I found this recipe while browsing the web looking for ideas for a dinner party. I was very impressed and everyone loved it!

1 (8 lb) ham
3 quarts sweet apple cider
2 cups raisins
2 cups vermont maple sugar (or brown sugar if your not a Vermont native)
2 teaspoons dry mustard
1 teaspoon powdered clove
1/2 cup water

Steps:

  • Simmer ham in cider for 2 hours.
  • Drain, skin ham, and cover it with paste made from maple sugar, mustard, cloves, and water.
  • Place in baking pan, pour cider over it, add raisins to pan, and bake 2-1/2 hours at 325 degrees.
  • Baste frequently.
  • Make thickened gravy of cider raisin drippings.

3 tablespoons maple syrup
1/4 cup apple cider vinegar
1 teaspoon Dijon mustard
1 teaspoon minced garlic
1/2 cup vegetable oil
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
6 slices uncooked bacon
1/2 lb mixed baby greens
1 cup shredded cheddar cheese
1 cup crouton

Steps:

  • To prepare the vinaigrette, combine the syrup, vinegar, mustard, and garlic in a small bowl.
  • Add the oil in a steady stream, whisking constantly.
  • Season with the salt and pepper and set aside.
  • Place the bacon in one layer in a skillet and set over medium heat.
  • Cook, turning once or twice, until crispy, 5 to 7 minutes.
  • Transfer to paper towel and let cool slightly.
  • Crumble.
  • In a large mixing bowl, combine the greens, cheddar cheese, croutons and the bacon.
  • Pour the vinaigrette over the top and toss to combine.
  • Place a neat mound on each plate and serve immediately.

6 cloves garlic
8 1/2 ounces mango chutney
1/2 cup Dijon mustard
1 cup light brown sugar, packed
1 orange, zest of
1/4 cup freshly squeezed orange juice

Steps:

  • Preheat oven to 350°.
  • Place ham in a heavy roasting pan.
  • To make the glaze, mince garlic in a food processor.
  • Add remaining ingredients; process until smooth.
  • Pour glaze over ham and bake 1 hour, until ham is fully heated and glaze is well browned.
  • Serve hot or at room temperature.
