Seafood Alfredo Fettuccine - Italian Tutto Mare image

When shrimp, crab, clams, and mushrooms come together in a luscious creamy, cheesy garlic sauce over fresh pasta, you get this delectable Seafood Alfredo Fettuccine!

12 ounces dry fettuccine pasta
2 tablespoons olive oil
8 oz Mushrooms, (we used baby bella)
2 fat garlic cloves, smashed and minced
3 cups half-and-half
1 1/2 teaspoons butter
1 lb shrimp, peeled and deveined (we used 26/30 shrimp per pound)
10 oz can of whole clams, drained
4 oz can crab meat, drained
salt to taste
4-5 grinds black pepper
1/2 teaspoon thyme
1/2 cup grated Parmesan, plus a little for garnish
1/2 cup Provel Cheese or Provolone cheese
1/8 teaspoon red pepper flakes (optional)
1/4 cup Toasted bread crumbs or Panko (toasted in 2 tablespoons butter for a couple minutes, until lightly brown)
2 tablespoons fresh parsley
3 cups "OO" flour, plus more as needed
1 1/2 teaspoons kosher salt
11 large egg yolks
3 large eggs
2 tablespoons extra-virgin olive oil

Steps:

  • Cook pasta according to package instructions, drain reserving a little water and cover.
  • In large skillet, heat two tablespoons olive oil to saute the mushrooms, when those are almost ready add the garlic, being careful not to burn. Remove the mushrooms and set aside.
  • In the same skillet bring half-and-half to a boil. Cook over medium-high heat, stirring frequently, until reduced by about one-fourth. Stir in shrimp, clams, crab meat, butter, black pepper and red pepper flakes.
  • Cook, stirring until shrimp is done about 4 minutes. Add mushrooms back in and stir in Parmesan and Provel; remove from heat. Toss with Fettuccine, add toasted bread crumbs and fresh parsley as garnish and serve immediately.Instructions for fresh pasta:
  • In a stand mixer fitted with the dough hook, combine the flour and salt on low speed. Add the egg yolks, eggs, and olive oil and continue to mix on low speed. Once the flour is incorporated, increase the speed to medium- low and mix/knead the dough for 5 minutes.
  • Lightly flour your works surface. Dump the dough onto the surface and continue to knead for a few more minutes. At this point, the dough may look a little dry, which is fine. Wrap the dough well in plastic wrap and let it rest in the refrigerator for at least 1 hour before rolling it. This rest allows the flour to be fully absorbed by the wet ingredients for a smooth, tender dough. (You can make the dough up to 1 day ahead of rolling it; keep it refrigerated.)
  • Fresh pasta cooks faster (about 1-3 minutes) than dried. So be sure to keep an eye on it.

2 cups diced potatoes (1/2 inch dice)
5 cups chopped fresh surf clams
1 1/2 cups clam juice
4 ounces butter
1/2 cup flour

3 bay leaves

  • Wash the diced potatoes, drain and place in a stock pot with the clam juice.
  • Bring the potatoes to a boil, add the chopped clams and bay leaves and simmer until the potatoes are tender.
  • In a separate stock pot melt the butter and sauté the onion, celery, and garlic until the onions become transparent.
  • Add the flour to the butter and onion mixture to make a roux and cook over a low heat for several minutes.
  • Add the hot clam stock through a strainer a cup at a time and whisk until smooth.
  • Add the remaining potatoes, clams, and stock and bring to a simmer.
  • Add the light cream, black pepper, and dill weed and return to a simmer.
  • Adjust the seasoning.
  • Serve at once with crusty bread or oyster crackers.

2 (2 lb) live lobsters
8 ounces shrimp or 8 ounces crabmeat
2/3 cup drawn butter
4 cups crushed Ritz crackers
salt and pepper, if needed

Steps:

  • Prepare the lobsters for broiling and set aside.
  • After the lobsters have been prepared for broiling, slowly melt 1/2 lb. of butter taking care not to let the butter boil. The clear portion of the melted butter is the drawn butter.
  • Slowly pour the drawn butter into a measuring cup, measuring off 2/3 cups.
  • In a food processor, grind enough Ritz Crackers to make about 4 cups, (about 1/2 a box).
  • Combine the crushed Ritz Crackers with the drawn butter a little at a time until the crackers are liberally and evenly coated.
  • Fill the bottom of the lobster bodies and the lobster tails with about 1/2 the amount of cracker mixture.
  • Next, divide the seafood into equal parts and fill the lobster body.
  • Cover the lobster meat with the remaining crumbs and place the lobster on a sheet pan along with the claws.
  • Pre-heat the oven to 375 degrees F.
  • Cook the lobsters for approximately 30-40 minutes or until the tail meat becomes white and firm to the touch.
  • Serve at once with lemon wedges and drawn butter.

This my version of a popular soup served at a well-known banquet facility in southeastern Massachusetts. It is simple to prepare using common ingredients you may already have on hand in your pantry and freezer. Feel free to vary the basic recipe with in-season fresh veggies and low-fat turkey or veggie-soy burger for the ground beef.

