugar
3 large eggs (beaten)
2 1/4 c quick cooking oats
3 c flour
1 tsp salt
1/4 tsp ground cloves
1 tsp ground ginger
1 Tbsp ground cinnamon
1 Tbsp baking powder
1 tsp baking soda
1 1/4 c sour cream
1 Tbsp rum
1 1/3 c raisins (soaked in hot water to cover for 15 minutes)
OPTIONAL: ADD MINI CHOCOLATE CHIPS AND CHOPPED NUTS !

Steps:

  • 1. Mix all dry ingredients (except sugar) together in a bowl. Set aside.
  • 2. In large mixing bowl: Mix together the sugar and all of the wet ingredients (except raisins). Beat until creamy.
  • 3. Heat the waffle iron. Drain the liquid (if any) from raisins.
  • 4. Slowly add the dry ingredients to the wet ingredients. When mixed together well, add the drained raisins, distributing throughout the batter.
  • 5. Use a tablespoon to place batter in the center of each section of the waffle iron. Cook 3-6 minutes (depending on your waffle iron).
  • 6. ****You can add chocolate chips and nuts if desired. *** Instead of this recipe, make brownies from scratch or a box mix... or chocolate chip cookies! *** You can put a larger amount of the batter in the very center of your waffle iron to get a bigger cookie. *** Be very careful if allowing children to assist you! Waffle irons can give a serious burn. Children love watching these cookies be made too! *** These are extra good warm.

Number Of Ingredients 9

5 1/2 ounces old fashioned rolled oats
4 ounces all-purpose flour
3 tablespoons sugar
1 teaspoon baking powder
1 teaspoon kosher salt
1/2 teaspoon baking soda
3 large eggs, beaten
2 ounces unsalted butter, melted and slightly cooled
16 ounces buttermilk at room temperature

Steps:

  • Heat a 10-inch saute pan over medium heat. Add the oats and cook, stirring occasionally, until toasted, about 3 minutes. Cool the oats in the pan for 2 to 3 minutes. Grind the toasted oats in a food processor until the consistency of whole-wheat flour, about 3 minutes.
  • Heat a waffle iron according to manufacturer's directions.
  • Whisk together the toasted oat flour, all-purpose flour, sugar, baking powder, salt, and baking soda in a medium bowl. Whisk the eggs and melted butter together in another bowl, then add the buttermilk. Add the wet ingredients to the dry and stir until combined. Rest the batter for 5 minutes. Ladle the recommended amount of waffle batter into the hot iron. Close the iron top and cook until the waffle is golden on both sides and is easily removed from the iron. Repeat with remaining batter. Serve immediately or keep warm in a preheated 200 degree F oven until ready to serve.

1 pound butter
2 ⅓ cups white sugar
2 teaspoons vanilla extract
1 teaspoon salt
9 eggs
4 ⅛ cups all-purpose flour

Steps:

  • Preheat the waffle iron on medium setting.
  • In a large mixing bowl, cream the butter and sugar. Stir in the vanilla and salt. Add eggs one at a time, mixing after each addition. Then stir in the flour.
  • Drop the batter by heaping soupspoonful onto the waffle grid. Close the cover and bake for about 3 minutes and 20 seconds. Every waffle iron is a little different so you may want to test it on the first couple of cookies. Place finished cookies onto a wire rack to cool.
