VINAIGRETTE JAM



Vinaigrette Jam image

Serve with Steamed Artichokes or Asparagus for a delicious spring side dish.

Number Of Ingredients 5

12 shallots, chopped
1 1/2 cups Banyuls vinegar
1/3 cup rice-wine vinegar
3/4 cup extra-virgin olive oil
Coarse salt and freshly ground black pepper

Steps:

  • In a medium high-sided skillet, combine shallots and Banyuls vinegar. Bring to a boil over high heat; reduce to a simmer and let cook until shallots are softened and almost all the liquid has evaporated, adding a splash of water, as necessary, to keep shallots from burning. Remove from heat and transfer shallots to a medium bowl; whisk in rice-wine vinegar. Slowly whisk in oil until an emulsion is formed; season with salt and pepper.

Bottom of the Jar Jam Vinaigrette with Chopped Greens image

1 rounded tablespoon orange marmalade, seedless raspberry, grape or strawberry jam or jelly - scrape the bottom of the jar
2 teaspoons Dijon or spicy mustard
2 tablespoons white wine vinegar or juice of 1 lemon
1/4 cup extra-virgin olive oil
8 cups chopped greens and any vegetables you have on hand
Salt and freshly ground black pepper

Steps:

  • To the bottom of a almost-empty jam or jelly jar, add the other ingredients and shake to combine. Or, whisk together all the ingredients in a salad bowl, streaming in the EVOO. Toss with lettuce and vegetables and season with salt and pepper.

A very easy, flavor-filled dressing that goes with any kind of salad. Only three ingredients! I like to use it with romaine, feta, toasted pecans, bacon, and red onion.

Steps:

  • Combine the olive oil, rice vinegar and raspberry jam in the container of a blender. Process until smooth. Store in a jar in the refrigerator.

1 pound jumbo asparagus, trimmed and peeled
Coarse salt
Vinaigrette Jam

Steps:

  • Fill a large roasting pan 1/2-inch high with water. Place asparagus in an even layer in roasting pan; bring to a boil over medium-high heat. Cook, turning, until asparagus are crisp-tender, about 6 minutes. Drain asparagus and serve with vinaigrette jam.