1 pound ground beef
1 small onion, minced
1 teaspoon minced garlic
½ (6 ounce) can tomato paste
1 (28 ounce) can crushed tomatoes
1 envelope onion soup mix
2 beef bouillon cubes
1 bay leaf
1 (16 ounce) package frozen mixed vegetables
2 quarts water
⅔ cup orzo pasta
salt and ground black pepper to taste

Steps:

  • Cook the ground beef in a large pot over medium heat until completely browned, 7 to 10 minutes. Drain as much fat from the beef as possible. Add the onion and garlic to the beef; cook and stir until the onion is softened, about 5 minutes.
  • Add the tomato paste, crushed tomatoes, onion soup mix, beef bouillon cubes, bay leaf, mixed vegetables, and water to the ground beef mixture. Raise heat to medium-high, and bring the mixture to a boil. Stir the orzo pasta into the boiling liquid; cook until the orzo is tender, about 10 minutes. Season with salt and black pepper to serve.

4 ounces uncooked fettuccine
1/4 pound uncooked medium shrimp, peeled and deveined
1/4 pound sea scallops, halved
2 tablespoons olive oil, divided
1 small shallot, chopped
1 garlic clove, minced
1/4 cup chicken broth
1/4 cup white wine or additional chicken broth
1 cup heavy whipping cream or half-and-half cream
1/2 cup grated Parmesan cheese
1 Roma tomato, diced
2 tablespoons minced fresh parsley

Steps:

  • Cook the fettuccine according to package directions. Meanwhile, in a large skillet, saute shrimp and scallops in 1 tablespoon oil for 3-5 minutes or until shrimp turn pink and scallops are opaque. Remove and keep warm. , In the same skillet, saute shallot in remaining oil until tender. Add garlic; cook 1 minute longer. Stir in broth and wine. Bring to a boil. Reduce heat; simmer, uncovered, for 6-8 minutes or until most of the liquid has evaporated. Stir in cream; cook, uncovered, over medium heat for 5 minutes or until thickened. , Drain fettuccine; stir into cream sauce. Add shrimp, scallops and cheese; toss to coat. Sprinkle with tomato and parsley.

  • When the butter begins to bubble add the garlic and shrimp and sauté for about a minute.
  • Next add the scallops and the lobster meat and sauté until the scallops are white and firm.
  • Sprinkle the flour over the seafood while tossing or stirring.
  • Add the clam juice, white wine, parsley, and lemon juice and simmer for about a minute or until the liquid begins to thicken.
  • Add the light cream and return to a simmer. Adjust seasoning and add the butter swirl just before serving.
  • Serve over hot angel hair pasta.
  • NOTE: What is a butter swirl? A butter swirl is a portion of tempered butter that is added to a sauce just before serving to enhance the flavor, texture, and appearance. A butter swirl will aid in binding a sauce and it will also introduce a sheen, which is a visually appealing. By tempered we mean butter that is at room temperature.

1/4 cup butter
2 cups milk
3 tablespoons all-purpose flour

  • Heat the milk in a heavy saucepan over a medium heat until the milk just starts to simmer.
  • In a separate saucepan melt the butter and sauté the onions until they become transparent.
  • Add the flour to the butter and onion mixture making a roux and continue to cook for a bout a minute.
  • Slowly add the hot milk to the roux while whisking until all the milk is incorporated into the sauce.
  • Add the prepared mustard, parsley flakes, Lea & Perrins, Tabasco Sauce, and curry powder and simmer over a low fire for about 10 minutes.
  • Add the white wine and simmer for an additional 10 minutes.
  • Adjust seasoning with salt and pepper and remove from heat.
  • Place the lobster chunks in a mixing bowl and add the hot sauce and mix until a nice blend is achieved.
  • Place this mixture into an appropriate sized casserole or 4 individual ceramic bakers. Top with Ritz Cracker topping and bake in a 375° oven for approximately 20 minutes or until the sauce begins to bubble at the center of the casserole.
  • Remove the casserole from the oven and brown the top under the broiler if desired.
  • Serve at once.

2 cups potatoes, 1/2-inch dices
1 cup lobster meat (about 8 ounces)
1 cup small sea scallops (about 8 ounces)
1 cup small gulf shrimp (about 8 ounces)
3 1/2 cups clam juice
4 ounces butter
1/2 cup flour
1/4 cup minced onion
1/4 cup minced celery
1 cup tomato puree
2 tablespoons minced garlic
2 1/2 cups light cream
salt, as needed
2 teaspoons ground black pepper
3 bay leaves

Steps:

  • Peel and de-vein the shrimp and cut into bite sized chunks.
  • Wash the scallops and drain.
  • Place the clam juice in a stock pot and bring to a boil.
  • Cook the shrimp in the clam juice then remove and set aside.
  • Do the same thing with the scallops saving the stock.
  • Cut the lobster meat into bite sized chunks.
  • Wash the diced potatoes, drain and place in a stock pot with the hot clam stock.
  • Bring the potatoes to a boil, add the bay leaves and simmer until the potatoes are tender.
  • In a separate stock pot melt the butter and sauté the onion, celery, and garlic until the onions become transparent.
  • Add the tomato puree and cook for several minutes.
  • Add the flour to the butter and onion mixture to make a roux and cook over a low heat for several minutes.
  • Add the hot clam stock through a strainer a cup at a time and whisk until smooth.
  • Add the remaining potatoes and bring to a simmer.
  • Add the light cream, black pepper, and the lobster, shrimp, and scallops and return to a simmer.
  • Adjust the seasoning.
  • Serve at once with oyster crackers.
